Came at Monday afternoon. They only serve happy hour menu. The food here are all delicately made. Always with a variation. Good example of "fusion". The soup dumplings is just so smartly made and delicious. Thai Brussels sprouts is a bit heavy but nice, think it will go pretty well with white rice or something. I like the kimchi fried rice too. The egg is super soft but also a bit crunchy at the side. The beef is super tender. The only thing I don't like is the kimchi. It's too sour for me but it's just my preferenceAnyway. Would definitely bring friends over at the regular hour if possible. ( the long introduction for each dish is not that necessary tho )

Asian fusion place in downtown Denver. ChoLon had a stellar reputation due to its James Beard nominated chef...how did the food hold up?Food is all tasty and well cooked. For me, though, it was a little too fusiony-y. I admire the skill and creativity on display - French onion soup xiao long bao - but I feel like it is East Asian plates as vessels for non-East Asian flavors / tastes. I would recommend but not describe it as Asian cuisine.

We stopped in for a mid-day snack around 3pm and were able to get seated immediately. We got the French onion soup dumplings, grilled beef skewers, and the shrimp cake bao bun and the pork belly bao bun.My husband really enjoyed the French onion soup dumplings and I thought the skewers were tasty even without the sauce. The sauce reminded us of A1 steak sauce. The Baos were good as well. I thought the items we got were good, not mind blowing. It is a good option for fusion asian food.ChoLon has a pretty good daily happy hour menu for food and drinks. I would stop in again to try more of the menu.

Fancy Asian Fusion restaurant with lots of seatings and you can make reservations online. Located downtown.Clean modern decor, friendly (non-Asian) employeesThere were appetizers and entrees but we decided to just order a bunch to share tapas style which was probably really expensiveComplementary big chip with some kind of salsa: I don't remember what this was but it seemed like a fancy version of a big tortilla chip and salsa. Nothing special.General Cho's chili soy chicken dumplings (4) ($15 each): These were alright in my opinion. A tad too salty- perhaps too much soy sauce. But definitely flavorful. We had two orders of these. One order would be enough next timeScallop Crudo ($16): This was like a salad with slivers of scallop. Def my least favorite. Not very flavorful even with the chilis.Pork Belly Bao Buns (2) ($16): This was bomb. Def my favorite. BBQ sauce was deliciousZucchini Tempura ($18): The umami mayo sauce was absolutely delicious. It went very well with the zucchini tempura and was amazing with the lemon slice tempuraMichelle's Scallion Pancake ($7): The pancake was just OK. The spicy hoisin sauce was tasty though.My friend got the sake flight and enjoyed it.Overall, tbh, I'd probably go to a normal Chinese restaurant over this fancy place. Alright experience though.

I've been wanting to try ChoLon for awhile now. I waited so long that they opened up a SECOND location, but I had to visit the original one first. Came here with my friend and ordered a bunch of plates to share. ChoLon had just transitioned to their summer menu. None of those cocktails really appealed to me, so I stuck with a refreshing cold sake.Maybe it's what we happened to order, but all our food was so brown, and presentation was sad. I didn't love the taste or texture of anything except the Chow Fun, which seemed normal. The Scallion Pancake was dry cardboard. The Chicken Spring Rolls were not what I expected. Their famous French Onion Soup Dumplings tasted like eating vomit.It sounds so mean to type all that out, but there's no other way to describe this disappointing experience. Customer service was fantastic, and I'm wondering if it was an off day with the cuisine. I won't be going to the new location, though it looks more modern. So depressing to give such a reknown Denver establishment only 2 stars.

This review based on my visit on 6/28/24. I arrived right before their happy hour deals came to an end.- Ambience: I loved it. I didn't have a reservation and wandered in around 5:15 on a Friday, but easily snagged a seat at the bar right away.- Food: I ordered several items from their Happy Hour menu, including the French Onion Soup Dumplings (MUST ORDER - so delicious and different!!), Pork Belly Bao Buns, Kaya Toast (also MUST ORDER), Salmon Temaki Roll, and Korean Hot Fried Chicken Slider. Honestly, everything was so delicious, but I have to elaborate on the two must-have items.The French Onion Soup dumplings were exactly like eating French Onion soup inside of a dumpling. That may sound obvious, but every component was honestly just so perfectly executed. The caramelized onions and cheese just worked so nicely inside of each little dumpling.The Kaya Toast... OMG. It came cut up in little pieces with the a ramekin of "egg cloud". It was like a super-whipped egg with savory soy and white pepper (I think). The dish had all the things going for it - crispy bread, sweet coconut, savory/ umami egg that was both rich and light and pepper-y. Beyond delicious.- Service: Efficient and friendly. They also let me know I could split certain orders - specifically with the Salmon Temaki Roll (1 instead of 2 rolls), Soup Dumplings (2 instead of 4), and Bao Buns (1 instead of 2). I really appreciated that since I was dining solo.

This place was great! We made reservations and were seated on time. We came early and had some drinks at the bar. Keep an eye out for their happy hour specials. We missed it, but I'll definitely try to catch it next time I'm in town. Food overall was all great. Loved everything except maybe the bokchoy because it was undercooked and quite bitter. If y'all are in the area, definitely try this place out. They also validate up to 2 hours of parking in the same building the restaurant is in. Might be a bit difficult to navigate depending on construction, so I'd recommend calling the restaurant and they can give you helpful tips!

Wow! What a great place to enjoy an Asian fusion delight. Having just come from Las Vegas and paying premium prices for Asian food, It was refreshing to come to another city for as good, if not better quality food for half the price!The restaurant has an Asian vibe with a modern twist. Service was fantastic and exceptionally attentive. We stopped in during their happy hour and was able to enjoy a number of the Yelp favorites for discount prices. Their Bao pork belly with pickled vegetables was our absolute favorite. Their pork shu Mai and Wagyu beef fried rice were a not too distant second!This location deserves, minimally, a bib gourmand from the Michelin team.

Decided to pop in here for the French onion soup dumplings and the shrimp bao buns. Shrimp bao buns were ok - I'd skip them next time. The French onion soup dumplings - definitely the star of the show and a must order!! So delicious. Eat them quick though (once you give them the 3 or so mins to cool off) because they cool quick once they are cooled. Sat at the bar as we were a walk-in and the place was packed. Friendly bartender. A bit more upscale ambiance.

As an Asian food lover and connoisseur, I would highly recommend experiencing ChoLon.We sat at the bar and were the only ones there. It was fun to watch and talk to talk to the cooks since the bar is open to the kitchen. We ordered the Kaya toast which has a sweetness to it which our waitress informed us so she offered to provide it last to round out the meal which was the perfect decision. We also got the pork bao which were the best item we had. Don't skip these!!! The sushi roll, dumplings, and pot stickers were all delicious but the ginger dressing was too over powering for the pot stickers it really needed a soy sauce based sauce to complement it better. We rounded out the meal with donuts that were good but weren't anything to rave about, skip. I can't wait to go back and try a few other dishes that we saw coming out of the kitchen on a regular basis.
