I recently moved here from California and was desperate to find a delicious pizza place. Yay! Protos! Yummy brick oven pizza. Perfect crisp crust with soft inside. I love the char on it. It's a perfect dough thinness. And the flavor of the sauce and cheese and right amount of grease ( I like it when the pepperoni oozes a little grease.) not too much. Just right! I look forward to eating it tonight and will be trying their flourless chocolate cake. Can't wait!

Proto's pizza is not much better than frozen grocery pizza. I had a 16", half plain, half pepperoni. Both sides were too salty. The taste of the sauce was overwhelmed by the salt. The crust was like store bought. Anyone who has eaten pizza on the East Coast understands how deficient this pizza is.

A special occasion brought my colleagues and I to this spot for lunch (a going away/birthday). I called the day before and made a reservation for seven.It's located in the up and coming area of Gunbarrel, just north of the King Soopers complex. While I typically find it challenging to find parking, lunchtime awarded us with our choice of nearby spots.Upon arrival Callie greeted us warmly and brought us to just the right sized and shaped table. She made great recommendations about how many pies and salads to order. We ordered quite a bit of food and were super impressed that she not only memorized our entire order but that she was so helpful and friendly (she for serious refilled my diet coke 3+ times during the lunch).We started with the salads. A Caesar (with the anchovies on the side) as well as a Capri salad (sliced ham, hearts of palm, and corn). Both salads were fresh, crunchy, and delicious. The Caesar dressing was especially creamy and flavorful (I couldn't help but enjoy some on my pizza crust).The pizzas came out fast and hot. The pizza stands were especially helpful in ensuring we had enough room for all of our plates and drinks. We went for the special (feta, mozzarella, pesto, tomatoes, and basil - crowd favorite), a pepperoni and pesto, the last pizza being an Atomica pie (Italian sausage, black olives, garlic, oregano, etc.). This was my best Proto's experience so far (I've been to one other location). I'll definitely be back to check out their happy hour ($3 large panini, $10 beer & pizza, $5 cocktail of the day, and more).

Hidden gem, for sure. I got a small Tuscan salad.My friend got a small Pesto Pie and an Izzi's. Everything was delicious! Service was good. And even with a 25% tip it was still only $22! Best restaurant in the are, for sure. And with prices like that, it's just one more reason why Gunbarrel should have its own city and zip. If you ordered that in Boulder, it would have been $30 plus tip with a far longer wait for service.

Food is great yet unfortunately service is lacking. My friend and I just sat at the bar for pizza and Prosecco. The bartender was rude and dismissive. She never checked in with us after the meal was served and when I called out to her, as she sat playing cards at a nearby table, to ask for another drink she rudely said, "I can't serve you. We're closed." Yet, according to their hours online they close at 9:00. This went down at around 8:15/8:20. A little communication would have been nice. Ive always been taken care at the bar with great staff but seems a whole new crew is on board so I'm not sure I'll be back. Too bad since Gunbarrel doesn't have many options and Protos, up till now, had always been a sure thing.

The dough is clearly premade and the large pie was smaller than expected. You're better off warming up a digiorno in the oven -- save yourself the money and the pain of choking down this "pizza."

Pretty disappointing for an almost 20$ pizza :/ Barely any sauce and was supposed to have garlic, oregano, and red peppers which you can't even tell are there. Unfortunately will not be returning.
