VEGAN CHICKEN BACON RANCH WRAP!!!The salad dressing was so well done with the perfect amount. Fresh wheat peta bread! All balanced flavor while keeping together bite after bite. 10/10.

Cute little place! Service and food was great; I can't recall the name of the bowl I had but it was Mexican-influence and so delicious. The perfect light meal I was looking for. Margarita was uniquely tasty too!

We visited Vital Root for lunch on a hot day, which was perfect weather for a salad. I'm not a big fan of fake bacon or chicken, so I opted for the Vital Salad instead of the Cobb. It was very good, especially the avocado and chickpeas. (It could do with a bit more protein though.) My son had the tacos, which he didn't love. They are a bit adult, although the kid's menu is lacking. The prices have also increased, again. We love Vital Root but hope they try to stay affordable and offer some better options for kids. As for the service, the people here are always amazing!

On our first day in Colorado, we arrived around 10 in the morning. My aunt in Denver recommended this place to kick off our vacation. Vital Root located in the Highlands is vegan and has a great menu. We appreciated the service and the ambiance. We started off with the Korean wings, then had the Banh Mi tacos and vegan chicken salad wrap. The servings were huge, and we left satisfied. It's definitely one to check back whenever we return to Colorado.

Stopped in for lunch. Cute trendy vegan spot. A little on the pricey side, but quality ingredients and all dishes adjustable to accommodate food allergies/special diet restrictions. Left feeling full, but not heavy, and better knowing we fueled with good-for-you foods. Ordered the chagaccino, mushroom coffee. Delicious! A little sweet, hint of cinnamon, alkalinity of the shrooms cuts the espresso acidity. One of my new faves!! Also ordered the huge Vital Cobb bowl add "chicken," crispy bits like bacon, creamy dressing. Yummm. Friend had a Pad Thai. Everything coming out of the kitchen looked good, tacos, bowls, sandwiches. Great friendly service, staff is knowledgeable of the menu. All around A+ pick if you are in the area.

This place is IMO thi best vegan/veggie spot in Denver. The falafel wrap is the best falafel I've EVER had and the cobb salad could be split by a family. Highly highly recommend even if you are not a vegetarian the flavors are delish.

Looks like I missed a real opportunity to take a bunch of cool pictures at what was a really amazing vegan restaurant - and what I did take was one admittedly not very good - picture of what WAS a VERY delicious salad. We enjoyed the heck out of sitting on the patio, composting everything, and drinking unlimited sparkling water on tap, so I would and WILL absolutely return to the spot next time I am in Denver!

Great vegetarian/vegan spot with healthy eats!If you like artichokes, the friend artichokes are an absolute must. We also enjoyed a roasted sweet potato, and an absolutely delicious matcha latte. I expected the chickpea salad to be closer in ingredients to a traditional chicken salad, but it was more of a southwestern vibe - not really my thing, but definitely for someone. Great shopping and walking up and down the streets nearby, too.

The perfect place for a quick meal. I've tried their Korean tacos, falafel, and all were fine but my favorite thing to get here is their vegetarian Cobb salad. Dare I say I enjoy it even more than a regular Cobb?? I love their vegan bacon and the addition of dates and nuts. This salad is humongous and can be split into two meals for sure (or one large meal for ravenous appetites).

I was excited to try this place for its all vegetarian menu, but there are non-vegetarian brunch places that have better vegetarian options. Their drink selection is extremely limited-- for instance if you wanted a fresh-pressed juice, your only option was a bottle from a fridge or a can of kombucha. I ordered the breakfast sandwich and added avocado which was $2 extra. Without the avocado the sandwich would have been too salty and thick, difficult to digest. The pickled veggies on the sandwich were a nice touch though! I was impressed by the fake bacon-- while I don't really remember what real bacon tastes like, it was crispy and added texture to the sandwich. My friend's Cobb salad was HUGE and she enjoyed it, but ultimately said it was "okay." We also got the falafel wrap-- the falafel was nice and crisp on the outside. The wrap itself seemed kind of dry and stale. There wasn't anything special or unique about the wrap, so there isn't really an incentive to come back and eat it again especially when I could get a much better tasting meal at an actual Mediterranean restaurant. Vital Foods was not an unenjoyable experience, but definitely not a "vital" Denver brunch experience.
