Was really excited to try this spot, I love chicken shawarmas and eat Mediterranean food very often, but this place is a big thumbs down! It took around 20-25 minutes to get the food - for context, the entire order was two chicken shawarmas and we were the only customers there the entire time! Couldn't imagine how long it would've taken if there was just one additional order there..I'd probably still be waiting there right now (days later)..it's a food truck, it's suppose to be somewhat quick food. Also, these chicken shawarmas had some type of white sauce on it (not tahini)..I believe it was a lemon garlic sauce. I'll just cut to it: gross. Texture was like rancid milk and tasted beyond acidic. Just do yourself a favor - avoid this spot.

Went in with high expectations given what I read about the concept and the menu. Plus a dose of nostalgia from my end did not hurt. When I walked up to the site, I was taken aback as the truck did not look well kept and neither did the site it was parked on. None of the tables were set up. A dirty service cart was haphazardly parked outside the truck door. I ordered a plain manouche and a chicken shawarma to go. Service was friendly. At first bite, the flavor of the chicken shawarma was fabulous but I was immediately surprised by a mouthful of sand. The lettuce was evidently not washed. I did try a second bite, same result, so I had to discard the rest of the sandwich. Moved on to the manouche. The zaatar used was very good and I loved the fact that plenty of it was spread on the dough, but the bread was like cardboard. As if it were cooked ahead of time and reheated in the microwave then put thru a panini press after rolling. In conclusion, the elements for a lovely product are there, but shortcuts and poor execution have spoiled the end result.

I used to live on the corner of 19th road so this used to be my neighborhood and I come back sometimes as I miss it, and I found on too good to go a new food truck. However walking back and forth around the Novotel for the life of me I could not find them. I thought they just weren't there. Well they are hidden in the farthest end of the park across the Novotel and on a hot busy packed park day you might not see it either so this is your guide! I was saddened but luckily I got to go back later at night and found not only the very cute food truck but also the super friendly staff in it. I didn't ask a specific order but they made me something of their choice: I got a delicious long wrap with a mix of herbs, yoghurt and vegetable and honestly I don't know what else it there, with a rose water. It taste healthy and super fresh. Thank you for this delicious Lebanese food!

I love manakeesh. In fact I had heard of the Thyme Machine from a social media too. So when my aunt suggested this after my family went out for dinner, we thought all why not?You know how when you take someone to a restaurant that specializes in food from that person's culture and they usually aren't a big fan of it?Well, that's not usually the case for me. I recognize a lot of time the food is not gonna taste as good as if it were homemade. Also people are free to be creative and make it non traditional...as long as it's good. Thyme Machine is a food truck with a story and the effort to honor memories. The food truck is started by a medical doctor who started the truck to honor his grandmother.Sadly, as sentimental and sweet the story is, Thyme Machine can't hide behind its story for its less than praiseworthy food. Remember, I have no issue with it not being traditional.I love shawarma especially a good chicken one with the garlic sauce. What I don't love is, eating a small tortilla with probably 3 pieces of chicken and so smothered in garlic sauce...I'm not sure if they meant to call it a garlic yogurt shawarma instead of chicken. For context, I got the chicken shawarma tacos (which the picture advertised as three tacos...I got a single, not even warmed, small tortilla. My aunt who got the large shawarma, had real shawarma bread but sadly the garlic sauce which really tasted like garlic with plain yogurt was also too much. Now this isn't a case of "oh I'm not really a fan of garlic sauce or I only like like a little bit". No I LOVE garlic sauce in my shawarma but when there is more garlic sauce than chicken and to the point where I am not sure I am eating chicken...that's when I think it might be too much. Next the manakeesh, my parents kept it simple with a cheese one but...this was rolled up like a fruit roll-up and just fell flat. The lack of flavors also was weird. It's like ordering chicken and they give you a boiled chicken with no salt or pepper and tell you...well you ordered chicken not seasoning. Which is not the case here, the workers were not rude at all. We didn't complain to the workers, we just took our losses and left. In all honesty, the workers were nice but I could tell a bit stressed. There was someone who was new and learning and it's late at night. The seating area they have is beautiful and definitely a great late night spot to hang out. Just sadly, the food fell flat.

Thyme machine is a perma-parked food truck serving up authentic and savory Lebanese fare in Brickell. There's outside seating at picnic tables. I tried a man'ouche with zatar and labneh and it was an amazing blend of warm goat cheese, veggies, and spices. For a spot of sweet the honeyed baklava was a perfect ending.

If you like Arabic coffee, this is your truck! The barista working was extremely friendly! I asked her what she recommended to eat for breakfast and she recommended the labneh zaatar wrap tha had the labneh yogurt sauce with an olive spread, fresh mint and veggies toasted lovely! You can never go wrong with Arabic coffee, of course! There is a cute area outside to eat your meal! Definitely recommend this spot!

We came here on a whim since it was one of the few food spots (aside from clubs) that were open late at night. It's directly in front of a parking garage, so you can either find street parking or just park in the garage itself. The owner was very friendly and welcoming. He explained the menu to us as well as the ingredients used. Upon ordering, there was a seating area to the side of the truck that we waited at while he quickly made our order. The food itself was delicious and filling, you can easily split one with someone else to share. Ingredients were simple but carried lots of flavor. Great place for quick lebanese food!

This food truck seemed to pop up out of nowhere - but I definitely enjoyed my visit! I tried one of their flatbreads with spices, cucumber and tomato rolled up into it - it was delicious. Additionally, we grabbed a small slice of baklava and loved it! I would definitely come back to try their Turkish coffee!

I was really excited to see this little cute truck on my way home but I was disappointed. The 1st day I tried it, there was a nice attendant who prepared my order, however, the taste was simply not good. Something wasn't right with the food, not sure if it was the chicken or the vegetables in the shawarma but it was just rancid & bad. The only thing that made the experience better was the service bc the guy was nice so I didn't complain. I decided to go back the next day bc I was thirsty so I ordered the overpriced can of Pepsi & a nameless bottle of water, both came out to almost $8.00, ridiculous! What made it worse was the service I received from the people working there that day... they were two employees sitting outside looking miserable & when they saw me walk up to the truck they seemed even more miserable that I was there bothering them... I was never greeted & the girl had this pissed off look on her face which is what made me write this review. I was still polite & said thank you after I paid bc I was raised the right way. --- The employees there have got some major improvement to do. You do not treat people that way, much less your customers which is why you're there in the first place. Bad overpriced food & bad service on top of that. Simply unacceptable! Needless to say, I will not be back & do not recommend.

Visiting from San Diego, as I was looking for something to eat, I passed by Thyme. The flag of Lebanon drew my attention. I've been to Lebanon many times and cook Lebanese dishes so I wasn't sure at first, if I'd like it or not. I ordered the labneh wrap with all the included ingredients. With the first bite I got tears to my eyes. It was as if I got teleported to Lebanon. Incredible flavor, texture, aftertaste! Fresh and healthy!!! 10 out of 5 stars. It was a trigger to all the beautiful memories of Lebanon. Thank you Thyme!Even if you're not that hungry just try their food! Kteeer taib!!!
