Yum and yum!The first "yum" was for the Gambas al Ajillo. These 5 or so succulent and beautifully seasoned shrimp came with a side of toast that was pretty impressive. I've done some toasting in my life, but I will never come anywhere near being able to achieve that level of crispiness and butter application. Definitely a win!The second "yum" was for the Strawberry Shortcake Churros. Crispy outside, gooey center- you can't go wrong with that! Though it was listed as a strawberry shortcake churro, there were definitely notes of Cap'n Crunch Crunch Berries going on. (Try it-- you'll see!!) The Gambas al Ajillo was a lighter entree, so this was the perfect way to wrap up the meal.P.S.- In case you have trouble finding it, it's next to Bird Rock Coffee Roasters, to the left.

Came here when it first opened and it was amazing! Went a second time & food was good, service was not the best.Came a 3rd time and was dissapointed. Dirty waterCups, old food splattered all over the paper menus... the really good things on the menu were removed. It was ok but the quality and service has gone down quick.

I went in on a Thursday, I sat at the bar and had the worst luck getting and keeping the server's attention. He seemed to be more interested in engaging with certain female guests than he was in taking the orders of the other tables in his section. My water and wine glass were empty multiple times in the 90 minutes I sat in my seat. The appetizers and entrees were phenomenal and almost worth the annoyance around having to ask multiple times for fresh plates, silverware wine and water from a very distracted front of the house "man in charge". An off duty server jumped in to help as they sensed the frustration in the dining room.The only positive tempting me to go back is the delicious food. Sitting at the bar you can see the level of professionalism and hard work that goes on in the back of the house. Each plate is prepared and served with care and precision.

We decided to try this restaurant on a busy Friday night because we could not get a reservation for a larger group anywhere. I will say we did not research the restaurant or look at the menu before coming here so finding out it was a wine bar, with tequila focused drinks, and a variation of American fused Mexican food was very interesting to say the least. It was nothing that we could have expected, but was delicious. Service was great and we were seated as soon as we arrived. We all started out with different wines, but I had the chilled red Barbera. I loved it but it definitely has a flavor that builds with every sip. I did try their dry and crisp rose aka FikyFiky rosa, but it was a little too dry for my liking. My fiancé and I each ordered the Wagyu green chile burger and we were both surprised and impressed with how good it was. Honestly the menu seemed a little too high priced and had a very limited selection so we were surprised to find the best priced item and for it be wagyu. After seeing what our friends ordered, our entree was definitely the biggest, which again made no real sense. The burger itself was fantastic. The dry aged ribeye wagyu was well worth it. The roasted garlic aioli and green chile combo made it even better. We would go back for this burger alone.

Delicious food!! We came in on a Friday night at 7:15 pm to a mostly empty restaurant but it took some time for someone to greet and seat us. They serve natural wines and we got a pinot noir and a red blend. For dinner, we started with the tuna tartare and the salad and for mains we had the steak au poivre and halibut amandine. The starters were light and refreshing but the mains were truly memorable. The steak was cooked perfectly and the peppercorn sauce was creamy without being heavy. The halibut was a true stand out; perfectly seasoned, and balanced with umami from the tomato and freshness from the frisée. We did have to flag our server down for water and wine so they could probably benefit from another server or food runner but when she was at our table, she was helpful and present. A wonderful dinner.

It's the kind of elevated Mexican north county needs. Great food, relaxed hospitality, interesting wine program, and reasonable prices considering the quality of the ingredients. I've been for dinner, and for their Sunday Surfers breakfast. Both are fantastic. Food highlights include the biscuits and gravy, coleslaw, quesadilla with roasted tomatoes, green-chili, burger, mussels, and bolognese. They have some natural sparkling wines from all over the world and having now tried them all, each is fantastic and probably the best choice for the food. The attention to detail in the vibe and aesthetic and audio are also of note. It's not pretentious but artful. Somebody clearly cares about the brand as it all feels very aligned and intentional; from playlist to wardrobe to interior design to food.

Went here and was told Chef Tuma was one of the best in town. It all looked so good so I told them to have Chef Tuma decide and go dealer's choice to which he made me the steak fish as pictured below. Ended up being one of the best meals I have had in a while. Will definitely be back soon!

Échale is a great addition to downtown Encintas. We sat at an outside table for 4. Our server made suggestions of popular dishes - we tried their take on street corn followed by main courses and fries. Between the 4 of us we tried the burger, hanger steak and tacos. Everything was easily foodie level. Ask for an extra napkin if you have the burger. It is crazy good - two of us had this. We shared both desserts even with JoJo's across the way. No regrets as the desserts are amazing. Oh, and the owner brought out some of our food. I was the only one at our table that had read the reviews. And they were surprised when I told them some of the stories posted. Maybe it was just a misunderstanding but he was nice, normal, whatever to us. We all considered this a foodie spot as everything we ate was exceptional.

Loved Échale and would recommend! The ingredients were so fresh and every bite was so flavorful. They serve natural wines that remind me of the wine you drink in Italy/abroad. Not filled with preservatives and chemicals that give you hangovers and make you feel ill. Bread & Butter - the "butter" was amazing Sashimi - this was incredible and actually a great price for the dish. Steak frites - not my favorite cut though the flavor of the steak was amazing. Fries were also 10/10Oxtail & Blue Fin tacos - WOW. So fresh and incredibly flavorful. Cinnamon Churros - will go as far to say that best I've ever had. Must try. It was easy to get a reservation and plenty of parking and the staff were great.
