After running some errands on an empty stomach, I was absolutely famished, and Shreddy's Tacos was the nearby solution. To this day, my soul and stomach thanks you haha. Upon entering the restaurant, we were greeted by two different employees and asked if we were dining in or taking out--opted to dine in. Ordering was super easy and convenient thanks to the iPads located near the entrance. We ended up getting a fish taco, a Birria grilled cheese, and a Mexican coke. As soon as we sat down, fresh chips and salsa were brought to our table. The chips were great, not greasy at all, but the salsa was a bit too chilled for my liking (and it was a chilly day.) But it didn't stop us from consuming almost all of it during our dining time. Whoever came up with the idea of Birria grilled cheese is an absolute genius! I love Birria tacos, but this grilled cheese was next level. Completely addicting and so much neater to eat. Plus, the crunch you get from the bread makes for the perfect texture combination. Flavors were spot on and just so onolicious. I need to try to make this at home. Probably would pass on the fish taco next time, but the Birria dishes are where it's at. Friendly staff, clean environment (both employees were thoroughly cleaning everything while we were there...kudos to them for their hard work and cleanliness,) and delicious food made for an exceptional experience. I'll definitely be back at some point.

After my first visit I could not stop thinking about their birria grilled cheese, queso, agua frescas galore, strawberry horchata, carnitas, nopales and tres leches. Last night after a late Eldo adventure (guided bat walk) I stopped in with my partner for a beyond delicious bite. We came in the last hour they were open on a mission. As always the space was spotlessly clean, with fun colorful decorations. We shared the birria grilled cheese - toasted to perfection, the meat mouthwateringly seasoned - literally melted in my mouth - along with the accompanying au jus, radish, cucumber and lime. With every bite I transcended :) I was so into the grilled cheese that I completely forgot to snag a bite of the carnitas taco (served with pineapple I might add) before it disappeared! The staff were friendly as always. Our meal came out speedily and there was fun stuff to watch on the television (snowboarding on one and Dave Chapelle's prince skit on the other). Can't wait to go back when I have time to settle in for the whole shebang - including a slice of their incredible tres leches cake (honestly I've tried many over the years here and in Mexico - theirs is by far the BEST!).

Yummy food! The staff is very friendly, always happy to greet you, explain the menu options, and show you how things work. It's a new place and just getting started, so it's still quite lacking in ambiance--it's a very big room, and the dining room is largely empty as of yet. But that's always going to be the case with a new startup; the customers will come with time, especially as the food here is so good. I do wish they had more beverage options--all their beverages are heavily sweetened stuff, and for those of us with blood sugar issues, the only option is plain water--boring! Some unsweetened tea or club soda or something would be lovely. The place would also have a much more fun vibe if they had a liquor license--there's a bar in there that visually dominates the room, but it's currently not in use, just looks like wasted space. It makes it look as though something's kind of off. I'd either remodel to remove (or repurpose) the bar, or bite the bullet and actually use the bar for its intended purpose. Have been twice so far and would try them again for sure--as I said, food is great if you can ignore the lack of ambiance. I hear these are local guys who started out with a food truck, and I would love to see them succeed in this location, as so many other businesses have come and gone in that spot.

Good food - sat outside which was nice. Tried the strawberry horchata (3/5 kinda just tasted like strawberry milk), chicharrones (5/5 came out super fresh), baja fish taco (4/5), tres tacos rojos (4/5 tacos were delicious but consomme was not as hearty/flavorful as I was expecting), and tres leches cake (5/5 a large slice too). A tad pricier than other restaurants but very filling and good!

We were recommended this restaurant from a coworker. We stopped in on a Saturday afternoon the atmosphere was a chill vibe with good music playing. It has really good seating (highs top tables, booths, regular tables and outside tables). The food was a 10/10. Highly recommend coming by this new establishment that started as a food truck. The staff are super inviting and friendly, the chef would come out and make sure everything was good.We tried the - chicharrón appetizer that was served a with fresh guacamole and salsa 10/10- Baja grilled fish taco 10/10- A flight of 3 tacos of carne asada, chicken, al pastor 10/10-Nachos with carnitas 10/10 Everything was fresh and delicious, so much flavor and the salsas were good. The green one is pretty spicy. We can't wait to come back to try more of their delicious food. Go show some support if you want some good tasting food, they've only been at the location for a month and half. You won't regret it!

I ordered the quesadillas roja. VERY GOOD!!! We decided to stop and try it after a hike. Pleased we did. I asked for samples of the salsa. The verde is very hot very good. This place started as a food truck??! I can believe it. The food is very good. Prices are a bit boulder lol definitely worth it as a treat.

No matter how many places you have heard of in Boulder, there is always room for one more. And it is not a chain or out of state owners. It started near a Colorado ski area and has now settled with a location in Boulder. It is a location convenient from so many parts of Boulder. And there is actually free parking. But some of the local busses stop nearly right outside. And, it has actual, real seating, though fast casual in service. We passed it several times as they were setting up. It has been an empty building since early in the pandemic. In my 50 years in Boulder, it has been several other eateries, it is not new construction. But the building was renovated not many years ago, and the interior too. We tried it late this afternoon for a light meal. Even "I " could use the easy ordering screen, much simpler and friendlier than many other I have tried. And bright and with large enough text and good photos of the menu items, that my low vision status was not a problem. The owners were present and very friendly. There were a few other customers, mostly people who were likely CU students, friendly and pleasant. There is a lot of student housing nearby as well as that of seniors and families with children. This place will be acceptable to all of the demographics. The prices are modest and the servings more than adequate, the menu inexpensive yet homemade with good ingredients.And the food simply tastes great. We ate and enjoyed everything we ordered. When we go back, closer to a normal dinner hour, we will certainly order more items. We loved that the sodas are also from Mexico. Chips are homemade, cut from good corn tortillas. The tacos are amply filled and served on soft corn tortillas my personal favorite. I had the Al Pastor and my husband had the Carne Asada. We ordered a small guacamole to share. The mild salsa is truly mild, the tacos had lots of flavor and we could customize some on those too. I will try the green spicier salsa next time too. The tacos were served with radish and cucumber slices as garnish, along with slices of lime.It was nice quick service in a nicely clean space, a rare combination in Boulder. There was high bar seating as well as hightop tables, booths, and smaller, low tables for 2 or 4. Certainly something for everyone in every category. They can certainly handle large groups. Check their menu online and see all the items as well as the party packs and such for takeout too. I am hoping they will be here a long time.

I didn't want to love this place because it's on the complete other side of town from where we live... but it was so dang good. I got three tacos -- finally found a legit fish taco in Boulder! The guac was great. The chips were fresh. My husbands burrito was huge. The people working there were lovely. Can't wait to go back.

After once again being annoyed by the throngs of humanity in and around our town these days, I was so glad to remember that this place opened and is away from the packed lots and today's a**hole drivers. It's a tough location but it's near home so I was hopeful.Happily, the food was excellent and the guy behind the counter was just as great! Ordered three tacos and was curious about their fries. He offered them to us for no cost. Funny to be excited about fries but these were really excellent. No liquor license yet but that'll just add to the overall goodness of this place. Thanks for opening and we will see you again soon!
