15/10 recommend. Everything was absolutely incredible.We had a reservation for a Sunday evening about a month in advance to be able to come in on the day that we did. We tried a couple of dishes and were so full after taking a bite into the second dish. Everything we ordered was unique and intensely flavorful. We took dessert to go and it was still tasty when we ate it at home. Vegetarian dishes are also served here. They have a rotating menu and we cannot wait to try the next dishes to come...

*Incredible* Walking in, we loved the trendy layout of the restaurant and everyone working was super friendly and helpful. My husband and I chose five dishes, which ended up being a perfect amount of food between the two of us. I loved the steamed egg dish everyone talks about (husband's not a huge fan of brown butter, so he wasn't in love with it, and I will say that I wish we could magically import Japan's quality of eggs because the egg itself I wish was fluffier/richer), and his fav was the shrimp cake (a perfect blend of flavors with lettuce somehow being the cherry on top). We also had the charred cabbage (you NEED this one, folks), mussles (not our fav, but still can't beat dipping bread in butter/wine), and pork shoulder (pleasantly surprised by how tangy and sour the fish sauce + tamarind made it -- in the best way possible).sắp sửa feels like one of those places that the caliber of food is top notch and creative, but not so out of the box that you feel like you're missing something. Plus the dishes, while varying in size, are all solid portions for this type of spot. Also they gave me a tiny piece of cake for my birthday! No notes.

Awwww man, so I really really really wanted to like this place. Like reallyyyyyyyyy wanted to like this place. A high end Vietnamese inspired restaurant? Yea, I'm half viet and grew up on these kinda dishes. Let's go!Service is good. Nice people. Clean. Cute bathroom. They have disco balls on the ceiling. The drinks were good. Desserts good. This is where I was soooo disappointed. The food though. $12-18 per plate. Okay. For three girls they suggested 6-7 plates?!? Whoa, uhhh this is not tapas or dim sum either. We went with it and ordered as many dishes as they suggested. In this economy, I would expect to leave full too. I was hungry after my meal. *cries* The dishes were initially delicious. Crudo-good, the egg dish- good(could be wayyyyy more than what was there), melon salad(nice and refreshing) but damn the rest was... okay. Half our dishes were like traditional viet dishes that were missing things like rice noodles and it made the dish overpowering. I get you're trying to be creative but these dishes need these components and you just leaving stuff out isn't creative. You're just being lazy making me eat marinated pork and veggies and slapping an "innovative" sticker on it and calling it a day. I see you... The fish.... Try again. The molasses you have on there? Makes the fish tastes burnt. You know that's not right. It should be sweet, and warm, and comforting. The mussels, okay... I wouldn't get it again.Oh! And the fried tofu dish... pretty but lacks a lot of flavor. You know how tofu is... you need FLAVOR on that guy or else it's an empty vessel....like my stomach when I left that night and got a cheeseburger after we paid $300+ for that meal.I really really hate to write this about the food. But hearing from Bon Appetite? About how this place is the newest place to try? Remember people... take what these writers say with a grain of salt. People just make shit up sometimes....or at least that's how it felt about this meal. Try again sap sửa. You can do better. I know you can.

Snagged a seat at the bar. This was overall a great experience from service to ambiance to the food. I got three of the main OG dishes that I have been wanting to try. All stunning. The egg and rice dish is a MUST! Can't wait to go back!

I was so blown away by everything I tried here.As soon as we walked into the restaurant, I felt like I was transported to a restaurant in NYC. It has the cool, modern vibe of a hip restaurant in the city, which I loved! It has a very busy and active energy, so it's definitely a lively place to dine.I love the modern Vietnamese vibes on this creative menu. We started our meal with the NA cocktail which was bubbly and delicious. It was a very elevated mocktail, which I love to see on a menu. Our server shared with us that the special of the day was a trout with yellow curry and chimichurri sauces. We did order this and it was such a unique blending of flavor.We also ordered the lemongrass pork meatballs, the hamachi collar, and the tuna crudo. The meatballs were so flavorful that I ran home and looked up how I can make similar. They tasted like a Vietnamese eggroll in meatball form with all of the lovely lemongrass flavor. The tuna crudo was good, but I think it was actually my least favorite dish of the night, but not because it wasn't good, but rather because the other dishes were so outstanding. We need to talk about the Hamachi collar though. it was so good that my friend vowed to never eat another Hamachi collar anywhere else again because it was so perfectly cooked and the coconut caramel was so flavorful. Holy moly, just wonderful. This was my top pick for the dinner portion of our meal. It was phenomenal.We did partake in dessert too. We tried the grass jelly first which was good. It was not a crazy sweet dish and really had interesting textures too given the granita, jelly, and creme. I enjoyed it. However, we were left longing for the banana pudding so we decided to go in for dessert round two and give it a try too. And let me say, this is the right decision for desserts! I'm not even a huge banana person, but I loved this banana pudding. Everything about it was great, but it was the peanuts that really pushed the flavor experience beyond the boundaries of normal banana pudding. I highly recommend it.

