I boogied into Jill's with my appetite leading the way, armed with my trusty old fashioned, the St. Julien. Sipping on this liquid gold made me feel like I could solve the world's problems, or at least my hunger! Then came the Grilled Pesto Caesar salad. Pesto on a salad? I'm intrigued. It had the audacity to taste ridiculously good!Next in line, the Pan Seared Salmon. Oh, the salmon! It was so delicious that if it had its own fan club, I'd probably be the president. I lost track of time savoring every bite of.Dessert, oh sweet mystery! I devoured it before my taste buds could even comprehend what hit them. I think I broke a speed-eating record, but hey, it was too good to take it slow. The service was like having a team of mind-reading ninjas. They anticipated my needs before I even knew I had them! And the setting? Intimate and awesome. Jill's isn't just a restaurant; it's a portal to a foodie wonderland. So, grab your fork and buckle up for a taste adventure you won't forget!

What can I say? We both got food poisoning. It was awful. Also, the menu is NOTHING like what they posted. I went expecting the vegan options I see here - no, the only vegan options are salad. Maybe at night they offer something different. This was expensive and got food poisoning. Ugh.

We had a really nice dinner here before the CU/OSU game back in November. It's a great spot inside a lovely hotel and worth a stop. We had quick drinks at the bar before our table was ready (the pearl martini and negroni were great)We shared the brussel sprouts which were the best we have had in a long while. My wife enjoyed the steak and I had some beef special that was quite nice. Overall, this is a really good spot in downtown Boulder

If you are looking for a memorable, upscale setting and wonderful dining experience for your visit to Boulder, Jill's is the place. Located at the St. Julien, hotel, the ambience swathes one in Rocky Mountain majesty. Before dinner, consider a cocktail and appetizer on the lovely shaded patio just across from the restaurant. It's more mellow than the more boisterous bar of the hotel - which also has a great vibe. (We visited in August, and they change the menu often, so some items may not be offered). For dinner at Jill's - we arrived at open, which showed a minor hiccup as they got their ovens up to operating temp and servers on the floor. However, the brief wait was more than rewarded with a crostini appetizer featuring asparagus and pepper on an aioli bed. For the main course, one of us had scallop sushi which was actually pan fried scallops with asparagus delivered on a bed of whipped mascarpone potato - the operative word here is "hedonistic"! My partner favored the fire-grilled shrimp on a polenta bed. Excellent taste there as well. Pair your entre with one of their excellent wine choices. That evening we went with a Malbec. Dessert, of course is a must. The indulgent choice for us was a black raspberry cheesecake. We are looking forward to our next Denver trip where a drive to Boulder and Jill's is clearly in the cards.

During our stay at the St. Julien Hotel, we dined at their restaurant Jill's Restaurant & Bistro for dinner. We arrived and were seated at a private table in the back dining room. The aesthetic of Jill's was upscale and inviting characterized by warm lighting, unique artwork, and colorful vases. We loved how our table was separated from the others by partitions which added a touch of intimacy & romance. One of the highlights of our dining experience was the impeccable service provided by our waitress, Jennifer. Her genuine warmth and attentiveness made us feel right at home. Jennifer's knowledge of the menu, her willingness to make recommendations, and her dedication to ensuring our satisfaction added an extra layer of enjoyment to our eveningFor cocktails I had the Paloma made with Herradura Blanco tequila, Giffard pamplemousse liquor, lime, & grapefruit soda. The Paloma was a refreshing grapefruit drink with tart grapefruit & lime accents. For Zero Proof Cocktails we tried the Canyon made with Pineapple, Orange & Cranberry Juice, and Raspberry. This was a fabulous rich bodied fruit mocktail that was pineapple forward. For Salad we split the Grilled Pesto Caesar made with toasted pine nuts, pecorino, piquillo peppers & crostini. "This is the best Ceasar I have ever had" was the first thing Ross said after his first bite. The creamy pesto Caesar dressing generously coated the salad which was deliciously cheesy, garlicky & herbaceous, brimming with pine nuts and zingy piquillo peppers. A must order at Jill's (make sure to ask for extra dressing, cheese, and piquillo peppers)! For Starters we had the Camaron Frito, Crispy Brussels Sprouts, and the Garlic Fries. The Camaron Frito was made with crispy fried shrimp, corn relish, pickled red chili mayo, lime & cilantro. The shrimp had crunchy golden exteriors and hearty, juicy interiors. The corn relish & pickled red chili mayo added acidity and a spicy kick to the shrimp. The Crispy Brussels Sprouts were tossed in Beesquared local honey, sea salt & chili flake. The brussels sprouts were amazing - they were light and had perfectly crisped leaves. The Beesquared honey coated the sprouts in sticky sweetness and the chili flake added subtle heat. For Main Courses we had the Pan Seared Verlasso Salmon & the Wagyu Top Sirloin special. The Pan Seared Verlasso Salmon was made with teriyaki glaze, sesame pea shoots & yuzu aioli. The salmon was piping hot and had a flaky texture that fell into succulent bites. The teriyaki glaze added a savory and slightly sweet component to the fish. I loved dipping the salmon in the creamy & tangy yuzu aioli. The Wagyu Top Sirloin special was paired with diver scallops, local jalapeño & Tillamook cheddar elk sausage, and grilled German potato salad. The sirloin had a supremely tender and juicy bite with intense red meat flavor. The elk sausage had a savory and robust taste that brought additional depth and complexity to the special. To finish our dinner, I enjoyed a glass of Chardonnay & Ross had hot tea. What a meal! We loved dinner so much, we went back to Jill's another two times during our stay at the St Julien.

We were very disappointed in this high end hotel restaurant. The pros were that their champagne was great as was the tomato soup/ grilled cheese sandwich. I got the Caesar Salad and it was so close to being good but it was just too clumpy with dressing. We got a dessert and I swear the whipped cream on top of the sundae was either very old or not real whipped cream, and it should be very good and very real in a place like this! And the ice cream all tasted cheap. For breakfast, the toast was actually very good But nothing else was worth the price. Our service for both meals was extremely slow. It was not ambience, it was slow. I hope they improve bc their space is gorgeous and they've got the clientele.

While staying at the St. Julian Hotel, we had 3 meals at Jill's. Each was excellent, with great service. We ordered the homemade corned beef hash, a breakfast burrito, avocado toast, a wood fired pizza, French Onions soup, Parker house rolls, and a wonderful chopped salad topped with Salmon. Each dish was exceptional! It is a very popular spot, with bustling night time crowds! I suggest reservations.

We had a family gathering for brunch at Jill's and were delighted with the quality of the food, the service, and the ambience. Philippe, the general manager made sure that everything exceeded our expectations.I had the corned beef hash, which was some of the best I have ever eaten. Other family members had pancakes, French toast, egg dishes, flatbread, and biscuits and gravy. All were excellent.Located in the best hotel in Boulder, I expected the prices to be high, and was pleasantly surprised when they were average with other restaurants.

We only came for cocktails and appetizers but all was wonderful. The Paloma was delicious and the tater tots are probably some of the best things I've ever eaten. The service was good, the restaurant was bright and open. We'll probably be back for a full meal.
