Better Half Bagel

Saw a line for some pop up at Holy Spirit while I was at the midtown farmers market today and someone in line said it's the best bagel in town. So I had to try it out for myself. Paid $15 for 4 mixed bagels (2 plain, 1 sesame, and 1 everything). Expensive bagel calls for expensive cream cheese, so I went to Sacramento co-op to get some good organic cream cheese to go along with it. Toasted up the everything bagel at home and to my surprise the skin was so chewy. It was hard to bite through and I had to chew for days. The texture of the middle was fine, but the otter layer is a no for me. I wonder if I toasted it wrong, but I wasn't a fan.
