V2 Pho ap chao chay (~$13). Despite "pho" in name, it's more a noodle stir fry in a liquidy sauce. It was fine, but not savory (semi-sweet).

The pho was so perfect, and they had tons of sauces and spices right on your table. My friend had their eggrolls and banh mi which looked insanely good, and I'll have to come back for those next time. The eggrolls were flakey and perfectly cooked, and the banh mi was bursting with filling. The pho had a perfect ratio of noodles, broth, tofu and veggies. The woman serving was so sweet and kind and she made sure we were always enjoying our meal. She definitely made the experience all the better. The restaurant felt cozy and had beautiful decorations hanging up. It seemed clean and welcoming. I'll be back!

My youngest wanted Vietnamese Udon Noodles soup and so with an hour before closing we came here for some banh canh and pho to satisfied both of my girls's wants. Service was prompt and I can't believe how good their water tastes. It's the best I would have to say. We order the banh canh and pho tai. Both soups were flavorful and good prices. Service was very friendly and the gal that waited on us was very kind and helpful. Love that they have almost everything for every mood. If they have Vietnamese sweet and sour soup on the menu I would definitely come here a lot because then it would be everything I want to eat under once roof! I didn't order this time but their spicy beef noodles soup (bun bo hue) is pretty good too. Definitely coming back again.

Best pho in Minneapolis! We are regulars and are never disappointed in the service or the food. Our typical order includes a G2 banh mi, an order of the spring rolls, and two #1 pho. The broth in the pho is my favorite in the cities and I love the portion size. The peanut sauce that comes with the spring role is my favorite. And I think most of the banh mi sandwiches are delightful - we tend to mix it up on which one we order. Finishing it off with a tarp bubble tea is my favorite treat after the main corse :)

Always been a huge fan of this hole in the wall pho place. I haven't been here in years but thought I'd give it a go. The food was not as good as I remembered, which made me very sad. My spring rolls seemed half the size I used to get in the past. I also ordered the seafood pho and the imitation crab was horrible. The service was also subpar. I waited over 30 minutes to be greeted. I don't know if I'll come back anytime soon with so many other options on Eat Street.The whole area is very scary so fair warning.

A friend told me this place was recommended by a Vietnamese guy for best pho in town. Maybe my tastes are different, but I found the pho a little bland, especially having recently eaten at MT Noodle in Brooklyn Park. Points for a generous plate of herbs and sprouts to accompany my bowl.Atmosphere is absolutely what you'd expect in a mom and pop restaurant: brightly lit, lots of knick knacks, Vietnamese Christmas carols playing (it's late December.) Service was friendly, prices average.

Lady at the front counter was using a disposable razor to trim her chin hairs when we walked in. Seriously, not a joke.Food was ok. Service was pretty slow with empty water glasses for 10 minutes even though 3 people that work there were sitting at a table staring at phones. Too many better places nearby.

I've never been to a more authentic Vietnamese Pho restaurant. I wasn't sure if I was in the right place when I arrived. The moment I walked in, the atmosphere completely changed. The space is quite large and pleasant! I ordered some egg rolls and the special Pho. The eggrolls were perfectly fried and delicious. It had a nice crunch without crumbling. The dipping sauce went well with it. The Pho was phenomenal. This is the Pho for you if you prefer your Pho with a clear broth and a beefy flavor. It is the best Pho I have ever had in Minnesota. That is a huge statement, but it is true. The high quality of the meat cuts worked well together with the broth and noodles. The most important thing about a good bowl of Pho is the portion size -- it was perfect! Not too much, not too little. Overall, this is my new go-to for Pho.

Located at the dead-end of Nicollet behind the can't-be-killed Kmart, Pho Tau Bay is easy to miss since it's not in the heart of things. That said, it offers extensive vegetarian options (most of which are vegan by default) and really good vegan pho.We got the "ca ri dau hu" ($12.50) which is a creamy yellow coconut curry with potatoes, carrots and tofu. The dish is mild and not bursting with flavor, but it's not bad, either.The "dau hu xao bong cai xanh" ($12.50) is a simple, light stir-fry with tofu, carrots and broccoli. It won't wow you, but it's fresh and not heavy.The "banh mi dau hu" ($7) can be made vegan if you omit the butter and pate. I thought this was bland and less than the sum of its parts. The bread was passable, but the lack of seasoning to the tofu killed the dish. If you want the best vegan banh mi in town, head a flew blocks north to Lu's Sandwiches.Lastly, the "hu tieu nuoc chay" ($11) is essentially vegan pho and really damn good. It's hearty, fresh and deeply savory with an excellent broth.The interior of the restaurant is happily 1970s beige and brown with carpet and regulars. Make sure to stop by before it gets hipster-ified.

If you've read any of my other reviews I love Vietnamese soups and I have a couple favorite places. Since my favorite on eat street is closed on Thursdays I tried Pho Tau Bay. I had the G1 Banh Mi with grilled pork and meatballs and the #30 Mi -Yellow Egg Noodle(pork broth soup) which turned out to be a soup on the side soup. I only intended to eat half the Banh mi but it was probably one of the best I've had and I quickly devoured it. Sweet and salty pork, crunchy warm bread, spicy jalapeño and crunchy veggies - 5 stars. The soup, deconstructed soup I guess was just okay. The broth was Luke warm and lacked the deep flavor of my favorites. I had to try to layer in more flavor with the accompaniments of which I will say they have a good selection. I really enjoyed the fried egg wonton with the shrimp inside that came on the side - 3 stars. Ambiance was seriously lacking and the place was kind of dingy and smelled a bit musty. I almost didn't even go in when I saw Nicollet ending and the condition of the building next door - 2 stars. So all in all I'd say it's a 3.5 stars for me but I will definitely be back to try more of the Banh Mi selections and the bun Bo hue.
