I really loved the flavors here at Adobo! Go on a Tuesday for reduced prices on tacos and more taco flavors! They have some gluten free labels that I really appreciated- I just wish they would extend the markets to the appetizers and tacos as well so you don't have to ask. The fries and chips are gluten free, but do have a shared fryer. From what I can tell all the tacos are gluten free. Starting with the drinks I loved the N.A. pink drink, it was so refreshing and not too sweet. It is guava juice and carbonated water. They have some of the best vegetarian green chili fries with queso that I have had. The leftovers were even delicious! These are a must for an appetizer. For a group I would absolutely get the sampler to try all the goods! The pancit was a little oily and dry but I did enjoy the cabbage and flavors of the noodles. The papi chili taco was immaculate and In the future I would reorder. I would love to see them offer homemade hot sauces or salsas for the tacos. Overall this is a unique and flavorful experience, and a must try in Denver for vegetarians and meat lovers. I love that they smoke all their meats and smoke potatoes and cabbage for vegetarians too!

Adobo was introduced to me through an episode on Netflix on street food. The show featured Adobo's food truck and since I was headed to Denver for the weekend, I decided to come check them out! When I arrived, I did not find the food truck but found a brick & mortar location instead. I asked about the food truck but apparently it was out at an event. So we got seated by a booth near the front of the restaurant. The server managed the floor as well as the bar and was really friendly. After multiple attempts to swat flies out of the way while checking out the menu (the flies were attracted to the plants surrounding the booth), we requested to move to the high chairs/tables in front of the bar. It was much better! The food at Adobo is a mixture of Mexican with Filipino influences. We started off with the lumpia egg rolls which I was really looking forward to. They are not your typical lumpia. These are long/skinny and when you bite into it, the meat is a tubular shape and falls/hangs out. The meat tasted a bit funny, it was my least favorite dish. The Pancit Noodles was very thin rice noodles. I think my friend was expecting a bit thicker but had good flavors. I would say the rest of the dishes was pretty good including the Loco Loco, Veggie fried rice and my favorite, the Grandma's Chicken Adobo. If you're into asian fusion food, this is a good spot to stop at.

It's a simple no frills environment, which for me makes it comfortable to have a meal that tastes like home cooking.We were welcomed as if we were walking into a friend of a friends house (it was our first time here) - acknowledged as soon as we walked in. They were two people that were working the front of the bar/restaurant were very attentive.Menus were brought and drink orders were taken within less than a minute of us sitting down.Thanks to Yelp/Yelp users, I was able to take a look at the menu and photos of food. I knew that I wanted Filipino food and the pictures helped me and my brother to decide what we were going to order.We started with lumpia, that were slightly different than my family's but they were equally delicious! My brother had a pork belly taco- crispy tender pork belly!I ordered Grandma's chicken adobo and asked for an extra egg to be added (yes, I added an egg, per my Yelp profile, egg is my favorite food). It was absolutely wonderfully hot (temperature) and flavorful. It comforted me and made me think of great family memories. This dish, as described in the menu, Chicken Thigh (boneless!) simmered in Tamari, Vinegar, Garlic, Ginger & Onions. Served over Jasmine Rice with Fried Egg, Green Onions, Sesame - GF.My brother order the Filipino breakfast which per the menu consisted of - Two Fried Eggs, Garlic Fried Rice (A Delicious Filipino Favorite), Longanisa Sausage (A Filipino Sausage - sweet and savory) and Fresh Tomato. It looked soooooooo good!!! While we waited the chef gave us two tasting spoons with brisket barbacoa - as a complimentary starter. It was delicious and a great preview of what you would get on taco Tuesday.For dessert we had Ube ice cream and flan! So good!!!! A nice way to finish a delicious meal!I was so impressed and intrigued by this unassuming establishment that touted their award winning business. An amazing story - Amazing Food. I want to return to Colorado for a few reasons and this is one of them.Please support the restaurant or their food truck!!

Food is phenomenal, buuuuuut I've been here several times and every time, like clock work, it takes 45+ exorbitant minutes to get the (wrong) order. It's a delicious wrong order, but the service is seriously the slowest. Bangin' food, but the service is a Lèse-majesté.

Have you ever wondered what chefs were before they became chefs? I recently had the opportunity to chat with Chef Baggao and learn about his incredible journey before Adobo which opened in March of 2022. A former finance guy, his life took a turn after a motorcycle accident left him with a brain injury. The road to recovery was tough, but he eventually found his passion for cooking and has since opened a brick-and-mortar restaurant after starting out with a food truck. His focus now is his business and being a father to his daughter Olivia. He incorporates his grandma's recipes into his menu, adding his own unique twist. From classic Pansit to flavorful Lumpia, and an amazing Pork Belly plate, Adobo has it all. His New Mexico influences are also evident, with Taco Tuesday and festive decor. It was just ok. Went in this afternoon, not busy at all. Service was ok. Seems like they had one person working front and bar and another working kitchen. Best thing was the crispy wings-but the sauces/flavors seemed like they are just bottled. We got the green chile and pork belly tacos. Good smoke flavor but bland. A fair amount of meat on each taco but the flavors just didn't work for me. It was just ok.

As a transplant from the Philippines, I'm so glad that there's a restaurant in Denver that serves Filipino Mexican food! There's not a whole lot in Denver that does so definitely add Adobo to your list if you want to sample Filipino cuisine.I recommend ordering the lumpia (a staple in the Philippines)-- it's fried spring rolls! I love the generous serving of the pork in the lumpia :) Another sure hit, which I can vouch and will come back for is the Chicken Adobo Rice Bowl!! Makes me miss the adobo served back home! The tacos didn't wow me that much - I tried the OG carnitas and pork belly. Maybe try other tacos and the burritos? The server did say the papi chile tacos is one of their best sellers. I will have to come back for that and order another chicken adobo rice bowl.

Despite being severely short staffed, our waiter gave us good vibes. Thank you! The moco loco dish was very salty and seasoned with straight soy sauce. My boys were happy with their traditional Filipino breakfast dishes! Thank you!

I've been wanting to try this place for a couple of years. I was excited to see Chicken Adobo on the menu, a dish that takes me back to my Filipino grandfather in the kitchen preparing this for us. The thought of it made my mouth water. It stopped watering once I ate it. It was flavorless. Quite disappointing. The lumpia was very good, fried to perfection. The Pancit was not traditional, but it was good. Complex flavors, noodles were cooked just right. Had the Smoked Carnitas taco. Sometimes you just need to forego the tortillas and just eat the taco filling, and this was one of those times. Crunchy, soft, a little spice, a little sweet, it was fantastic. I want to give a higher rating, but that Adobo will not allow me to do so. Service was very good.

We got takeout from here for the first time and it was amazing. The queso was so good and there was a good amount included. Everything was really good flavors and this might be my new favorite spot. The churros did not disappoint. The staff here is so nice and will definitely come back.
