Some times when a friend invites you to dinner,and you look it up to see what you're in for, and you mostly see Breakfast photos, you get pleasantly surprised! From outside you don't expect to walk into a nouveau upscale dining room. The openness is refreshing, the kitchen is on display and the patios extend the dining area to the busy downtown vibes! The professionalism of the culinary staff is evident by their silent execution of the dinner service. The server, Luke was expedient, professional and smooth! The menu is diverse and interesting. Nice to see some very different influences mixed together with such finesse. Every delectable bite was seasonally orchestrated to perfection. I especially enjoyed my Swordfish.The Sicilian style Puttanesca Sauce is light yet touches upon each classic ingredient so you sense its involvement without being overpowered by an array of aggressive ingredients. The Pecan Pie Tart was also unique and oh so delicious!

We went to The Bindery for my brother in laws birthday brunch, one of his friends made the reservation. We had a party total of 9. The location is cute but if you're not from Denver you may find it out of the way or difficult to navigate to. But regardless Denver local or visitor you'll find the parking frustrations. We parked in the garage but you have to read the spaces and don't assume the pull through is the same. We get there and just go to our table. Which I'm sad I didn't look around, I missed the bakery items. I'm not sure if they're on the menu or a separate order, although I do think you can order them from your server. Many of my party had been here a few times apparently. The menu sounded good and they had a few of their own takes on traditional brunch items. I had the mezcal bloody which had good flavor. I followed it up with their version of an espresso martini, also good flavor. In fact I preferred it to the bloody. It had an espresso flavor. Drink service does take time and factor in the larger party and a nearly full restaurant. Almost everyone ordered the carbonara. I really wanted to try the chilaquiles with shrimp. I did ask if we could do the shrimp instead of chicken but it was a no. I assume because of the one shrimp dish, they probably have the shrimp pre-marinated. I did order the shrimp and grits. Haha. It had a good flavor but the shrimp didn't pick up any of it or add anything to the dish. I honestly felt like the shrimp was a side. There wasn't any pre-marinated shrimp. The grits and creole sauce though was good. I checked with my partner who had the carbonara and they said it was ok.Our sever was super friendly and she seemed very positive. For me she added to the experience.

The atmosphere was a little much for a Sunday morning brunch (extremely loud music) but the food was really good, at least for two of the three in our group. Two of us ordered the blueberry lemon waffles and they were some of the best waffles I've had in a long time. A great combination of flavors without anything overpowering or being too heavy. The other person in our group wanted to order the crab Benedict but they were out so she got the steak and eggs and was underwhelmed with the flavor and overall presentation of her meal.

Met my friend for brunch and what a bustling experience! Parking is tricky and this spot is pretty trendy- make sure to have a reservation! Service was friendly and attentive. He had great suggestions for food and we were not disappointed in our choices! Mimosas were delish- we got pineapple and blood orange and our server was happy to bring us more juice for our bottle of champagne. I had the polish omelet and my friend had the Chilaquiles- both were yummy and I particularly enjoyed the horseradish cream to compliment the sausage-I do wish it would have come with a small side of greens to round out the plate. All in all a great brunch spot and surprisingly affordable!

Oh (Dutch) baby! My friend wanted to go here for his birthday. We made a reservation and got seated early. Street parking is your only option so arrive early to get a spot. The ambiance was nice and calm, they played 2000 pop hits.The whole reason we went here was to order the Dutch baby. It says on their menu, "could take 40 minutes but worth the wait" so if you know you want it, order it as soon as you sit down. They offer two types of Dutch babies, a sweet one and a savory one. We got both :)While we waited we got some pastries from the front. I got a chocolate chip croissant warmed up and he got a chocolate pop-tart warmed up. The chocolate chip croissant was so delicious! Very flakey and the warm chocolate center was amazing! The chocolate pop-tart was good! Very chocolaty so perfect for a chocolate lover.The sweet baby was a traditional Dutch baby with vanilla bean rum and cream and fresh fruit. The fruit was blueberries. I didn't notice/see/taste the vanilla bean rum so that was a little disappointing. Normally if something is cooked with vanilla beans you should see black specs to represent the bean. It came with a side of syrup which helped when I ran out of cream. It was very eggy too. A little too much... more like a quiche. Honestly, might not order again but glad I tried it.The bad baby (savory) was so good! This traditional Dutch baby had cheese and ham! The cheese to ham ratio was good with every bite. The texture and temperature was good! I would get this one again.They were both so big I wish there was a way to do a half order but it's definitely a dish you want to share with a friend. I'm excited to go back and try their challah French toast!

each dish seems to have an interesting blend of flavors. although this is not my favorite place to brunch, the atmosphere is uplifting, lively, and usually busy on the weekends. the staff could be more attentive, but they were kind and friendly. overall, a good experience.

We had a great brunch experience! The chilaquiles were amazing. They also had a great variety of cocktails to choose from. Definitely one of the better restaurants in the Highlands.

Nice way to start Restaurant Week. The Bindery was busy on this first night so I was glad I made reservations. Got a nice seat by the window to overlook downtown Denver. Very filling menu with a wine pairing option that was reasonably priced. First course of asparagus with beef carpaccio was nice. The lamb oso buco was an enormous portion. I don't care for meat on the bone but the guajlillo sauce with this dish was very tasty. Best dish of the night - dessert. Lemon "was a cake and now dreams" did not disappoint. A flavorful dish of lemon curd with moist cake topped with meringue. I will go back just for this dish!

The Bindry keeps getting better!Delicious dinner last night at the bar. The 2 of us shared 2 small plates and a pasta. We we're very pleased with the taste and quantity. All 3 dishes were felicioys and creative. Highly recommend the Smoked Tuna Cannelloni!Hector and the bartender provided great service and help with picking wine.
