My partner chose Stateside for his birthday dinner, and it was all around an excellent experience! Ambiance is modern, clean, and not stuffy at all. You'd feel just as comfortable in athleisure as you would in dressy cocktail attire here. Staff was welcoming and extremely knowledgeable, and paced the meal perfectly. We started out with a cocktail each--I can't recall the names as their website cocktail menu does not match what we saw, but my partner had a mule with lime leaf and galangal that was absolutely spectacular. The lime leaf and galangal made my palate SING and it was hands down the best iteration of a mule we've ever had.Now the most important part: FOOD.CRISPY DUCK FRESH ROLLS | Y'all weren't playing, this was the GOAT, and by far our favorite dish. It was texturally perfect, and I do not throw that description around lightly. The crispness of the spring roll inside a fresh roll!? Absolutely genius. I will say that my Korean American palate registered the seasoning on this as just barely teetering on a tiny bit oversalted side (esp with the accompanying dipping sauce), but the texture was so divine that I really can't dock it.STICKY RICE DUMPLINGS | A deconstructed dumpling, really. The rice dumpling on its own would have been nothing to write home about, but the combination of everything (ethereally fluffy dungeness crab! earthy maitake! perfectly cooked taro!) with the broth made it all work so well, especially texturally. The broth was basically buttery liquid gold.MASTER STOCK CRISPY CHICKEN | This was perfectly good chicken, but I can't say it was that memorable as a whole. We ordered a side of the brussel sprouts which were delicious (again, texture was on point with the rice cracker pieces) as well as the ginger rice to go along with this, and I have to say the brussel sprouts were far more memorable.Superb texture really seemed to be the central theme of our dinner, so while I'd really recommend Stateside to everyone, I'd ESPECIALLY recommend it for those who have an extra appreciation for textural masterpieces.

Food and service was so good! We got the duck rolls, crispy garlic prawns, goat curry, fried chicken, and brussels sprouts and everything was SO good! I understand why the goat curry is as popular as it is! Also, special thanks for the birthday dessert they gave to our friend celebrating it was their coconut creamsicle that tasted exactly as you expectOnly reason it's 4 stars and not 5 is because it was a bit pricey given the quantity of food.

Visiting Seattle for business, I found Stateside in a NYTimes write up. It happens to be close to my hotel so I walked to dinner Food was fantastic - enjoyed the crispy duck roll, goat curry and duck egg custard dessert. All courses hit perfectly in size, substance and flavor. Service was excellent. Attentive but not overly aggressive or enthusiastic. I always appreciate when a server can share insights to a dish that helps you confirm or deny your instincts. I was solo and had a comfortable table near the corner with a window to my back. Facing the dining room I had to appreciate the restaurant layout while enjoying an opportunity to glance at passersby outside. Dining room was modern and cozy

Every time we dine here, the food always delivers. It delivers on taste, presentation and experience. The food is always packed with flavor that is perfectly balanced. I honestly feel like that there is nothing bad here. It's a matter of deciding what you love more. Absolutely cannot go wrong with the master stock crispy chicken. The tuna tartare is exceptional here as well. What I also love about Stateside is how the menu rotates and you'll always find something new. Never had a bad or subpar experience with staff here. They will pace your meal accordingly and if you're not in a rush, they will not rush you. You can truly dine and enjoy the food. The drinks also deliver too. The staff is very friendly and accommodating without being overbearing. If you come for dinner, the ambiance is very pleasant with dim lighting. It can get a little loud as the night goes on but never to wear I cannot hear the people I am with. Highly recommend this place as the Asian influence with new American cuisine is one that is very enjoyable. Save room for dessert too. It's always worth it here. Pro tip, if you get the chocolate cream torte, let it sit like 5 minutes before you start eating. Once it starts to get to room temp, it truly elevates the chocolate experience. And the duck egg custard is one that highly refined but simply delicious.

