Verdant Bistro

This place is excellent! First of all I think this is the only true fine dining restaurant in hays except maybe rivaling trios. Their happy hour is a real happy hour where you drink top shelf drinks and then after are confused how your bill is so low. They know how to make GREAT drinks . It is local owned by young people and a real chef and they are incredible people with such charisma and passion for what they do. This is the only restaurant in hays with a truly trained chef and it shows. Their food is legitimately the best in town. Im proud of the people that brought a restaurant like this to hays. if it wasnt for places like this hays would be harder to live in

What a terrific gourmet surprise this is, in the heart of Kansas! Delicious, light alternative to the chain fast-food offerings along the interstates. It's located in a hallway in what looks like an older office building well inside town, so look carefully for it. The enthusiastic hostess juggled taking great care of us and other tables, with cheerfully filling to-go orders.

So unique in Hays - local, fresh, seasonal, veg-forward, chef-driven concept. Incredibly accommodating chef/owner and kind, helpful waitstaff. Delicious vegan options - vegetarians and omnis well be happy too. Don't pass Verdant Bistro up when in town.
