There was a short wait, but we were seated quickly. A little too close to the door for our liking and the waitress accommodated us kindly. The service was quick and the food was delicious. I tried the level 4 spice and for someone who LOVES spice I thought I could've gone spicier but my spicy miso ramen had a good balance of spice and flavor. I'll definitely be back to try level 6!

Saw this place packed when visiting Japantown, persuading me to come back the next day and I'm so glad I did! The hostess was extremely sweet and told us to sit wherever we wanted. We ordered and paid through there QR system, which made things extremely efficient. The ramen was absolutely delicious. The noodles were fresh and the broth was the perfect level of spicy. We also ordered the fried karage and it came with a matcha salt - loved this as well! Would definitely recommend!

i loved the umami shoyu ramen. it contained a variety of toppings, including a range of vegetables and chicken. however, while the fried kale tasted good, it seemed to make the soup more oily. the overall ambiance and seating area was also really nice- i enjoyed the good lighting and serene music.finally, the service is super kind and the staff are all friendly and welcoming to each of the guests.

Fairly good spot, their classic take on ramen reminds me of Japan's ramen. It's not doing too much, and focuses on simple ingredients. Very much a sit down type of vibe.It's a mobile QR order and you pay and tip at the beginning, which is a little weird but makes for an efficient eating process.

It's been so cold the past few days, and all I could think about is their hamaguri ramen (littleneck clam ramen). As always, their hamaguri ramen doesn't disappoint! My boyfriend got the Tori Paitan (chicken ramen.) The chicken was a little dry, but it was well seasoned. The takoyaki was a bit oily in my opinion, and it was kinda sad that each takoyaki only had one small piece of tako in it. Last but not least, the tabera they have on each table is SO good. It's made with garlic, onion, sesame, and chili oil. It goes with the ramen really well.

We came by on a Sunday night and after putting ourselves on the waitlist, we were quickly seated after a short wait. Hinodeya has a couple of vegan options which were great for my friend and we were able to share the vegan dumplings as well. The dumpling fillings were good but came with an odd mayo like sauce and lemon that threw off the flavor a bit.I got the Hamaguri Ramen with littleneck clams which was great with a super rich, umami broth. I loved that the broth felt lighter than the house dashi broth and the clams were nice and meaty to eat.

HINODEYA is my to go ramen spot. The ambiance is nice and you can have your warm talks with friends (it's not overly loud) service is always great, and if you're a regular, they will remember you which is such a great feeling! Now the ramen is top tier! This isn't a water downed broth, the broth is thick and flavorful. My favorite is the spicy miso butter corn ramen. I get the level medium on spice which gives the perfect amount of spice! This place will stay on your mind time and time again!

I thought I had managed to try all things matcha until I saw the Matcha Beer at Hinodeya - that was pretty much the only reason we stopped by for dinner. The spicy miso (with and without butter corn) was delicious but I think I could have opted for a little more heat - I think I chose medium hot when ordering.

Came to Hinodeya as our backup dinner when we found out the restaurant we were trying to go was closed for the day. Having been a few times already, I know that Hinodeya has fast service, a large space with plenty of seating, and a consistent menu. -Fried Oysters ($11): first time trying this and I was pleasantly surprised; these came out piping hot, with a satisfying crisp on the outside and juicy, tender and large oysters inside. Would definitely recommend getting this if you're extra hungry and need an appetizer to go with your ramen. -Tori Paitan ($18): also my first time trying this since they only have a limited amount daily, and it happened to be available today. The broth is creamy and tastes more of pork and dashi than it does chicken. The chicken breast wasn't dry, but was pretty bland, and I wish there was more veggie or maybe bamboo shoots included. Hinodeya is a consistent ramen place and reliably has seating available, unlike some of the more popular restaurants in the area, but still serves up solid bowls of delicious ramen. I enjoy their ramen with clams for how unique and umami it is, and know I'll be back again in the future.

I tried their House Ramen with spicy level Enma (Level 10) EXTREME On The Side. The dashi broth was carefully prepared with bonito flakes, kombu seaweed, scallop bouillon, and pork fat, creating a clean and flavorful base. The wheat noodles were cooked perfectly to the right firmness. The toppings included Chashu pork, Menma (bamboo shoots), Ajitsuke tamago (marinated soft-boiled egg), Nori seaweed, Baby spinach, Green onion, Sesame seeds, and Chili strings, all adding great texture and taste.Before I added the chili sauce, everything tasted pretty good! The broth was clean and flavorful, and the noodles were just right. However, once I added the chili sauce, it was an entirely different story. I consider myself a spicy food lover with a high tolerance for spiciness, but this one was no joke. It felt like my mouth could take the heat, but my stomach couldn't handle it, haha.
