Varga's Bar and Grill

Well, based on the reviews of this place, I was avoiding eating here like the plague. I wound up in Liberal one night on business, and stayed at the hotel next door. Feeling bullet proof, I wandered over and ordered a jumbo margarita. It was not bad, not too sweet and just your garden-variety house margarita. Like some of the other reviews stated, avoid the chips and salsa. The salsa is served in squeeze bottles, and when you put some in your dish, it kinda makes weird bubbles in its own, like theres a little fermentation taking place in the bottles. No thanks, I gave up science experiments in high school. The chips are equal to or worse than the salsa. After looking at the wonderful pictures on the menu I decided on the shrimp tacos and the shrimp soup. I want to preface my next comments by saying that I am extremely hard to please. I like things fresh, with a lot of flavor and with the prices that we have to pay lately for restaurant food, I'm looking for good value and portion size. I'll have to say that the shrimp tacos were among the best I could ever hope for. The shrimp soup was deep, and rich in flavor, with lots and lots of fresh shrimp. Bottom line, if its like this here all the time, then the bad reviews are totally undeserved. If I hit it just right, on a good night and just lucked out, oh well, even a broken clock is right two times a day. With fresh homemade salsa, and some good chips, and maybe some fresh, prepared at your table guacamole, this place would rock. You decide. UPDATE: Just returned and ate some great food, fresh, and very well prepared. Really folks, I am not a friend or relative of the owner, I just really can't understand the bad reviews! (And I love to give bad reviews LOL!)

I'm from out of town and my relatives and I decided to go here. Once we all sat down, and started eating the chips and ketchup with a spice in it they called "salsa" we had a good laugh on that one. It was hot and humid in the main room we were in and everything you touched on the table was sticky. I ordered my dish and it came with hamburger. I could only handle two bites then I couldn't eat it anymore. My other relatives enjoyed their plates.

Weird chips started the meal. Decent salsa though. But that is the free stuff. So no judgement.The carne asada steak dinner was prepared okay. It wasn't the bomb.com experience I've had at a few Mexican places where they grill to otherworldly levels of deliciousness. The beans were okay, too.I'd eat here again, though... as the menu is has so many choices.

This family-owned Mexican restaurant is very convenient to the hospital across the parking lot. I've eaten here multiple times in the last three weeks. Owners are very friendly. Wait staff friendly, too, but slow to respond and sometimes forgetful. Chips come quickly, freshly made and still hot. Enchiladas are yummy but small, need more meat. I Especially enjoyed the tamales with green chili sauce. Can't go wrong with those. Prices are quite reasonable.

The appearance and cleanliness of this restaurant is very acceptable. The staff were attentive and friendly. When I arrived I was given chips and salsa, the chips had good flavor, but were not my favorite as they were very thick and did not seem house made. The salsa was very mild and was served in a squeeze dispenser. Upon request they provided a hot salsa which was very hot, but mixed well with the mild which made for a pretty decent salsa. I ordered the Mexican dinner as it would provide me with a nice assortment of the restaurants options, an enchilada, tamale, taco and rice and beans. The tamale was excellent! I asked for it to have green salsa on it and that was great! The enchilada was good but nothing special. The taco I did not finish however as the ground beef did not taste right... it did not taste seasoned and instead had a very off flavor that was a tad sour. I cannot recommend the tacos. The food came out fast, they use the baked on the plate method that many commercial restaurants use. Overall they run themselves just like a franchise similar to Carlos o Kelley's or Chili's, they can clearly manage very large parties and events and even were handling a party of around 20 elderly from a local nursing home while I was there. They are not a bad choice, but I would only rate them 3 stars due to the quality of the food.

I was hopeful when we sat down, everyone that worked there was Hispanic. Plus the chips came out HOT and fresh. BUT everything just went downhill from there.I ordered guacamole. What I got was mushed up avocado. There was literally NO seasoning. Just mushed up avocado.The food was bland. DO NOT order the spinach enchiladas. The spinach tasted like it came out of a can.And to finish off a rotten meal (and god-awful service as well) the sopapillas were overcooked. Hard as a brickbat

Where to begin? The salsa tasted like it is going bad. Putrid aroma. I believe they've just been topping off the squirt bottle and never washing them. Bagged tortilla chips heated in the microwave. Burnt. The chile relleno tastes prepackaged and is heavy. Too much cheese on everything. All of the meats are bland. You can cook with salt. It makes things taste better. All of the veggies are canned. Even the spinach in the veggie quesadilla. Lots of food for the money but it is way below par. Worst Mexican food I've had ever. I will have nightmares about this place.

Es un pésimo lugar para ir con familia de otro país pues no dan servicio a nadie que no sea recidentes o ciudadanos, discriminan y niegan el servio a extranjeros.It is a terrible place to go with family from another country because they do not serve anyone who is not residents or citizens, they discriminate and deny service to foreigners.

Rosa Maria served us! She was amazing, kind and friendly. The food was excellent! Great flavor and hot when it arrived. Our drink was also great! My husband and I highly recommend Varga's! You won't be disappointed! Worth the trip!
