If you have never been to Cure and you think you know what to expect. Forget it. If you are expecting a sprawling store with salami and sausage hangin along the walls. It ain't that. What it is, is a very cozy, aisle sized walk way. A couple dorm size freezer and or refrigerators that hold absolutely amazing steaks, summer sausage and so much more. Local honey, homemade sauces and more adorn the back wall. It is what is behind the counter that made it for me, besides the freezers that are packed with Super tasty bacons, it was the 2 fellas that were back there getting stuff done and took time to walk us Cure rookies through what they offered. They know their business and it shows. The bacons and the summer sausage are OUT OF THIS WORLD. Do yourself a favor and make the trip to Ft. Calhoun and get into CURE. You will be glad that you did.

The Adobo-Q sauce is the best BBQ sauce I have ever tasted. Will make trip to Fort Calhoun just for a couple bottles of Adobo-Q.

This place is excellent! The owner is very nice and always helpful. I've tried a variety of local meats and absolutely love everything! I try to go about once a month to pick up meat for dinners or something special for family gatherings. If you haven't been yet, you should definitely try it soon!

I love this place so. Recently my family has decide to "vote" better with our food dollars and try to consume more local food. Cure has amazing products. There fresh horseradish is amazing(I didn't think I like horse radish until we tried it from them) some of our favorite things them are breakfast sausage,bacon,duroc pork ribeyes, waygu ribeyes and soup bones. Very friend and knowledgeable shop!

Tried the Kippered Wagyu Beef...A-mazing! So much better than a dried out jerky. These guys did it right. The whole family could smell it and asked what it was...of course then it all disappeared. Everyone loved it. I'm going to have to stop in and grab some more for when company is over.

Game changer. That's exactly what this place is. I'll carefully work in a trip to Ft Calhoun so I can stop in, say hi to the owner Chad and his crew, and find my next curated meat adventure at his shop.So their retail hours are only Thursday through Saturday, because the rest of the week they're preparing all of the goodies that you can see on their menu. It's updated weekly and posted on their website. The new menu usually comes out by Wednesday evening, and you can only order and reserve your choices on Wednesday nights. They also update the menu throughout the week as thing change.The owner is from central Pennsylvania and spent a great deal of time on the east coast. As such, if you are familiar with the Pennsylvania Dutch inspired scrapple, he makes a phenomenal scrapple of his own. He has a spicy chorizo version as well which I have not tried yet.I have had the original scrapple, his country bacon, and the beef bacon so far. They are hands down some of the best I've had.Last weekend there was amazing, as he had made the holy grail of East coast breakfast meat delicacies, Pork Roll (for those from north Jersey or the NY area, they call it by the brand name Taylor Ham)! Also had a spicy version he called the Jersey Devil roll I believe. Incredible. Just amazing.I went home and experienced quite a gluttonous culinary episode. Cooked a whole slab of country bacon in my cast iron skillet. Then, in the bacon grease, fried up 3 slices of scrapple. Not yet finished, I cooked up 3 slices of pork roll that found themselves wedges into a fresh kaiser roll with poppy seeds, covered by two over easy eggs and some American cheese (also known as a jersey pork roll egg and cheese), seasoned with SPK (Jersey slang at the deli for salt, pepper, and ketchup).This was an epic pilgrimage. This man is a true artisan in his craft, and this is only a mere peek at the expansive menu of goods he makes fresh daily right in Ft Calhoun. Go there, and if you've never had it, try the scrapple. As they say, it's everything but the oink, And damn is it good.
