I was fortunate enough to run into this true natured BBQ food vendor at the Burning Beard Brewery. The proprietor cooks all his meats the traditional way with hot flavored smoke. In fact, he smokes the meats inside modified re-engineered barrels that had been expertly designed for BBQ. I could not help myself and I ordered the smoked tri tip nachos that not only came with heavenly medium temped smoked tr tip, but with a house made baked bean made with beer. The tri tip was very well prepared and had a mild smoky flavor brought on by the quality avocado wood locally harvested and supplied by avocado growers. The meat was a perfectly smoked and was very tender and had the right moisture level. The smoked meat was topped with a drizzle of tasty BBQ sauce and laid over the the homemade baked beans and crispy tortilla chips. The beans were tender, well seasoned, and had a subtle flavor of a craft beer. Well done. The nachos came with a handsome amount of crispy tortilla chips, but one thing these nachos needed was perhaps a light garnish of chopped peppery scallions or a light sprinkle of finely shredded cheese, not just for color but for that little extra flavor profile.The gent running the smoked meat shop or real BBQ haven was a gent and quite informative regarding his trade.

If you love good BBQ and supporting local businesses, you have to try Colby's food!! He travels to San Diego local breweries and meaderies and serves his delicious food! I love some great BBQ, and am extra fond of the Tri-Tip he makes. I have had it several times and it's always just perfect. So tender and the flavor is always on-point. He switches up the kind of wood he cooks it over and the sauce he uses over the meat is paired perfectly with whatever you're drinking at the breweries!The quantity of food is excellent. You truly get what you pay for. If you spend $12 on nachos, you're getting $12 worth of food, which is something very rare to find nowadays. As you can see from my photo, the nachos are loaded, which I absolutely love. (Definitely enough to share! And I'm not someone that normally likes to share my food!) Same goes for the Tri-Tip sandwich. He always ensures there is more meat than bread.. that's how you do it! So grab a few friends, get some brews, and try out the Carver, Coal & Barrel! You will not be disappointed and if you're anything like my friends and I, you'll be craving it frequently!

Well. I guess I'm going to be THAT guy. I've called this place (the phone number here goes to Colby) multiple times throughout the day, on multiple days, but no one has answered the phone.Alright. Unprofessional. But perhaps there is a reason for it. I went to the Facebook page and asked if anyone answered the phone over there, and when were the hours of operation. I've still not received a response.I drove to the location posted on this Yelp ad as well as the Facebook page, and it took me to a broken down building right off of Fairmount. Uninhabited.Unless someone hit the building with a Jericho missile, or a fire occurred (in which case, I'm truly sorry for), I really don't see how someone can run a business like this.I've called multiple times and left a voicemail asking about the restaurant, and no one has gotten back to me.1*, brother. I would give 0 if I could. Your BBQ may very well be all of what people are saying here, but if the business portion runs like this, I don't care how delicious it might be.

Colby and his colleague catered my 50th birthday party at Longship Brewery in Mira Mesa. This guy is a craftsman. He's passionate about cooking and making great food. His energy and good nature are infectious. He was a pleasure to deal with as we selected our menu and made arrangements in advance.On the day of the event, he was early, and had quite a production going. The food is great! I love that he offers vegetarian options as well as awesome tri-tip, slathered in savory, tangy BBQ sauce. It looked like everyone at my party was really enjoying the food. By the way, his prices are very reasonable too, especially since it was all you can eat!I will eat Colby's food and hire The Carver, Coal & Barrel whenever I can."Come and get it!"

First and foremost, I was excited when I found out that Carver, Coal, and Barrel was serving at my local hangout based on raving reviews and pictures. Needless to say I can't confirm that the food either tasted good or actually looked like this because we placed an order did not receive it. When we went to place our order he was on the phone chatting it up and clearly didn't want to be bothered. At first he tried to blow us off saying he was out of food, but come to find out he admitted to having some left. After admitting to that fact, he begrudgingly took our money. So when we went out to ask where our food was, after an hour or more of waiting, we were told that he had given our food to someone else. Trust me when I say that we can NOT be mistaken for someone else. Maybe the food is good, however, the poor service demonstrates a lack of integrity!
