Paul's Rustic Oven

We have to talk about these pies. Mostly because the ideas are lovely, but the execution--at least for the last pies of the night--is borderline terrible. There NEEDS to be some sort of cleaning process for the actual oven. Not only were the edges of the pies (overly) well-done, but there was so much actual soot on the bottom that it felt like licking a charcoal briquette with each bite; not to mention how problematic the science at play here can be for folks on any sort of meds. Really disappointing, especially because the last time I had a pie from these folks, it was absolute fire. But in this economy? With this quality? A bummer.

I finally got to try this pizza from Paul's Rustic Oven after tracking him for a few months and texting back and forth for a few weeks. This is a pop-up truck and not always in the same place so, best to call/text ahead.I had the pleasure of meeting Paul the owner a big teddy bear kind of guy. We spoke at length and had a wonderful conversation from everything from how he got started to how he makes his pizza. Actually, Paul has passed the tradition down to his son and son's wife and they are now the pie makers. Paul relaxes now and just moves the Rustic Oven trailer from place to place.Pizza time!Paul sources his ingredients locally and the pizza dough is hand made. Everything about the quality and freshness of ingredients comes through starting with the aroma. Once you take a bite the flavor matches the aroma. You can seriously taste the quality and freshness. These are Artisan wood fired style pizza. They are not dense and heavy like your highly processed pizza. The pies are personal size 10" to 11" so, if you can eat a lot of pizza in one sitting or, you like leftovers you may want two. I had (2) Margherita, (1) all meat and (1) BBQ chicken with thick cut bacon. All so flavorful...simply delicious. My wife and I had never tried a BBQ chicken pizza before. It just didn't seem like bbq sauce on a pizza would pair well...I mean come on. Well, Paul if you read this, you sold me on it brother. THAT bbq PIZZA WAS THE BOMB! My wife says she is ordering that next time and so am I. Paul, thank you for a wonderful conversation and delicious pizza. I will certainly be back!

First off, thank you! From the beginning you and your staff have been nothing short of amazing. Communication was prompt. Most of all, pizza was delicious. Paul catered our wedding and my guests were very pleased. Staff is very friendly. Had the best bartenders! I'm truly grateful for all that you and your staff have done for my husband and I. Thank you so very much!!!!

I just had their margarita pizza at Ripon festival on February 25 at 14:00 hours. Their pizza dough was cooked, but Pizza was lacking red sauce and cheese bits. And the oven handler failed in scrapping/maintaining burnt bits (in the oven) from adhering into a fresh made pizza! -- if there's a lack of ingredients on a margarita pizza, please don't make a pizza!! And Please do better Paul's Rustic Oven! I enjoy supporting local restaurant!

Finally had a chance to try them out. Ordered a margarita for $13.....yes $13 for a 10 inch pizza with which was mediocre. It wasn't bad per se but not good and at this price point it better be awesome. Just an observation I see around this area at least is food trucks other than actual taco trucks are overpriced and serve sub par food from what you get at actual food places. People seem to think just because the food is served from a truck makes it tastes great.

Pizza is delicious! We got the following pizzas:Pepperoni - classic pizza and delicious!BBQ Chicken - this was my favorite pizza! The combination on the sweetness of the bbq, with the saltiness of the bacon, throw in the chicken and onion and top it off with cilantro to brighten the flavors. It's the one i would definitely recommend.Garlic Chicken Pizza - I can't remember the exact name for it but it definitely had garlic, chicken and basil. This one was not my personal favorite, only due to garlic flavor. My husband really enjoyed this one. Overall, these are really yummy pizza's. I the flavor that the stone oven gives to the crust. It definitely has a homemade taste to the pizza which I really enjoy.We can't wait to try other pizzas that are offered!

Paul and his team catered our wedding on 4/22/23 in Woodland California. They did absolutely phenomenal!! The appetizer, salad and main course pizzas were simply perfect and of the highest quality! The food was served timely and hot! I can not recommend having a pizza wedding more! No one remembers a cold chicken or tri tip wedding dinner but everyone will remember a pizza wedding. Every guest was blown away with the food. Thank you Paul and team, you guys killed it.

Tasty pizza! I got the Margherita pizza and it did not disappoint. The crust was filled with flavor and the pizza was truly cooked perfectly!

Paul and his crew catered our company Christmas party today. Paul was very easy to work with from start to finish. The pizza was so good! Such unique flavor combos and full of flavor. The pasta dishes were a hit as well. Pizza was fast and plentiful for our 100 guests. I can't wait to have another event just to use them again! You won't be disappointed.

Paul and his staff were amazing at our daughters wedding. Super sweet guy . We are so pleased with the food and service we received . Thank you Paul . I highly recommend .
