The Wolf's Tailor was the second Michelin Star restaurant I have been to and I will say that the Michelin Inspectors know what they are doing when selecting which restaurants are chosen to brand the prestigious Michelin Star. The experience here is truly second to none, especially if you book the tent seating outside for a unique ambiance (highly, highly recommend it). The food experience was truly something special. We visited at a time where plenty of Colorado plants and fruits were in season, so most if not all our dishes included at least something locally sourced. It was also really nice that our server explained every dish including the inspiration of the dish, where everything was sourced from, and what flavor combinations to look out for. For those of you that have not been to a Michelin Star restaurant before, the courses are meticulously crafted to provide a journey or story as one progresses from one course to the next taking into account flavor profiles, intensity of the flavors, etc. It truly is an experience and The Wolf's Tailor does it exquisitely. Another aspect of Michelin Star restaurants are their impeccable service standards which The Wolf's Tailor nails. As mentioned before, our server took her time to explain every dish we received so we fully understood the intentions of the chef and the dishes. Everything was timed perfectly.I would highly recommend visiting The Wolf's Tailor for a very special occasion as they will enhance that occasion make it even more special.

Awesome culinary experience from a three star Michelin restaurant! Had the eight course dinner paired with drinks. The attention to details in the preparation and presentation of every dish and drink was outstanding. We had the opportunity to watch the chefs create works of art.....and the creative flavors in each dish elevated your tastes buds to new heights I have never experienced before. The chefs and bartenders explained every ingredient that went into making the food and drinks; their food sustainably efforts; collaborations with local farmers as well as their own garden; and seasonal menus. The careful and meticulous efforts that went into creating so many delicious masterpieces is an experience that I will remember forever.This note was written at the back of the menu that summed up the food experience: The heart of this meal - from the soil, the land & the sea - consumed with unity.On a funny note, in a strange way it reminded me of a nicer version of the movie, The Menu, and it had a very happy ending .

Not sure how you give this anything but 5 stars. Everything was well thought out and made for a wonderful meal/experience.1. You have to be ready for Omakase style eating - they will bring you courses and there is nothing to choose besides beverage pairings. You pay in advance and that helps the staff understand their capacity and what to order. Also helps them keep their food waste to a minimum. If you appreciate what high quality and eco-friendly restaurants are doing - then you would respect that.2. The wine pairings are very good but a lot of wine - my wife and I split one. Kudos to the introduction staff that was very up front on how many glasses of wine you would have per person.3. Service - Not rushed and solid service with a lot of knowledge on the sources and food. They overheard my wife and I ask a couple of questions to each other about the taste of a previous dish or the flavor of the wine, and the next server answered that question without being asked. They knew everything.4. Food - every dish was interesting but not overdone. everything fit together and you would be hard pressed to find any of the dishes anywhere in town. Even if you don't eat carbs, eat the bread....amazing.5. Mood and Vibe - playlist was perfect, good acoustics without being loud even though ever seat was full.

We celebrated my partner's birthday here and the whole dinner and service was incredible. I definitely recommend booking the garden tables in the summer, we came here in August and never felt uncomfortably hot, and it's nice seeing all the little things they are growing. The savory courses here were my favorite, I especially enjoyed this savory panna Cotta from the first course, and the lamb is fantastic and so juicy. Because the whole rest of the meal was so good, I felt a bit underwhelmed by the dessert - the textures were just so so and the flavors felt like a dull celebration of peak summer produce compared to all the bold flavors we had earlier.We didn't opt for the drink pairing but had a cocktail and a glass of wine each. I eavesdropped on the table behind me though that did get pairings and it sounded like a great add on experience to the meal!

One of my top 3 dinners of all time. If you want to not just eat food but experience it then this is the place for you.The restaurant is absolutely gorgeous and everything is so incredibly clean. Being able to see the chefs work is just a joy. The staff were absolutely phenomenal and I wish I could give them all a great big hug after that meal.We did the wine pairing with our dinner and most of the pairing was great with a few misses and one absolute game changer that I'll be drinking going forward. The first course, that oyster changed my life. I didn't realize an oyster could have that amount of flavor, I'm going through withdrawal just thinking about it now. The tartar was absolutely amazing as well and my mouth is watering just thinking about it. The fish course was amazing and just absolutely cooked perfectly. Now let me tell you about the dumpling..ohhh the dumpling...sweet baby jesus that dumpling and the broth left a permanent mark in my memories. I thought about licking the bowl but didn't want to embarrass my guest. The rest of the courses were just fantastically executed and the flavors were amazing. The desserts were incredible and I can still taste them a month later.I will be coming back as this has set a new bar for me. Thank you to the Chefs and staff for creating an experience that is impossible to find anywhere else.

Recently ate here for the first time. We did the tasting menu in the tent so my experience may be different than your average dinner experience. One of the dish thats not shown here is the 1st appetizer course. I also included the menu in case anyone is wondering.But to start off, the staff were very attentive. Each course is explained thoroughly. And the whole dinner showcase was very intimate. Even though there are other tents adjacent to us, the conversation from those were barely noticeable. It's very challenging to describe or to rate a tasting menu as it's more subjective to the taste and the visual. So I will say, come try the experience. You will not regret!

