Finally got a chance to try out this food truck at Tradition Brewery, and on National Grilled Cheese Day of all days! I was super excited about the menu, I had trouble deciding on what to get. When we got to the brewery, there was no line out front. My boyfriend and I ordered the Buffalo Wing grilled cheese, The Mac Daddy, and the fried mac and cheese balls. They didn't have the bacon mac and cheese balls, which was a bummer. I liked that they gave us a number stand to put on our tables and they brought the food to us. That's where the good stops.The fried mac and cheese balls were a HUGE let down. The breading had a weird texture to it, the mac and cheese inside was pretty dry, and definitely needed some more cheese. It didn't have much flavor to it at all. It was disappointing. The sandwiches were very average too. I ate the buffalo wing sandwich. The chicken wasn't bad, but it was just doused with some hot sauce. I love a grilled cheese with a massive amount of cheese, but with the hot sauce everything became a gloopy, greasy mess. It was hard to eat and everything kept sliding out. I never thought I would say this about a grilled cheese, but they probably could have done with not trying to stuff it with as much cheese and grease. I had to end up eating most of it with a fork. The loaded cheese fries with pulled pork did look really good! I wouldn't go out of my way to come to this place. If it was at another brewery the same time I was, I would definitely try the fries next time, but skip everything else. It's honestly not worth the calories.

A new truck rolling in the 757. I caught up with them at Commonwealth Brewery earlier this week for the first time. Before heading out I did a little research on their Facebook page so I could learn more about their grilled cheese menu.I chatted up the female owner at a table beside the truck. I caught them early, around 5:30 PM she was doing some paperwork prior to heading in to the truck. She said they have been in operation four months. Menu can vary from day to day. She focuses on making her own fresh items such as the spicy grilled chicken on the menu this evening which she recommended.My order was placed with a gentlemen, possibly her husband. He knew it was my first time, but they should expect 99% of their customers are new and pour on the charm. Not a lot of personality which is disappointing. After confirming that the spicy chicken was not overly hot I went with that and their specialty macaroni and cheese balls as a side w/ side of ranch. Price point is high in my opinion, just under $20 w/ tip. I was happy to learn they bring the food to you. Most trucks are not doing this due to staffing I assume. One thing I expect from food trucks is that the food will come out reasonably quick. Twenty minutes wait is too long in my opinion with few if any orders in front of mine. One thing that I have learned is the earlier (when the first arrive) you hit a truck up the longer it takes. It seems they're not in full operation with fryers turned on etc. so I'm giving them a break. My food was delivered in the tasting room. Before I realized it the gentleman was gone and I had no napkins. Luckily the bar had small ones that worked in a pinch. I noticed later that the gentleman was delivering food with napkins so he just happened to forget mine. The sauce was incorrect and I was given an aioli based one. Since I was by myself and the truck was not close I dealt with the mistake. However worse was the cup had a minuscule amount of the sauce for six large macaroni balls.Without a doubt the macaroni balls were the hero. They were delicious and tasted awesome dipped in the Aoli-based sauce. But like I feared I ran out after the forth one. The sandwich although not bad was not something that I wish I hadn't ordered. It was spicier than I preferred. Don't misunderstand me it was not bad it's just I probably would've been happier with another sandwich. I'm sure they are working out the kinks and I would like to try more on the menu.

After multiple attempts to try this Food Truck we finally caught them at Tradition tonight. I tried the Stuffed Grilled Cheese and wow wow wow! Perfectly grilled bread, the Mac n cheese was creamy and absolutely covered in cheese - this is not a lightweight option but well worth sharing with a friend! My husband had the Mac n Cheese balls; crunchy on the outside and creamy on the inside, and the dipping sauce had a little kick to it.The service was quick and the food delicious, highly recommend them and can't wait to try one of their other sammies!

Found this truck the other day. Had never heard of them. It was a shame. The food is really good! They offer a wide variety of "grilled cheeses" but you can find something you like. I had a Philly and it was great. I was only disappointed that they were out of tools but I had it on Texas Toast and was great! Choose you bread, cheese and anything else you want on it and wait for the magic. Anytime somebody tells me not to eat it in the car because it is messy, is setting me up for success. The people were very friendly and offered advice on what goes best when you're building so check them out!

We hit the All About the Cheese food truck at Traditions Brewing during restaurant week. Nothing quite says weekend decadence than a tasty brew or two and food you know is bad for you. I ordered the stuffed mac & cheese sandwich - basically a grilled cheese on thick, salty Texas toast with - you got it - mac & cheese stuffed in it. And I added bacon to it. It. Was. Amazing. Partner had the pork sandwich and the mac & cheese balls, also both quite tasty. It was so filling I couldn't finish it. As part of the deal, we also got these baked apple pie pockets. Those were alright, but nothing compared to the sandwich. The only downside is the salt portion - very, very salty all around. I'm a salt fiend, so it didn't bother me, but we did comment/joke several times that we were destroying our arteries. Got the flying pig but ordered with chicken and it was DELISH! Cooked to perfection, not overly greasy, and packed with flavor.... the portion of filling to bread was perfect... the bread was not overly thick... I was very happy! Def would order again!
