Cactus Jacks

We were in Lindsborg for Hyllningsfest this past October and despite the cold, it was a busy day full of shopping, parades, and entertainment. Around lunch time we walked over to where all the food trucks were set up and after evaluating lines etc. we settled on Cactus Jacks. I got a smoked chicken sandwich, and the rest of my family all got burgers. I missed out on the whole ordering experience because I took the kiddo and found a table for us, while they got the food. I don't know if there would have been some options for toppings on my sandwich had I been at the truck ordering, but I felt it was kind of lacking and needed more sauce, or more toppings of some kind. The chicken was really good though, just kind of a basic sandwich. My family's burgers all looked really good though, so if you ever find yourself at this food truck you might go for the burgers - they really looked amazing and I know they all enjoyed their food.