The Wolf's Tailor reminds me of Queen's "Don't Stop Me Now"... SENSATIONAL! ELECTRIC! CAPTIVATING! THOUGHTFUL! UNIQUE! INVITING! The vibe walking in is a classic piano with a distinct voice singing, "Tonight, I'm gonna have myself a real good time." To check in, you walk through their beautiful patio before entering the immaculate interior. You'll see the kitchen to your right. It's neat to see the chefs at work. They are laser focused, meticulously crafting dishes to send out. You'll be greeted by a host who graciously checks your coat and guides you to your table. Before departing, they will ask for your preference of water: sparkling or still. At this point, you've already began to chime and internally rock with, "don't stop me now don't stop me, 'cause I'm having a good time, having a good time" in pure anticipation of the tasting experience!The Seasonal Tasting Menu00 Amazake: "a shooting star, leaping through the sky" - This was a cup of pure delight, slightly sweet, mildly earthy and nutty! The ingredients listed were charleston gold rice and jimmy nardelo pepper. 01 Zensai: "like a tiger defying the laws of gravity"- Everything about this course was defying... between the oyster, panna cotta and macaron. Now, two out of three of these items are typically sweet treats. Not here. These were savory and rich, just melted in your mouth bites. 02 Fermentation: "I'm a racing car passing by like Lady Godiva"- There's alot going on here! You'll get rev'd up by their highlighting of five different fermentation styles: grain, tartare, sunomono, kimchi and umeboshi! My "Mister Fahrenheit" was the grain which was sourdough piada. I was "travelling at the speed of light" to grab another bite!03 Scallop: "I wanna make a supersonic man out of you"- Now, this scallop was plucked out of the sea then zapped less than 24 hours later to our table. If anything is supersonic, it's this scallop. It was fresh, silky and STANDOUT. 04 Dumpling: "I'm having such a good time, I'm having a ball"- Okay, you are midway through the meal. And YES! You are having a good time! This course just takes you to a ball, though. The dumplings come out in a bowl, then the waiter dresses them with a magical broth. It's what you wish your grandma knew how to make on a cold day. It's comforting and like a warm hug. Mhmm!05 Wagyu: "If you wanna have a good time. Just give me a call"- We all know... this is the guy you wanna call when you are trying to take the party to another level. This wagyu was seared and rested to utter perfection. It was juicy, savory and you are sad when you get to the last note. 06 Intermezzo: (Don't stop me now)- There's a moment when you think, "Ah man, this is it." Only to find out... it's not! It's just a delicious light palate cleanser for you to move and groovy into dessert. 07 Mille Feuille & Birthday Cake: "I'm a rocket ship on my way to Mars on a collision course, I am a satellite I'm out of control"- We got an extra bite because it was my birthday! The collision of two desserts was out of control with flavor. Subtly sweet, sweetly superb!08 Mignardise Sheep Version: "Woah. Let loose, honey, all right."- The last bite is choose your own adventure: sheep or wolf. Wolf has caffeine, while sheep has no caffeine. Although you are not ready for the night to end and you definitely cannot fit another bite in your body, you will and it is worth it. As the lyrics go, just "let loose" and "honey" it is "all right."At the end, you will... "feel alive and the world I'll turn it inside out, yeah" You are 100% "floating around in ecstasy" and singing... "Ah, da, da, ah, ah, ooh, ooh-ooh, ooh-ooh!"And think... That was a meal fit for a QUEEN and a GOOD TIME!

So glad we were able to get a reservation at the last minute! Our reservation was at 830pm and we didn't leave till after 11pm! It didn't occur to us how late it was till we checked the time. We lost track of time and I think we were going by the pace of the course too. Our server Izack was so friendly and personable with their service. There was a small hiccup with my drink orders and they generously comped both drinks which I was not expecting at all. The food was amazing. I loved all the different flavor combinations and the amount of thought and effort this restaurant puts into curating these different dishes, with sustainability being their focus. The only photo I forgot to take was the dessert photo labeled intermezzo, the shaved wasabi on top of the strawberry and coconut dessert was interesting and while I don't think Id enjoy more of that, it was fun to try.One of my girlfriends did the mocktail pairings with the courses and shared them with us and they were fun to try! Each pairing was so different and interesting. We really enjoyed the pairings.We ate inside of a tent with a small fireplace and ambient lighting. We were glad we didn't have to share the space with other customers. This was a great experience. Gotta try it!

My husband and I have gone out annually for a tasting menu for the last 20 years. We have eaten in some of the best restaurants in Los Angekes, San Fransisco and Chicago. Tonight at Wolf's Tailor we had maybe the best meal we've ever had. There was not one course that wasn't surprising, herbaceous, multi-layered and delicious. Hands down the best restaurant in Denver. The beautiful garden was also a great setting. The servers were attentive and helpful but not hovering. Perfection.
