I loved the texture of these pizzas. They're thin crust on hand-rolled dough and cooked in a wood-fire (?) oven. My son devoured his pizza. I savored and loved every bite of my mushroom pizza - had I not been full, I'd have ordered the veggie (touted as their most popular pizza). Instead, I had the chopped Italian salad with basalmic dressing. You can see that it is generously served. The flavors were well-balanced and super tasty. This place is a keeper and I wound come back and try their calzones. It took about 15 mins for us to get our order because they are made to order - a good thing! The vibe is chill and appears to be managed by a group of nice guys who are responsive and helpful. We got our order "for here" and sat in their seating area which was very quaint. We faced a display of plants that are grown with "grow lights." I'd come back if in the area again.

Was there last weekend with a friend its in a fun crowded food court area. We got 2 medium pepperoni pizzas they were decent and we liked the baked oven crispiness.But the pricing was too high--over $40 for 2 pizzas and they were pressuring for a tip. Pizzas were good but probably will not be returning.

This place has gone down hill under new management. Seriously. I'm going to post these photos and let them speak. How is the pizza burnt and undercooked at the same time? The pizza came out to $25 for a gluten free cheese pizza. I could go into Stater Bros and get a pack of frozen pizza and it would come out better. Oh, and I just found out that I am now 86d from the restaurant which means I can't return but before they did that I sent an email explaining how terrible the customer service and food has been and that I wouldn't be returning ever again. The last time I ate here was a year ago and they couldn't make it correct 3 times (pictures on last review to prove it) and then said "f*** you" and hung up the phone. Eat here if you want but don't say I didn't warn you.

I honestly thought the pizza here was really solid. Not sure why others don't think so. The guy who worked the counter was super friendly also. I just sat right across their counter at the beer bar and when my pizza came out, I had it with some beer. Perfect.

Been to the food lab many times and have wanted to always try Bricks and Birch, but there has always been a line. Finally tried it and almost wish I didn't. Ordered a large pepperoni pizza($20) which is really more like a Medium(6 slices), and man it was really soggy. The grease was just puddling on the top. Was very salty, that one slice is already making my stomach hurt as I write this. Should really be one star but we'll give them 2 for the location and service; inside the location because **What's up with the business owner? Responds to comments very sarcastically. Not a good look for the business, instead of properly addressing the issues, that many people seem to have.

Bricks and Birch is a great place to chill out and get some work done. I really appreciate the amount of outlets they have as I am a person who constantly had a dying device. Only downside is that there is no WiFi unfortunately. There's a Spectrum connection there, but it only allows guests to use for 30 minutes. If you have a personal hotspot that would probably be best for your connectivity. They have an assortment of coffees and teas which go really well with individual work or study, but so does their pizza! Really impressive that all pizzas are crafted and cooked in an authentic brick pizza oven. Gives your typical pepperoni pizza that additional kick in texture and flavor that it needs! Parking is hit or miss with the spots right outside the restaurant. There's a barbecue spot next door that also gets a lot of traffic. There's parking structures across the street where you will find easier parking options.

So we went to this place to get pizza for dinner. It was busy. The guys working were doing their best but the reality is the end product wasn't cooked properly. It took ten minutes to get the order in and the two younger guys were busy at their stations. Ideally, they should have had five people working. Further, they don't work as a team. The supervisors or owners did work together with each other but it didn't translate to the kids working the stone oven and the cash. Ultimately I have to cook my pizza at home to finish it. I'd get a refund, but I didn't want to wait another twenty minutes just to be seen. Best of luck, but this business won't survive if it continues like this.

Apparently this is exceptional pizza and my amateur taste buds could never . Reducing the rating from 2 stars to 1 star-- because this pizza is #1 in the world (: ]It smelled so good my husband and I knew we had to order from here.BIG MISTAKE.The food was SO salty we couldn't finish either of our foods. T.TI'm usually not too sensitive to salty and can tolerate more, but I just couldn't get past the saltiness on the pizza. I think it was because of the cured meats on it. My husband got a calzone with pepperoni and also couldn't finish it because the pepperoni was way too salty. We enjoy trying different pizzas from different establishments, usually the pepperoni, and never in our lives have we tasted anything so absurdly inedible. It had so much potential-- I did enjoy picking away at the crust and taking off the toppings, but that was the extend. Some of the most expensive trash we've had to throw away. Maybe stay away from the pizzas with pepperoni or other cured meats if you're really wanting to try.
