Wrap and Roll Shrimp Paste on Sugarcane
4 pieces. This is not sausage or springrolls. We call it Chao Tom in Vietnam, meaning Shrimp Paste on Sugarcane. You remove the shrimp from the skewer and wrap it in lettuce, rice vermicelli sheets, and dip it in fish sauce. The best part is that after the shrimp paste is eaten, you can chew on the sugar cane for its juicy. Extras are available for an additional charge.

Crispy Pork Belly with Rice Vermicelli Sheets
To eat, take a lettuce leaf, layer on a piece of rice vermicelli sheets, a piece of pork belly, a cucumber, and a few leaves picked from the fresh herbs. Roll and wrap it up as tightly as you can. Dip it into the nuoc cham and take a bite. Enjoy!
