The 5 stars is for the beef in the noodle soup. Flavored like shortribs: these cubes of grizzled beef were more flavorful than the beef in almost all of the other Vietnamese noodle soups tried so far in the South Bay: The beef here also tastes better than the beef shank does at the Flaming Ox at Brokaw. It is also tastier than the Tonkotsu pork slices at Kumiko on Jackson. And it was better than the Birria beef plates at both the Cali-Spartan on S 10th, and better than Tostadas on West San Carlos.But even though the beef was five stars, the rest of this noodle bowl was not. To modernize the bowl, adding 2 to 3 more components would help: maybe adding something salty to taste, or adding something crunchy to chew, or adding something that the nose can smell, to give the dish more enjoyment to eat, to be more comparable to the strengths of the Japanese Tonkotsu noodles.Adding bulky components might also help, llike lotus root, collards, or jicama which do not shrink after cooking, at dinner time when diners eat more, to make the noodle soup feel more full and satisfying inside the stomach, so it is more like the benefits of ordering the larger bowls of Vietnamese Pho at Vietnam Town.Another idea might be including one scoop of a secret mash or paste, crunchy onion toppings, or a spicy drizzle that the other restaurants do not have, to further differentiate away from the run-of-the-milll toppings at other places.The CEO beef noodle soup currently seems to have only 5 components (broth, noodles, beef, cilantro, onion). When other types of noodle soups can have 7 to 10 components, getting the Beef noodle can be a letdown for those unacquainted with the history of this item. Even CEO's excellent seafood noodle soup also has more components: like coconut broth, curry, noodles, regular tofu, seasoned tofu, shrimp, mussels, classic, calamari, and a few other things.

Food is mediocre at best. With so many great options in downtown i wouldn't recommend going here. Service is pretty good because you will be the only one in the shop. And I like the funky ambiance. Value isnt great portions are small.I have had it twice to give this place a fair chance probably wont be returning

I was very skeptical of this place because it is so unheard of to have 4 different noodle dishes from all different countries (Vietnam, Japan, Malaysia, and China). They mentioned their best dish was the beef noodles. The restaurant as a whole is such a unique concept but it is such a great gem to discover. The menu may be small but don't let that scare you from tryingService: The moment we came in, the owner immediately went to greet us and personally walk us through the menu. Incredibly friendly, super cool ownerAmbiance: This place stood out to me. The outdoor and interior design was handmade. The owner has his own painted artworks on the walls and currently sculpting a tree that grows toward the ceiling! There is a cozy separate area that's great for doing some work. Wished they toned down the loud musicLaksa noodle soup $14 (8.5/10): This Malaysian dish was so flavorful and had a mild spice. The noodles had good texture. This is my first time having laksa and it tasted like a curry soup. It contained seafood, tofu, and an egg. I personally like this better than the beef noodles but that's only because I'm a huge coconut milk curry fanBeijing beef noodles $15 (8.5/10): This was yummy, the beef cubes were nice and tender. The soup feels more complete after putting in chili oil, the oil is more for flavor than spice. Wished this contained a lil more veggies in itPho $12 (6.5/10): As a Viet person, I hold pho to a high standard and this falls short. It's not bad for $12 but the traditional flavors aren't strong enough in the broth. The flavor felt lighter and weaker than normal pho. The meat cuts are different but they're good. Lots to be improved on this if it can be as good as the other noodle soups I had here. Five-spice braised wheat gluten $7 (7.5/10): This appetizer has a sweet and savory taste to it. It contains kao fu, wood ear mushrooms, and boiled peanuts. This would complement better with a dry dish than with the soups in my opinion. It was refreshing to eatOverall, I definitely would recommend others to give this place a chance. It looks to be new and anyone can simply pass by this in dtsj. This restaurant is so charming in its own way and would come back again just because the vibes were good and so was the food.

This is one of the new kids in downtown SJ so we wanted to go check them out. I'm a huge noodle soup girl so I was excited to see a new noodle spot open up downtown. The woman working was so excited to see us walk in and was so sweet and welcoming. We were sadly the only ones there. We ordered and paid for our food through the self service station. When your food is ready it's brought to your table. We ordered 2 noodle soup dishes: the spiced Laksa and the savory Beijing beef noodle, chicken wings and the golden cheese wontons. We sat at the bar top at the front of the restaurant facing Santa Clara St. It was perfect! The food was delicious! The woman serving us was very nice. I'm so glad that we have a good noodle spot downtown now!

Was finally able to try this little noodle spot out and was pleasantly surprised. Nice ambiance with even better soup. The broth for the spiced laska soup was delicious. Noodles were the right texture and the shrimp and mussels were perfectly cooked. My co worker had the vegetable noodle soup and she too was raving about it. I look forward to going back and trying the other options

Nice little place with noodles and dish options. It's near the SJ city hall and has an artistic interior. The owner and staff were really interactive and friendly. The lady told me they just opened on the 2nd and there are 3 $6 coupons if you order through their app. There are also self-kiosks and a self-serving area for tissues and utensils. I asked for spicy recommendations which led me to order the beef noodles. There are many seats and you can sit anywhere after ordering. The order came pretty fast and they gave me some free sides(spring rolls and cheese wontons) while I was eating. Those were crispy and good. The beef noodles were mildly spicy and had a nice umami flavor that was light but flavorful. The beef was really tender and there's also bok choy in it. I'll probably go back and try the other items.

Yay!! New restaurant in downtown SJ! Great little place with very friendly and welcoming staff. Has a quirky vibe but it's very clean and well organized. I went with coworkers for a quick lunch. The owner and staff were excited to see us and helped us with ordering from the menu. They gave us free drinks while we waited, which was very nice. The drinks were tasty and refreshing. Our food came out pretty quickly. We ordered the cucumber salad, tofu and mushroom, Pho, and popcorn chicken. We all enjoyed the flavor, freshness and presentation. I loved how delicious the Tofu and Mushroom dish was and it was served in a mason jar. We will definitely come back to try more! They have a promotion that gives you a $6 discount for 3 visits ($18 total).

This new hole-in-the-wall restaurant is an absolute gem for the culinary culture of downtown San Jose! After passing by a couple of times and noticing the intriguing design out front, I figured it was time to give CEO noodles a shot this rainy evening. My soul was craving some hearty soup and I was absolutely blown away as every single bite was one of those where you eat slower to savor and enjoy it as much as you possibly can. The broth's flavor was so rich and filled with love as if my grandma had made it and the beef cubes were to die for!I ordered my meal through Doordash and I appreciated the restaurant's timeliness as my food was ready exactly when the app said to arrive. Additionally, the owners went above and beyond to package the soup's broth in custom mason jars which was a precious touch of care that shows the love for their craft. I felt like the CEO of my meal tonight and if you're craving a "home-cooked" style meal, I'd highly recommend their Beef Noodles! Definitely will bring my family and friends to enjoy more of this delicious food very soon!

They were kind enough to separate the tofu bc of an allergy, the Laksa Noodles are very creamy and filling and the Bejing Beef Noodles were light and the noodles soak a lot of flavor from the soup. The portions are bigger than I expected for the price and very affordable (I could barely finish my bowl). The owner is very kind and accommodating, she alway made sure we were ok and very polite. The inside is very aesthetically pleasing and they have a cute window seat to chill and snack as well.
