Proof Artisanal Pizza & Pasta

Decent pizzeria that feels like it's trying to be Neapolitan style, but can't quite get there. Still not bad. What I like: Good variety of pies to choose from. Good cheese, and the pomodoro sauce is outstanding. I'm not a dessert person, but Proof's pastries and cakes are the best part of the meal. Lemon bars are great and the flourless chocolate cake is out of this world! So kudos for that! What I don't like: Crumbling up prosciutto like bacon bits is a pizza sinI'm not exactly having cravings for Proof, but it's in a great location and worth giving a try should you find yourself at the Plaza.

Staff was friendly and food was tasty. The chipotle carbonara has a kick! We will be back.

The service was quick, friendly and professional. The ambience and decor are interesting. The food, however was totally ordinary. My companion's Pizza Marguerite was slightly undercooked and was a bit short on tomato sauce and didn't ring any bells in the flavor department. My Pasta Bolognese was also quite ordinary. The noodles were obviously fresh and not dried but were overcooked and the sauce was not very flavorful. Overall, this meal was quite ordinary (but not bad) and not worth the price.

Tasty Neapolitan-style pizzas with patio dining. I enjoyed their meal for two with wine, pizza, and salad. Music on the patio is a bit loud on the weekends.

Finally made it to this square for brunch and it did not disappoint. We actually ate at Union next door, however we spent most of our time at the bar at Proof.Between the 3 main restaurants in that square you can have "Free Flowing Mimosas" for $30 at the original place you ordered them and 1 cent each at the other two. It really is an awesome deal, highly recommended bouncing around with some of your friends or family. I just wish we started at Proof. Out of the 3 spots, Proof had the best indoor/outdoor bar area. It was not crowded at all, our service was great thanks to Brandon! We had a great conversation with him (ask for the blueberry mimosas when you are there) and he makes killer espresso martinis. We went to all 3 spots and came right back to Proof. Enjoy that area now before it gets too hot, plus they have a "closed" patio so it will not be bad when the summer does come.

I have had food from Proof several times- pick up or delivery and it had all been delicious!Their gluten free options are exceptional! Not just a gluten free pizza crust (which is DELICIOUS btw), but GF garlic bread, GF pasta (haven't tried it yet!) and GF BRUSCHETTA!! The pizza I've had most often- it's so good I get the same kind every time!This was the first time I ate at the restaurant and it was great! We ate outside on the patio, which had a nice atmosphere (everything at St Philips plaza does!). I ordered the GF bruschetta and red wine. The bruschetta portions were huge and they were all delicious! Also, special thanks to Proof for hosting our annual combined bookclub meeting!

I came here on a Sunday afternoon around 2pm and it looked like the plaza was super festive for 'earlier' brunch goers. The DJ was still around and intermittently spinning music, but also had a break for a late lunch.The weather was perfect for outside dining, but Proof's patio is situated behind the DJ's booth. If you want to people watch, be sure to sit in the back, right corner of the patio.I have been on a pizza kick for a couple of weeks now and am slowly making my way through all the local spots in search of the best pizza. Proof's pizza could possibly be in the top 5-10. I ordered the Proof (pomodoro, pepperoni, finocchiona, sausage, prosciutto, mozzarella, provolone, thyme) and really enjoyed it. The crust is crunchy on the outside and soft on the inside. The cheese pull is decent, as is the amount of sauce on the pizza itself. The sprinkling of the herbs on top was also a nice touch, and enhanced the pomodoro. I found the sauce to be perfect, it wasn't acidic or salty and the amount of toppings was just enough to where I didn't feel I was cheated. ;PI didn't leave myself any room for dessert, but my experience was positive and I'd come back to try more.

Hey Grant just an update to your response; I sure did bring it up hence the replacement pizza and one of your staff said your pasta being over cooked is one of the biggest complaints so best advice since your other food is so good is perhaps just make it Al dente, your sauce is delicious it is such a shame. I brought my volleyball team parents there and we even sent you an email and no response...won't be back now to union either

My friends and I came here last night, and were able to be seated right away. We were told to pick any table we wanted and our server was with us quickly. Walking in, the patio was very cute with all the lights on, and the inside of the restaurant had a small and cozy feel. We order the Greek 2.0 pizza and the Insalata California salad (both without the olives) to share. The salad was delicious and refreshing! The pizza was unfortunately a little floppy, making it too hard to eat with our hands, so we ate with a fork and knife. Despite this, the pizza still tasted great. Our server was able to split the check three ways, which is always nice. While, I do not think I would get the pizza again, I would not mind coming back to try more menu items! Greek

This place is so good! I love the pastas and the portions are huge. You get what you pay for! Had to send back the espresso martini and our server was so nice and very accommodating. Love the vibe here with the live music and fire place.