Wanted to check this place out after hearing great things about it from friends! Reservations were easy to make online. Our group of 6 ordered 10 dishes to share which was plenty. Cocktails (3/5): loved the names, but the drinks were just ok. I Don't Think You're Ready for this Jelly had a strange combination of flavors and it didn't mix well. Fried Tofu (3/5): good, but nothing too special about it. Tuna Crudo (5/5): best dish of the night, loved the flavor. Scrambled Egg Rice (3.5/5): flavor was good but it was too rich and salty. Pork Meatballs (3/5): good, but salty. Grilled Corn Ribs (3/5): kind of tasted like elote. Pork Larb Tostada (4/5): solid dish. Shrimp Cake (4/5): this was tasty, but also too salty. Charred Cabbage (5/5): loved this dish, recommend ordering. Fish Sauce Chicken (4/5): great flavor, too salty. Steamed Mussels (3/5): just ok, would pass on this. Grilled Pork Shoulder (4/5): solid entree with big portions. Overall I really loved the aesthetic and ambiance of the restaurant and how you can see into the kitchen. The food was all really solid, BUT too salty. Almost every dish everyone agreed it was oversalted and by the end of the meal we felt kind of sick. This place has so much potential, please dial back on the salt! Customer service was excellent.

I was intrigued by their unique menu and was pleasantly surprised by how tasty the food was. I'm Vietnamese so am always willing to support any restaurant trying to showcase our food. This is a non traditional Vietnamese restaurant which they state, in order to manage your expectations. I interpreted their menu as their version of Vietnamese dishes using similar flavors of the same dish. They recommend to order 2-3 dishes per person and share family style. We were a party of 3 and ordered 6 dishes. We were content but definitely not full. The portions are very small - even their main dishes. My biggest complaint is they use fish roe in many dishes. You can't just add fish roe to any dish and then feel justified to upcharge it. Restaurant is very modern. They try to create an upscale but casual environment. Service was very good. What we ordered:Crudo - refreshing. I liked the flavor of coconut milk and ginger Soft scrambled eggs - description sounds odd but it somehow works. It was very savory. Eggs were super fluffy Shrimp cake - I didn't like the butter sauce it was in but the shrimp itself was good. The sauce was too rich. The Vietnamese translation is kind of off. I think they were going for "chao Tom" Colorado trout - their version of "cha ca". fish was cooked very well and tasted very close to the traditional dish Pork shoulder - meat was flavorful and tender. Basically their version of "thit nuong" Khaoi chien (Curry French fries) - fries were super crispy and loved the curry flavor. It was spicy!

They are busy but we got the reservation. We got seated right sway. The drink with grass jelly is delicious. The boba straw could not help me get squared grass jelly pieces but I had a spoon. Banh xeo with guacamole appetizer is cleverly tasty combination. Shrimp cake is super delicious and stir fried asian spinach with fish sauce is so good. I wish I got steamed rice to enjoy with. We got banana pudding to go for a late night snack or breakfast. The pudding with tapioca and peanuts are so addictive.

I've seen nothing but great things about Sap sua and I'm so excited that it did not disappoint. We ordered about 8 items so I'll just go over the highlights:The soft scramble egg dish was outstanding. By far my favorite bite of the night. The pork shoulder was also so so delicious.I didn't love the quail and I think it kinda messed with the flow of everything else since the rest of our choices were soft and delicate. I love the beer with ice and the servers explanation about why it is done that way (I'll let you ask)The server was amazing and described their dishes perfectly. We felt welcome and a very cozy and relaxed vibe. Definitely cannot wait to check them out again!

After looking at the yelp reviews and instagram, I was looking forward to dining here during my first weekend trip to Denver. I am Vietnamese American so I thought the non-traditional aspect would be interesting but I was sadly disappointed with the food.Service was great. I arrived at opening so I was promptly seated at the bar and the bartender was nice and attentive. I'm not sure if it's because I was looking for the tie to Vietnamese cuisine, but overall I thought there was a disconnect. I ordered the charred cabbage, soft scrambled eggs, and crispy pig ears, as well as a drink. The first two dishes didn't taste remotely Vietnamese or have any Vietnamese ingredients other than maybe the anchovy in the breadcrumbs and fish sauce in the eggs. The last dish was the only dish that I could say was Vietnamese, but the way that the veggies and ears were cut made it a little difficult to eat, but I may be just nitpicking now. I got the "I don't think you're ready for this jelly" which had guava, coconut, mint, and grass jelly. This was ok, but not great. Maybe I'm just too traditional when it comes to Vietnamese food or this place is catering to the Vietnamese palate, which I guess would make sense since the reviews are high from non-Vietnamese people.
