This place flies too under the radar from what I can tell. Out of all the ciders I've tried in Seattle, this place easily has the most unique and exotic ones you can try. Some highlights include the Hibiscus Rose Julep, La Ma and the Yan Wo. The main thing that really stands out about the ciders here really is the freshness of the flavors. When you get a pineapple flavor cider, it feels like you're biting into a pineapple. When you get a cider fermented in a wine barrel it really blends the cider perfectly with the flavors of wine. The selection rotates out pretty regularly with not many flagships. You're bound to find something new every time you come in. To add to the quirks even more they even have a secret cider tap where the flavor of it is a mystery due to no labels being present on the barrel. So when it changes you really don't know what you're getting. No food is offered here but luckily you have Pick Quick Right in front to grab a bite. Other thing to mention is the hours are EXTREMELY limited here. You only have from 4-7pm on Friday and 2-7pm on Sat. All other days require a reservation to sample. They do also host events regularly so keep an eye out for those too. Overall, this is an extremely small humble brewery that's worth the effort to attend. The service here has always been top notch and I hope they're able to succeed in the future.

As soon as we entered the door, we were greeted by a few people who asked if we were interested in wine or cider. We said, "cider!" but I think it's cool that this space is shared with other tasting rooms. The outdoor seating was lovely and shaded, big plus for sunny days.The server was absolutely awesome. She did a fantastic job of being welcoming, personable, and explaining everything on the menu. There were ciders and meads to choose from. Also, on the back of the menu there were ciders that were more like wines, which are pricier in general so the server mentioned that the cost for the tasting of those would be the same, but you'll get less in each glass. Understandable.Some of the flavors were so unique! I was surprised at the Asian inspired influence in ingredients, such as winter melon and szechuan peppercorn. I'd never seen those before in ciders.We got two tasting flights- a mixture of all three sections of the menu. My favorite was the banana mead (which was sweeter than most of our other tastings, and I don't usually like things that sweet but man, it was good). My least favorite was the plum cider. I guess it wasn't plummy enough and a bit too sour for me. The winter melon didn't quite taste melon-y enough either, and the espresso mocha mead was such a crazy idea I had to try it. It was strangely good but didn't quite work for me with the combo of mead and coffee flavors. Glad I tried it though!Even though I didn't love all the ciders I tasted, this was such a pleasant experience. Oh yeah, they even gave us two macarons with our tasting! I had a great time, and there are so many other flavors I missed out on. I would love to come back and try more!

I came here for a paint and sip night with friends. They carry an Asian inspired menu with flavors like plum and winter melon! I wouldn't say it was the best I ever tasted but definitely interesting. Between the three of us, We shared a bottle of champagne and each enjoyed a glass of cider.

I'd stumbled upon Republic of Cider but found several of their cider flavours intriguing. First cidery I've seen that offers a winter melon cider. They're located in the same facility as Fall Line Winery and T2 Cellar.We dropped in on a Friday (around 4:00pm) and were greeted right away. There's plenty of tables inside (the room is split into two areas) along with a couple more outside. Service is friendly and they seem to enjoy engaging with their customers. 18 ciders on tap (10 regular, four rare finds and four from Woodinville Ciderworks). Several flavours lean toward the Asian palate. Cider bottles and cans ranged from $5.00 to $20.00 USD. A taster set is $10.00 USD for four (4 oz).- 6x Tasters ($2.50 USD each) - we went with the hibiscus rose julep, la ma (spicy mama), plum & pucker, sassy peaches, kwas sour and cabell d'angel. Our favourite was the kwas sour (sour mash toasted bread fermented with raisin) followed by the sassy peaches. The rest left us wanting more. Not enough flavour and oomph. Especially the la ma (winter melon and Szechuan peppercorns); heat was very subtle and didn't get much winter melon notes.- Cookies - they brought out a complimentary bowl, which came out warm and gooey. An unexpected but kind gesture.RoC wasn't the best ciders we've had but it was a relaxing visit.

George is an extraordinary cider maker creating the most delicious and unique flavors! Open on weekends and worth the trip! George and Emily are our new favorite and it's so hard to decide which is your favorite! Ok, digging the bourbon barrel crab apple... yummm

Came here for a social event and was underwhelmed a bit by it. Parking is limited, food is strange and the managment seemed irritated at customers. The tasting I was attending was lack luster with barely enough in the tasting glass to get a good feel of the cider itself. The event included a tour of the cidery house and it was slightly interesting as the owner/manager/ cider brewer guy did seem happier when sharing about the ciders. Apparently they share the space with other wine makers. Yet, the overall feel of this place was unfortunately unfriendly. I did purchase a bottle of dry cider that was like a dry champagne, but due to a weird miscommunication ended up purchasing two bottles which came with a free glass. The woman serving me did not listen to my request for a glass of cider and brought me the bottle and immediately opened it for me to drink, which was NOT what I wanted to do, drink an entire bottle alone. Even though it was a smalller size bottle. Luckily other people were around I was chatting with so I offered them some. When I was leaving the manager asked me if I was ok as if to chastize me for drinking. It was very strange. Don't think I will be back.

WOW! Two travelers here from California on a quest to find delicious cider. This was fantastic. Not only was the cider very unique, but the service and staff were amazing and the most friendly. My favorite was definitely George's SoDo. A must try if you are in the area. We were staying in downtown, but was definitely worth the quick bus ride. Note: did not try any wine but people seemed to be raving!

The Service was great.We had a group of 8 which for this place is a rather large group. There's a few tables in an small tasting room within a large factory looking place. It didn't have much of a vibe to it but the ciders were delicious. Of course we tried a flight to really check out the ciders and everyone seemed pretty happy with their choices. If you're not drinking cider they have sparkling water and izzy drinks!

We did a paint night here! We had so much fun. The drinks were good and actually included one in the ticket of painting, If I knew that I would have ordered more. The only thing is we wanted food, and there is a burger place in the parking lot. Hard to eat burgers while we drank and painted but overall fun and so worth it! I believe they served a cheese plate or charcuterie board but we didn't get it. The service was easy and quick to get. We went across the street to oriental express after. What a fun night out.

Amazing selection of ciders, there is something for everyone from traditional/safer options like sassy peach to adventurous choices like banana! Start the weekend by getting a flight here and try out some Taiwanese-inspired creations. Friendly, down-to-earth service too. Will come back for sure!