Definitely make a reservation before coming here! I love how tender the ribs were and the spiciness of the curry but my favorite was the squash salad! It's a great place to start a fun night when you're in CapHill or for a nice dinner date!

One of the best restaurants in Seattle. The creativity, flavors and quality of produce was amazing. The service was flawless with highly skilled staff who were knowledgeable and passionate about the food on the menu, as well as, the wine selections. I was impressed the small but diverse wine list that was designed to compliment the food options. The environment was cozy and we could hear each other to have a conversation (unlike many restaurants these days) I highly recommend Stateside and look forward to dining here again soon. No photos this time. Just a lovely night enjoying great food with friends and family.

Great date spot with amazing service and ambiance! The food here was delicious as well. First time trying Vietnamese French fusion and it was such a delight. We tried 2 small plates, 2 mains and a dessert to share between the two of us. It was the perfect amount and everything is great for sharing. Crispy Duck Fresh Rolls (10/10): the rolls had an amazing texture contrast between the crunchy spring roll wrap combined with the chewy rice paper rolls. the duck was not too overwhelming and the oyster soy sauce dip added the perfect amount of saltiness. this was personally my favorite dish of the night! Crunchy, Creamy Chili-Garlic Prawns (10/10): perfectly crunchy and creamy topped with a spicy siracha sauce. another must try dish! Goat Curry (8.5/10): the shredded goat meat almost blended into the curry itself. there was a pretty strong mint flavor which may not be a hit for everyone and the consistency was a bit mushy. eating it alongside the jasmine rice definitely helped the overall texture Chili Crisp Stroganoff (10/10): this is not your typical stroganoff. the dish came with a big hunk of braised short rib alongside rice cakes and some braised veggies. the meat was very tender and i thought it was a unique twist to a classic dish Chocolate Cream Torte (9/10): great dessert to end off the meal. it was very fudge-like and had a pistachio crunchy layer in the middle to cut through the thickness - it was a pretty heavy cake overall

Went to Stateside to celebrate a birthday because we heard lots of great things about it. I researched their menu a bit and we also talked to our waiter Michael (who was awesome BTW), before deciding on what to order. We started by ordering drinks. The Sparkling Passionfruit Sour was delicious! My date had the Twilight Trail (non alcoholic), and we thought it was a little too sweet. For dinner, we ordered 2 appetizers and 2 main dishes. The star of the meal was the Crispy Duck Rolls, so much flavor and texture! Unlike anything I had before. Next favorite was the short rib, although I was not 100% sure about the potato cakes which reminded me of gnocchi. I think if they were crispy they would elevate the dish by adding some texture. The dish did have a couple of crispy soy beans and I loved that little bit of crunch. Unfortunately the super famous goat curry everyone raves about was disappointing. I could taste lots of mint which was ok but overall we were expecting to be blown away. Maybe our expectations were too high after reading so many glowing reviews about it. The crunchy chili garlic prawns were good but not spectacular like I was expecting. Overall it was a good experience, the service is top notch and I appreciate the unique and unexpected mix of flavors on all their creations. I'd definitely would like to go back to try other dishes. Our waiter Michael asked us what we thought about the meal and we shared our opinion on the goat curry, to our surprise, when the bill came we realized they did not charge us for the goat curry and we also got a complementary and delicious chocolate dessert with a candle.

We had a great dinner experience at Stateside.I ordered a pineapple margarita and quite enjoyed it.To start, we ordered the Crispy Fresh Duck Rolls, which we expected to love. It was served with oyster soy sauce. They were okay, but relatively underwhelming and not very flavorful. However, next came the ultimate flavor bomb - the Chili Garlic Prawns served with house made siracha. I highly recommend this dish.Lastly, we ordered the Goat Curry. Our server said this was his favorite dish on the menu and now I know why. It was fantastic, tons of flavor, the perfect level of spiciness, and a great portion size.Michael was our server. He did an excellent job. He was attentive, but not too pushy. The environment at Stateside is pretty cool and the music brings a low key vibe. I would like to return.
