I was surprised to open my Styrofoam container and find my brisket and pork to be tinged such a darkish hue, but once I tasted it, once I saw that puddle of liquid collecting in the bottom of that container, I knew what I was dealing with: a mop.In some groups of barbecuers, mopping your meat is an easy way to introduce moisture and additional flavor during the long slow process of barbecuing. It doesn't seem to be embraced by most Wichita pitmasters, though whatever break from tradition they feel this might cause is negated by just how good the resulting product ends up being. In a town that is riddled with mediocre barbecue, they could use it.The pulled pork was great. That little hunk of fat at the end of the slices of brisket wasn't quite as melty as Bite Me, but it was good enough. Sausage was as good as ever. What really put it over the top for me was the two non-traditional sides Big Daddy's offers - smoked portabella mushrooms and smoked stuffed jalapenos. The former comes soaked in the mop, and was a nice change of pace from the fats and starches that usually clog up the sides of a barbecue place. The cheese-stuffed, bacon-wrapped jalapenos, on the other hand, were an indulgence, homemade and executed just about as good as you can imagine. Spicy, fatty, and green.I don't know if it's fair to compare Big Daddy's to PIPO or When Pigs Fly, because that mop puts it into a category of its own, but it doesn't matter, because I would come back here to eat their 'que anytime.

Highly, Highly Disappointed in this "food truck". My husband booked this truck for a party we are having on Saturday for over 70 people. The truck was booked a month prior, everything was set on food, price and the owner stated he would be there. Today, the owner gets a hold of my husband to let him know he won't be able to cater our party which is in 3 days. Clearly sends us scrambling and searching for food to feed our guests. Not at all impressed.

Was introduced to this when a thoughtful administrator provided it to school staff on conference night. At first disappointed because I don't typically like barbecue, boy did I change my mind---- it is awesome!! All of it!! I like to judge this kind of food by its beans and potato salad. The beans could be a main dish. There were so many meat pieces yummmm. The potatoe salad was perfect. Soft but not mushy very hard to accomplish. Them I met "big daddy". Nice guy really concerned for the customers s passionate about his food!! Took joy in it all!

I bought BBQ from Big Daddy's Smoked Shack Meats food truck when in town visiting friends and family. Everyone loved it! Being from Texas, we have tasted some very good BBW. This was right up there with the best! Will find them when ever I am in town.
