Vegetarian enchiladas had very little kernels of corn and a few pieces of raw onion. They were drenched in a horrific sauce. Not edible.
Chicken mole enchiladas (3) with rice and black beans. Chicken was dry and flavorless. I personally would not order again.

Food Truck Time: Holy MoleI like Qspresso so I was super excited to try Holy Mole. I ordered the torta oaxaquena with marinated pork (pastor) and it had great flavor. It was also very filling. I can't wait to try the enchiladas and huarache next.

Holy Mole adds another inspiration to their food truck business.You would think Holy Mole's small menu would make it easy to choose from chicken or veggie enchiladas, or nachos or perhaps both, but the choices of sauces -- mole, red mole, tomatillo, or tomatoes adds another layer of decision. It isn't as easy it as seems. Because the price was the same -- at least for the enchiladas, I couldn't use that factor to narrow it down.As I tried to choose, I noted the completed orders were coming out within a couple of minutes. While that isn't always a good sign, in this case it probably speaks more to the efficiency of the process, having the ingredients ready to go and the experience of the staff with food truck business.Finally, I just went for the first menu item: the Mole Negro enchiladas. As expected, the (perfectly) shredded chicken was unseasoned, the flavor relying on the spices of the mole. And it worked. Three enchiladas, barely visible under the sauce, but with plenty of chicken, served with rice and black beans makes a decent-size serving. No extra spices needed. If there were anything I could change, it would be to have them served a little warmer. However, it was a cool enough evening that anything and everything would cool off more quickly so I can't fault them for that. Now, if they'd add the espresso from the other food truck . . .

------ TL;DR Slow service, good concept, okay execution. I was really excited to satisfy my enchilada cravings (I'm from the Southwest) and try mole sauce. I was a little let down. +FOOD+- Mole chicken enchiladas (3 stars): I don't know if I just don't like mole sauce or if it's Holy Mole's mole recipe that I don't like. Either way, I was a little put off by the mole sauce's taste. You can definitely taste the chocolate, but my tastebuds were also confused by the amount of spice (like too much allspice or clove?). I was pretty disappointed to find the chicken was unseasoned, dry shredded chicken. I get that the mole sauce is supposed to be pretty flavorful but I think working on the chicken's dryness or mixing it with some sauce would greatly improve these enchiladas. Moreover, the raw onion garnish was a little weird. The rice and black beans were standard. +EXPERIENCE+I ordered from the food truck and waited around 15 minutes to get my food-- a little too long in my opinion. I think the portion size was reasonable for the price, though.I would probably would not come back here. They have a pretty small menu and I was unimpressed with the chicken and sauce. If I were to eat from Holy Mole again, I would order veggie enchiladas and a different sauce. Visited 2/20/18

This is an embarrassment to Mole.I ordered the enchiladas.Mole sauce was way too bitter, the food was cold and at $13 an absolute disappointment.Maybe I'm just spoiled from the mole I've had in the southwest, but this place left much to be desired.

I really love mole, and the mole at this truck was pretty good, unfortunately that was about all that was good here.I ordered the chicken enchilada plate with mole negro for $10 and waited about 10-15 minutes for my food. For that price you'd expect a pretty filling meal, but what I got was a handful of beans and rice and three small enchiladas with a generous amount of mole.Like I said earlier, the mole negro was actually pretty good here, but the enchiladas were not. The filling was shredded barely seasoned chicken breast wrapped in corn tortillas. The kicker was that I found the tip of a glove finger in one of my enchiladas! I'm not the squeamish type and the glove looked pretty clean, but still the kitchen really needs to be more careful!All in all, this place really isn't worth it for the price. They need to step up their enchilada game and be more careful with their hygeine.

I had their Rojas at the Apex Farmers Market Food Truck Rally on April 14th. The meal was awful and very overpriced for what I got. The meal was bland, the servings were small, and there was barely any rice or vegetables. If their "rojas" sauce were to be made using ketchup, that might have been an improvement! They give food trucks a bad name and truly make me want to abandon them.

Food was amazing. Beyond that, I was waiting in line and a homeless man approached me requested money. I politely told him I wouldn't give him money directly but I'd buy him food. He agreed saying his family of 5 was all hungry. The worker at the food truck overheard this and refused to let me pay but gave him what he ordered for free. Posting this here because this is a small business likely struggling because of covid yet giving free food to homeless people and deserve recognition for that. Congrats on not only serving great food but also being great people.

Went to Ponysaurus to try out this food truck and it was AMAZING. We got the chicken mole enchiladas, al pastor tacos and a "quesabierra" which was recommended. All were incredibly tasty. The mole sauce is rich and satisfying. The al pastor tacos were the closest we have had around this area to what we had while in Mexico. The Quesabirria was the cherry on top, meat and cheese and crispy tortilla... YUM! Definitely one of our new favorite places, we will be back soon!

Ok....I love me some Chubby's Tacos and it has been my go to for years...and Chubby's is still INCREDIBLE....but I have to give credit where credit is due. Got all four types of tacos tonight and every one was amazing! Literally licked the container. If you see the food truck give it a shot!
