This family run business is a hidden jewel. They had 7 types of chorizo and I bought a half sausage of every kind, just so I could try them all. We love different levels of spice, and so far I like the green chile the best. They also have amazing flour tortillas imported from Mexico, as well as family recipes of chile salsas that are so good. They let you sample them. They are great at helping you figure out how to cook and serve chorizo, as I was thinking of making it into a charcuterie board and the owner had great suggestions.

Corona is still full of surprises! My latest pilgrimage took me to a newly opened, specialty chorizo shop nestled in an aging strip mall, one that normally you would buzz by without giving a second glance. (That's the one that also has a Sizzler and a McDonalds.) This already established business has recently expanded into new territories for the chorizo-minded. The family successfully run 4 stores in the Orange County area, and now....we have the opportunity to welcome them to our very own, beloved Corona. Their hook is their collection of beloved family recipes and friendly service. Chorizo is chorizo? Right? Not at all! This is not a one-size-fits-all product. Off the top of my head, they have at least 7-8 options, with different presentations and spice levels, some in casing, some not. They range from mild to spicy, using chicken and pork, a dried version resembling a Spanish chorizo, and bulk, ground. They emphasize the quality of their meat as not being greasy, and in fact recommend you add oil when you cook it. That alone tells me you will get more value for their product.The green pork chorizo is what first caught my eye. The attractive green color is the result of using poblano and serrano chile in this recipe. Others are varying shades of rich deep red. Then I noticed the chicken chorizo. Before I knew it, we had bought small portions of 5 types. FYI- The long sausages in casing appear to be about a yard long, but they gladly will sell you a half. Hence, my gluttony was unleashed.To get a good grasp on the differences in their recipes, I pan fried bites of each of the 5 this morning. Gringo that I am, predictably, I preferred the less spicy. My personal favorites were the ones that were labeled either "mild" or "non spicy". There are two of those, one in casing, one in bulk. There is also a chicken chorizo that falls into this category. The spices are warm, complex, very rich in flavor. All 3 were delicious! My other delight was the green chorizo. This is slightly more spicy, but still a keeper. Imagine placing any of these sausages on your outdoor grill to enrich an already fabulous, mouth watering combination.Carolina, one of the hard working family members who runs this shop, also creates her own red and green salsas. We met her, and the Don Carlitos himself, both running the shop (delightful, impassioned people with dreams of delivering good products to our city.)And then there are the cookies! She bakes and sells her traditional cookies and, of course, no cookie is complete without a cup of coffee. They have a coffee machine to make it on demand. At this time, there is only one teeny tiny table set up inside, seats 2, where you can sip your freshly brewed coffee and nosh on those precious cookies. A real treat, those pretty little cookies can be purchased by the small box, a variety of dainty little mouthfuls. She offered us a cookie sample, and without a second thought, my fingers immediately snatched up one of her Mexican Wedding Cakes while strains of "I Only Have Eyes for You" danced in my head. Perfect! She also sells boxes of her buttery, crisp oatmeal cookies. They, too, are just lovely.Intrigued? I hope so. I wouldn't recommend waiting to visit until then, but make sure you mark Saturday, September 10th (2022) on your calendar, a tentative date for now. Carolina is hoping to have a chorizo taco tasting out front of Chorizo Don Carlitos. Will I see you there?

Attention foodies especially the ones that enjoy cooking or knows someone that does, I walked in to this establishment thinking it was a restaurant, surprise it's not, they are a small locally owned Chorizo factory, that makes the best medium spice chorizo I've ever had, so take some to the closest kitchen available to you and start cooking, your taste buds will thank you for it

I have been purchasing chorizo from this family for many years, once I found out they opened here 2 miles from my home I was so exhibited!! They continue to be the best of the best!! No one else compares to them. Just be mindful, if you get spicy it is really really spicy but so good. I just get mild because it's just as delicious and easier to eat lol. I make mine with potatoes and green chile. Yum!!

The owners are awesome people humble and excited about expanding to Corona. The chorizo is made fresh with high quality ingredients and integrity. It's one of the best I've had and my family and I love chorizo! They make various types of Chorizo here; Pork, Chicken, Soy (vegan), & verde (green) non spicy, mild, and Hot. For Halloween they are making Zombie chorizo lol. I'm glad they are in Corona community and not just in the O.C. Come by and sample their chorizo, try their tamales or have a cup of Joe at the coffee bar and try their delicious homemade pastries/ cookies. Here are the highlights 1.
