I never get tired of eating at Hill Country BBQ Market in Washington, D.C. You can smell the delicious BBQ as soon as you walk in.The people who rate this place lower than 4 stars must not know good BBQ. The Food, service, and ambiance...5/5! There's always enough seating for large groups. Check it out when in the area.Happy Yelping :)

A place with conservative white Christian vibes that does not welcome diversity in spite of claiming to be women owned and LGBT friendly.Went there last night for the live band karaoke. Noticed the vibe was off seeing that men wore jackets, ties and cowboy hats at 9pm for karaoke, and the women on their arms were more on the sultry side. Only guy not wearing a suit was in a henley shirt with the message "Breathe In Jesus". Tried to ignore it all and be there for the music.However, it appeared that the Band didn't like me embellishing the lyrics of Piano Man to make it more gay, because the organizer clearly remembered me when I noticed he had skipped my song and asked me to wait my turn since I had already sung once. However, the woman with crosses on her earrings had sung four times at that point.I decided to wait my turn, and get a drink at last call and close out. That didn't go well either. I was standing next to two white men closing their tabs, and was waiting to be served. The bartender instead waved over to a group of white girls at the other end of the bar to come to this side and started taking their orders. Another white guy, and white woman came and got their drinks, followed by another 3 white girls, one of whom spilled their High Noon on me. After repeatedly trying to get the bartender's attention, she promptly fetched the bouncer and had me escorted out without even letting me close my tab.The kitchen had already closed so can't really comment on the food. Not sure if they have vegan items given the meat theme of a barbecue restaurant. Researching the place it does sound like a right leaning political hangout. Do not recommend anyone who isn't straight, white, christian, american to go to this place.

Went for first time in years and it wasn't the same. It felt like they were understaffed. The hostess brought our water and no one explained the process which had changed a little bit. Waited in line so long to get our food the meat was cold by the time I got back to the table. The brisket was dry and the coleslaw was bland. They use to have a great seasonal cobbler and now their dessert selection is almost non existent. Probably won't return.

The food here was pretty good. The brisket was amazing! They also have a variety of sides. The potato salad is very unique. It's warm but delicious. The macaroni and cheese was mediocre. It tasted a little bit like boxed Mac and cheese. The chopped brisket sandwich was way too saucy. However, the service was great. There is a separate line to order your meats and another line to order your sides. Both lines move very quickly. Inside of the restaurant was delicious. You won't have a hard time finding a seat. There are large picnic style tables through which makes it have a great country ambiance. You will definitely leave smelling like smoked bbq though!

Great experience at Hill Country in Washington DC.I have visited the one in New York City and enjoy my experience there.Lots of space the main area. There is also some bar seating as well.After entering the restaurant, you go toward the back area to get your food. You can choose your meats and sides there. I decided to go with the two meats, two sides and cornbread muffin combo ($32). I got the brisket, smoked turkey, collards and chili. You can then take your food and sit where you want. There is a server there to assist with your drinks there, including alcoholic drinks. (Beers were $7)Everything was very good. The brisket and collards stood out...as did the cornbread muffins. I also particularly liked their signature sauce which was available at each table.The drink server, food station servers and hostesses were all very nice.

First time at this place. The design and aesthetic was pleasing. Rustic/Texas vibe which is very warming and inviting. The old fashioned was good but lacking a little bitter. The food was cold and disappointing. But there was some flavor that didn't make it taste horrible. I would recommend keeping the food on warmers.

Large space for groups & single diners as well. The servers /staff were all very nice as well. Shared a Cue & Two Combo which came with 2 meats / 2 sides/ Cornbread with some chilli honey butter. Tried the "moist" brisket which was on the dryer side than I would have liked but the pork ribs were delicious. For sides, both the greens and eggs were great. Greens were surprisingly spicy with a kick that I liked. Cornbread was soft but it would have been nice to have it warmed up. Good place to drop in for no muss, no fuss eats.

We made a lunch stop at Hill Country while out doing museum visits. It is a large place, a loud place, with a country feel with rows of wooden tables and chairs. The food area is split into 3 areas, where to order your meats, where to get your sides, and where to get desserts / drinks. It wasn't busy when we were there so no waiting at the various stations.I see where I went wrong. Without first checking other reviews I decided on their Pulled Pork and now I read glowing reviews on their brisket. The pulled pork was fine, there is no such thing as bad BBQ, but I decided it would be better with some sauce. Hill Country has 2 types on the tables, sweet and spicy.For my sides I selected baked beans and coleslaw. Now I know baked beans can really vary in flavor, texture, and thickness, and there is some I like and some I like less. Unfortunately, this was one I like less. The slaw was pretty standard. Hill Country didn't win me over with their food but I see the potential for a totally different result if I were to ever return. I just ordered wrong.Everyone else at my table loved their chicken.
