In a former work life, I had a client in the industrial park swath that is Brittmoore Rd in Northwest Houston. When our team would drive out to lunch, we would often past this BBQ stand in the middle of piles and piles of firewood. We'd talk about going, but never did.Imagine my surprise when it popped up in a 29-95 dot com review by Paul Galvani (http://www.29-95.com/restaurants/story/truck-stop-blazin-bills-bbq). Galvanized by Paul, I decided I had to check it out. While Mr. Galvani's review is absolutely spot-on, allow me to add my three cents.First of all, the location is on the east side of Brittmoore just a shade north of Tanner Rd. If you've reached Little York, you've gone too far (I've submitted the address change to the Yelp Gods, but for now the approximate address is 5719 Brittmoore). Honestly, just look for a huge heaping pile of firewood and a waft of smoke coming from a little cart.As Mr. Galvani mentions, Blazin Bill's has no web presence (as also evidenced by me snagging the FTR). I'm honestly not at all sure of the hours, but it always looks open during workday weeks. Next time I go, I'll be sure to ask and add a picture or two while I'm at it.I picked up the sliced brisket plate, which costs an insanely reasonable $7 and comes with 5 or 6 cuts, homemade beans, potato salad, and two slices of bread. Bill also offers the other basics: sausage, ribs, and chicken. You get it on a plate with sides or just as a sandwich. It's a ridiculously easy menu to follow and it's plastered on the side of his truck.The beans, per Galvani, are homemade by Bill's mother. You can taste the love. They're delicious, and the remaining sauce is perfect for bread sopping. The potato salad is good, mustard-based but understated. I'm not sure where he acquires it from, but it's not HEB.Most importantly, the brisket. It has a wonderful, if somewhat overwhelming, smoke flavor. Bill uses pecan and oak, and if you're a fan like pecan pie (like I am), you'll love the smoky, pecan-tinged texture and taste of Bill's brisket. The beef is clearly defined, and one of the best I've seen in Houston. There's an ample smoke ring that's more red than pink, and the char is well-infused with pecan flavor. Honestly, it's hard to taste anything more than salt, pepper, and a punch of pecan in those bites (his rub is, of course, a trade secret). The bites of smoke ring plus char were my favorites.The taste of the interior meat falls slightly short of wonderful. My cut was very limited on fat content. It's a well-cooked brisket, very tender and not in the least bit dry, and very breakable with a fork. Its just without that fat to hold the taste together, it's a little too breakable and borders on non-charred pieces of chopped beef.The sauce, light and vinegar-based, was poured directly on the meat. It was slightly sour but not overwhelming, and a perfect thin sauce, even for this guy who prefers thick. I did feel the sauce was necessary for the interior bites of meat that lacked flavor, but superfluous when it came to the char. The sour taste also complements the pecan flavor well. It's a nicely done sauce.It appears most of the clientele takes Bill's BBQ to go, but there are a few outside seats to dine at next to the shack that centers the location. One last word of warning: if you're going for lunch, be prepared to smell smoky for the remainder of your workday. It's glorious, and it'll keep you craving some of Blazin' Bill's BBQ long after you've devoured it.

4/17/13 12:00pm - A while back to avoid traffic on the beltway, I took Brittmore. Spotted blue smoke pouring out of this little red BBQ trailer surrounded by hills of firewood.I scored Blazin Bill's BBQ an 82 out of 100. This is Regional Texas BBQ.Smoke: Pecan. No guess work here. You practically trip over it to place your order. A steel barrel smoker visible inside trailer leaves not doubt, this is real pit BBQ.Brisket: Very Good. It reminded me of Gatlins without the rub. 1/4in smoke ring. Fall apart tender and very moist. No knife needed. Foil wrap most likely. Intense smoke flavor always boosts the score. No sauce needed. My sad portion made me sad. I was digging underneath my ribs and sausage to find more, but it was all gone.Ribs: Fair. Tough of tender, with tearing and dirty bone. Tooth pick necessary. Good smoke flavor and could not detect much or any rub. Lots of room for improvement here. No sauce needed.Sausage: Good. Pork sausage with traditional spice. A little greasy with mild after taste. Use the sauce.Sauce: Good. Tomato base, vinegar tangy, with butter and lemon flavors. Overall flavor was good and it does the job.PS - Its located at 5710 Brittmore, a mile away from the West Little York address. They take credit cards. It has two small picnic tables and very little parking. Get it to go.

What some fabulous food. I had a sampler plate of a little bit of ribs, brisket and sausage for lunch and I was so pleased with the BBQ. It has that smoked flavoring (you can actually taste a hint of the wood). The meats are so tender and delicious. I am very pleased with this place. I think this is some of the best BBQ I have had in a very long time. Also the Potato Salad was very tasty. Will see me for more lunch endeavors. Love love love it......

Bill's got good BBQ. Flavor is better than the chain smokehouses and Rudy's. Go for the brisket, ribs and chicken.

First off this place is extremely easy to miss. Sits in nondescript area where the owner sells firewood and wood for smoking. Sells his barbeque out of a little trailer next to his small office. Definitely pit smoked que as you can see his smoker as your purchase food. I was excited by the fact that one he was using a real wood fired pit and two he was surrounded by piles of wood used to smoke barbecue. This was going to be good right? Sadly this was not the case. The pricing for his sandwiches are a steal. I ordered a sliced brisket and sausage sandwich with a side of beans. The brisket was way over cooked and sausage had come close to beef jerky level. One star for good smoke and bbq sauce.

I gotta say it was just ok the food had to be warmed up in the microwave. I bought a half pound of brisket and a half pound of ribs. Ribs were chewy and I ask for loose cut moist brisket and he had no idea what I was talking about. Then he gave all lean dry brisket with a ton of sauce. However it wasn't too bad just dry.

Food Truck Only!Sorry for not taking a pic! Had the two meat plate with Brisket and Sausage, reasonably priced and were top quality. Generous portions, the potato salad & beans were flavored spot on. Hard to find good Central Texas BBQ in NW Houston. The owner Bill seems to take great pride in his cooking. Even the BBQ sauce was Good Want to try his ribs next trip.

I came here for lunch just to give it a shot and got the chopped brisket sandwich. The brisket itself was pretty good - nice smokey flavor, moist & juicy, and not too fatty, but it was basically room temperature, which was odd. There was also no sign or smell of anything on the smoker, so I wonder when it had been cooked. Overall, it was decent and cheap, but also cold. I'd probably come back if I thought the food would be hot next time, but I don't, so I won't.
