Lyons, CO. We were happy to find a new dining establishment in Lyons that serves fine cuisine instead of the usual festival tourist food. We had a reservation but at 4:30 we didn't need one. We chose to sit inside because it was just too hot to do the al fresco thing. The inside ambiance was sparse and sort of industrial but it did not matter in the least, we were there for the food. Our lovely server guided us on what to order on the Happy Hour menu because those items are half off the regular price. When it got to be around 5:30 we started ordering additional items off the regular menu. The whole experience was awesome, the food came out in an orderly fashion so we never had a table full of plates nor did we have long lapses between courses. We started out with virgin Mojitos, we don't do well with alcohol in high elevations with extra dry climate. The mojitos were expertly crafted and a quality thirst quencher. Here is what we sampled: Yuca Fritas- (note: NOT Yucca) with aji verde, very tasty, sort of fried or baked with zero grease. Colombian Sliders- with mango, crispy plantains, and Serrano ham. Pretty damn amazing. We ordered a second one right away. Honestly I could have just ordered four or five of these and been happy. Ensalada César- what makes this Caesar so special and unique is the almond dressing and the manchego. Do not skip this dish. Ensalada Wild- pretty but boring compared to everything else. Pinchos- Small chicken skewers with membrillo bbq and salsa blanco. I loved these. Exciting flavors for a chicken breast dish. Ahi Tuna- Wow ! in taste and appearance, just plain wonderful. So we tried all the proteins except the octopus, maybe next time? Desserts: Chocolate Sipper- two shots of chocolate espresso sabayon with the distinct additive of Brazilian Rum (Cachaca?). Rather decadent, the dish included a biscotti that was typical. I enjoyed the flavors and the experience much more by simply sipping, like the epithet clearly states. Key Lime Crema- The over all highlight of the evening. Just a knockout dessert which was basically a key lime crème brûlée with a meringue topping. If you must have any of the desserts start with this one.

Truly amazing experience all around. The cocktails have excellent balance and are creatively inspired by Spanish ingredients, the head bartender there is a rare talent, don't let him leave! I have been extremely impressed with every cocktail I've tried there and I have been to hundreds of cocktail bars.The food always impresses me a lot, everything we've ordered from there has been creative, loaded with flavor, and precisely executed.Service is always so attentive, warm, and friendly. They really read the vibe at the table and respond perfectly.We now have this at the top of our list as our favorite special date night spot.

Service was awesome!! This place is much of a mystery thankfully one of the woman working there explained everything to us and was so nice! Was not sure what to expect walking in there. I'd say it's dressy casual wear. Lights dimmed low. Not much bar seating. Definitely make reservations. The food was good but expensive for what you get. The drinks were delicious!!

I took a date there on a Tuesday night, and despite not being busy (3 or 4 tables seated), the service was lacking. I had been there before and found better service and food, but this place has gone downhill since its opening less than a year ago. The main menu item we wanted was not available (despite there only being a few items on the menu at any given time), and our other main item was not brought out with the other food. When we finally asked about the ahi tuna, the waiter said it would be out later...? When we got it, it was kind of dried out/crusted over and not fresh. I think it had been sitting and forgotten about for awhile. To their credit, they didn't charge for that item, but it tasted extra fishy and awful and my date wouldn't eat more than one bite.That was the food, but the main service problem was egregious for a fancy place that emphasizes the customer experience. I ordered a beer, and the waiter poured it straight down, glugging it into a narrow glass which he promptly handed to me and walked off. As I sat there with beer steaming down my hand and pooling onto the table and dripping onto the floor, I tried to get his attention for help with his mishap. I waited patiently for a minute or two while he gladhanded the folks at the next table to work on his tip and I couldn't get his attention. When I finally waved him down and asked for a towel or some napkins, he came back with some paper napkins, handing them to my date (because cleaning up is woman's work?) and walked off. We were left to mop up the table as my date noted that a good waiter would have recognized that he should perform the cleanup. He appeared not to notice the consequences of his actions, and I paid the full full price for the remianing portion of my $8, 12-ounce can of beer. But the real consequence of his actions is that neither of us will eat there again, nor take visitors to Lyons there, nor recommend the place to others as we used to.

Best food I have had in Colorado so far. Had chicken skewers that were incredibly tasty and tender and bacon rice with egg, so flavorful with a smoked sauce on top. Ended with key lime brûlée...mmm. Service great and not too loud. People at next table mentioned potatoes bravado were outstanding as well. Understand they have happy hour as well. My taste buds are still singing.

What an amazing hidden gem! We went on a busy Saturday night and it was such a vibrant scene! The food was fantastic (perfect as my chef husband describes it). We live in Estes Park and will happily make the drive down as much as possible to experience these flavors and hospitality over and over again.
