Happy Pi Day (pizza pie counts)! Tru Pizza Truck was at Bauhaus on a Saturday night. I had already eaten dinner, but I went in knowing that this would be my 4th meal. So I'll get right to the point - this pizza was probably the best I've had in the Twin Cities. I ordered the "Light" (Prosciutto, Arugula, Balsamic, Parmigiano-Reggiano, Olive oil base, Sea Salt, Burrata Mozzarella) with added crushed tomatoes. The crust was thin, yet held up to the toppings, and had absolute perfect bubbles. It was skillfully wood-fired creating heavenly char on the crust. All of the toppings were of high quality and was just the right amount of herby, salty, tangy, and creamy altogether.Sadly, service was a little rough that night. There was only 1 person in front of me when I ordered, and I was told it would take 15mins. But after checking a couple times and over 30mins later, I got my pizza. At that point, they had run out of arugula, which was a bummer too. But luckily the pizza itself was so worth it. It is a little pricey too, at $14, which I guess help me restrain myself from buying 5 in one sitting.

O. M. G. I might become their next cult follower. This pizza was amazing and the best food truck experience I have yet to date. I had the number 5 which was amazing. Garlic, olive oil, chicken fennel sauasage, cheese, and fresh basil. The ingredients were fresh and high quality. The dough was the best dough ever. I mean it, EVER! So light and airy; cooked to perfection. Not to mention the two men working were phenomenal. They offered us a sample of a calzone and even gave us a truffle!

Neapolitan pizza on a food truck!? Unique, delicious, and local toppings? The friendliest staff around? Check check check!I am a pizza aficionado, a connoisseur. I have tried every pizza place I've ever heard mentioned in Minnesota. Traveled to Italy and Chicago basically to eat pizza. I've spent years trying to perfect my own Neapolitan pizza at home. Tru Pizza is legit wood fired, slow fermented, whole milk mozz, and finely grained flour Neapolitan pizza. Great pizza is a deceivingly complex process that requires detail and skills that I'm surprised they can even pull off in a truck. Everything from the water being used to the yeast fermentation methods can completely change the structure, rise, and spring in a slice of pie. Guess what - Tru Pizza is SO CLOSE! I believe with a bit more experience under their belt they could truly excel in such a way that I will be day dreaming of return visits. Before my visit I checked out the Tru Pizza website, and the main photo of a simple Neapolitan pizza almost brought tears to my eyes. The cornicione(corn-ei-choll-ay/outer crust) was so perfectly charred in all of the right spots. The base was that beautiful thin San Marzano layer of sweet tomatoes that pizza should never be without. The mozzarella was thoughtfully placed around the pie so each slice gets a nice helping of whole milk. The photo on their website is nearly perfection in every sense of the word. Unfortunately, I did not receive the same edible art-piece when the truck stopped at my office. You can see the pictures I posted, but the consistency in the shape, size, topping arrangement, leopard-spotting, and cornicione were lacking to say the least. It's not an easy thing to achieve, I know as I struggle with it myself when making pizzas at home. But to me, the spread of the toppings was too little when compared to the amount of exposed dough that eventually formed the crust. I do not prefer a pile of toppings in the middle, and a huge slide of bready crust to accompany a single bite of toppings. The great news is that their is still hope. The tools, ingredients, and awesome owner Jason are all keys to success, and I'm positive that with a bit more time and training this p'truck will pump out insane slices in uniform fashion. This isn't your local American pie shop thank God for that. This is a BREAD shop disguised under the veil of gooey cheese and high quality meats. Overall, I'm beyond pumped that this truck even exists in the TC. Top quality ingredients at a steal of a price with a product that even obsessive pizzaiolos like me am impressed by! Go track down this truck and thank me later!

Wood-fired pizza on a food truck? Bravo! Packed tightly in a truck with their large oven, I'm impressed with efficiency and enthusiasm the Tru Pizza staff have for slinging fresh Neopolitan-style (with oregano) wood-fired pizza. Tru delivers a healthy portion of pizza. It's light, herby and fresh. It compares well with Punch Pizza and do well against in blind taste tests or side-by-side battles. A warning to pizza lovers unfamiliar with wood-fired results: Your thin focaccia-style crust will be limp in the middle and the outer edges may be burned, but the flavor profile is fresh, herby, and lighter than traditional, cheese-piled alternatives. The biggest difference between Punch Pizza and Tru Pizza Truck offerings is the price, at $12, a Margherita pizza served from the food truck is nearly twice the price as Punch... however, it's probably twice the effort for the team working in the food truck. Pizza's are plated within 5 minutes of when you place your order, but it can take SOME TIME getting to the front of the line. Why? Tru Pizza is always popular, so when food trucks are lined up 12 deep, you're likely to wait in line.

Seriously stupendous pizza! We had TRU cater our graduation party. Hundreds of people and all had fresh, hot, tasty pizza over a three-hour time frame. The staff is lovely and so easy to work with. They made our celebration a huge success, and people loved the pizza. So easy to work with and set-up/tear-down was a breeze.

Tru Pizza Truck partnered with me in hosting a charity event for Cancer Legal Care and they were fantastic. Jason & his crew were on time, professional and accommodating. The pizza tasted just like the pizza I ate in Naples Italy years before and they donated all of the profits to the cause. Highly Recommended!
