I have found the Holy Grail of Cajun meat markets. When most people think of Krotz Springs and boudin they normally think of Billy's. Listen carefully because I am really hesitant to say this out loud. Forget Billy and his boudin balls and giant lines. Kartchner's is where it's at. I found this place because I had an envie for boudin balls with pepper Jack cheese. I normally hit the drive thru at Billy's to beat the crowd but it was closed and the line inside was insane. So I headed down the road and found what I've been looking for. Boudin balls with cream cheese and jalapeños. Say that with me. Boudin balls with cream cheese and jalapeños. Perfection. The batter is very light unlike the chicken batter used elsewhere. The taste is also unlike elsewhere. It is epic. It is amazing. It is a flavortown taste explosion in your mouth like you've never experienced. These are the best boudin balls that have ever been created. In addition to boudin there is every assortment of Cajun sausage and mean. The stuffed chicken thighs are pretty good as is the pepper Jack sausage. In fact, they too are the best of all the major Cajun meat markets. Stop here on your way through. You won't be disappointed.

On our way out of the Baton Rouge area, we tried to make a stop at Billy's across from this place. But, they were closed for Easter. Frustrated, we yelped for another grocer and found Kartchner's with a higher rating. New to the Cajun Meat Market, we found it really interesting and generlaly had a great experience except for checkout, which is why I'm only giving four stars. The address on Yelp was correct, but the map took us to a seriously terrifying backwoods private drive in a neighborhood that gave major "The Hills Have Eyes" vibes. We literally spun our tires on the dirt road getting out of there and called ahead for directions. It's across from the Dollar General, which GPS could handle for some reason. The inside reminded me a little of the steakhouses with sawdust on the floor. Lots of wood and a clutter that kept us looking more nad more deeply at all the spicy, stuffed, frozen meats to choose from. Prices were reasonable, We took home about $100 worth of Boudin varieties, stuffed meats, and other fnu things to try. There really is nothing quite like it anywhere else. Checking out was easy, but they charge an extra 4% to use a credit card, which I personally find annoying. It's like a penalty. Just figure it into your price. My yelp check-in gave me a 10% off thing. The checkout person didn't believe me when I said it. Once I showed it to her she seem to resist honoring it. Then, the way she did was to take off the sales tax and remove the 4% charge for using my credit card, rather than just applying 10% to the sale. It felt a little sketch.Overall great experience, have enjoyed the meat back in Fort Worth, and would definitely go again the next time we're through here!

Very good pork & chicken cracklins and boudin. Pork sausage is above average and makes our chicken and sausage gumbo better than ever. Make trips just to restock our freezer.

My husband and I were on a little road trip and hoping to find some good boudin since everyone says it's the side-of-the-road places that have the best. Boy, we're they right!!This place is an inconspicuous gem, though the locals must know about it because it was bustling. It's a little convenience store with a bunch of freezers of various boudin (including crawfish boudin!), prepared seafood (crab cakes, etc), fresh made jerky and cracklins. We got a few different types of boudin to bring home-have only tried one so far and it was awesome. For the snacks-holy moly you HAVE to get the cracklins. Literally the best you'll ever have hands down in your life. It's basically huge chunks of bacon crisped up to perfection. We got multiple pounds and though it was a little pricy, 100% worth it!!! The house made jerky was also great-nice thick pieces. If you're in the area, don't miss the opportunity to stop in-it's right off the highway and super convenient. We will absolutely be back, and probably will make the trek there even if we're not passing by!!

When driving through Krotz Springs, make sure to make a stop here! I recommend the fried ribs & the pepper jack boudin balls! They have the best cashiers. Small town vibes on the inside, they really make you feel like family here.

This place is legit! Their boudin is second to none. Be sure to try the fried jack cheese stuffed boudin ball when you're at the checkout counter! We picked up a bunch of stuff while we were passing through over Thanksgiving and I just wish we'd brought more coolers to fill.

Just get in your car, get on your bike or use those two feet and get over to Karchtner's now. We stopped by on the way back to New Orleans and was surprised by the amount of smoked meats and other specialty items here. I'm flying back to Los Angeles on Saturday so I made sure to get the frozen jalapeño cream cheese boudin balls, chicken boudin, hoghead cheese and crawfish boudin to pack. The folks working here are friendly and welcoming. I grabbed some chicken cracklins and fried rib bites to go and they did not disappoint! This will definitely be a regular stop from now on. Might come back before my flight. The prices are fair as well.
