I can't pass up a new ramen and sushi restaurant when I see one... so the four of us picked up takeout one Saturday. As we walked in, the host kindly guided us to one of the self-ordering kiosks. The screen was easy to navigate with clear pictures of all the items. We waited for 15 minutes before our food was ready, which wasn't bad at all, since we ordered three bowls of ramen and a few different sushi items. With multiple waiters, a couple sushi chefs and several employees in the kitchen, the restaurant appeared to be well-staffed and they had a good system going. + NOBURU BLACK RAMEN ($16): The to-go container came packed with the bowl of soup and a tray of noodles and toppings above it. For the price, the serving was very reasonable, including a large portion of noodles, half an egg, mushrooms, corn, bamboo shoots, bean sprouts and two slices of pork chashu. Although a little dry, the chashu slices were pretty meaty compared to what you receive at other ramen places these days. The egg was perfectly jammy and the noodles were nice and firm. Unfortunately, there wasn't anywhere to request low sodium broth. When drinking it alone, it was on the saltier side. Despite the visible layer of black garlic oil on top, the garlic flavor itself was quite subtle.+ VOLCANO ROLL ($17): Spicy seared salmon, crab mix, avocado, cucumber & unagi sauce. The salmon was nicely seared, although the roll was overly saucy, in my opinion. With the crab salad and avocado both having a creamy texture, I was glad the crunchy cucumber livened it up. + DOUBLE SHRIMP ROLL ($20): Shrimp tempura with cucumber, avocado and seared shrimp with green onion on top. Since the shrimp is fully cooked, the sear didn't really add much overall other than just a little smokiness. This was like a typical shrimp tempura roll, taken up a notch. + CATERPILLAR ROLL ($18): Unagi, avocado, cucumber, tobiko, sesame seeds and unagi sauce. This roll was okay. The eel consisted of more skin than meat, which is a peeve of mine. In general, I feel like it's tough to find a place that serves meaty unagi in sushi rolls, so this was on par with other restaurants. The sizes of the rolls were reasonable with an ideal rice-to-filling ratio. For those who don't eat raw fish, Noburu offers several rolls with all cooked ingredients. This is a nice addition to Redmond and I look forward to tasting more off their menu in the future!

Cheers to another ramen spot in Redmond YAY! We tried these dishes: takoyaki, noburu red ramen, and tonkotsu ramen. All the dishes we tried were so well seasoned & comforting in this cold weather!I love how the restaurant is so spacious and has great seating varieties for either a dinner date or group gathering! The service is also quite fast :)

Great variety in the menu - ramen, rice bowls, sushi, sashimi.Brussel sprouts ($9) - an entire mount of crispy fried tasty brussel sproutsSeattle Roll ($10) - salmon and avocado, so good!Spider ($20) - a hefty roll with giant pieces of fried soft shell crab hanging out the sides.Fish was of okay quality, neatly made. I didn't try the ramen but it looked great.I loved the efficient order-on-phone process. Clean, brightly lit spot with Japanese decor.

TLDR: Good broth, meh everything else.Saturday 1/6/24 ~1:00pm, $17.62 after tip~~~~~~~~~ Creamy Chicken Ramen ~~~~~~~~~Final Score: 4.58/10(3.5/10) Noodles: Below average quality noodles. Thin, overcooked, grocery-store tier. Not up to par for a restaurant with "Ramen" in the name. The noodles had a neutral flavor (not immediately bad), but lost any bite/chewiness they might have had since they were overcooked. There are many ramen-specific noodle vendors that many of the other shops use - an easy place for improvement.(6.7/10) Broth: Thick, creamy, savory chicken broth. The highlight of the bowl. There was a very specific chicken-flavor, more so than other "chicken" flavored ramens. Well seasoned with just the right amount of richness - without being too oily. They (or the vendor) definitely spend the time to boil the chicken meat/bones to get all that poultry flavor. Good.(5.8/10) Egg: A slight-above-average ajitama costs an additional $2.00. It's always tough when the egg isn't included, it's almost an additional ~15% of the base price to get a fundamentally "ramen" topping. The sweet-soy marinade flavor was standard, though, it could have been much stronger. THe soft-boil execution was average, some yolk curdling along the bottom edges but not offensively overcooked. Fine. Tough ask for +$2.00.(1.8/10) Meat: SAD chicken meat. Potentially the most plain, bland, and boring "main" meat topping I've had on a bowl of ramen. Usually, the "chicken" ramen bowls use the same marinade/cooking strategy as the pork-chashu, just substituting in chicken. This bowl comes with 3 thick pieces (huge volume-wise) of unseasoned, plain-baked, chicken breast. Any seasoning comes from touching the salty broth. If you took a frozen chicken breast, put it in the oven, didn't season it, then served it, you'd get this chicken chashu.(4.1/0) Misc Toppings: Standard topping choices with some filler. Bean sprouts, bamboo, corn, green onion, minced meat. The minced meat was actually the best topping in the bowl; sweet and salty ground-up asian-style meat. Much better than the chicken chashu. The combination of sweet corn, bamboo, and marinated meat threw off the balance of the bowl - too sweet vs. the savory broth. Nothing offensive. (4.8/10) Other: A weird bowl. The fundamental base-chicken broth was very promising, but the rest of the bowl fell apart. The overcooked/poor-quality noodles severely limit the ceiling of the bowl. Everything else was forgettable.*Weighted Scoring Formula: Noodles (25%), Broth (25%), Egg (15%), Meat (15%), Misc Top. (10%), Other (10%)Parking: Shared Redmond strip mall parking. Easy.Service: Fast, efficient, good for a large party. Food came out fast.

Ambiance- 4/5. Inside looks clean and modern.Service - 4/5. The server was really soft spoken and gentle.Food - 3.5/5. It's not bad! Wish the ramen noodles were house made though since the broth tastes pretty good! I would still cone back here and try other things because who wouldn't want to eat ramen and sushi together?

Great ramen spot with amazing broth! We ordered three different ramens (tonkotsu, black garlic, and red) and all raved about the deep but not overly salty broth and the generous toppings and noodles. I thought the black garlic was a bit too rich for my liking and will order a spicy ramen for my next visit. We also ordered takoyaki which was tasty. The restaurant is has both table/booth seating and bar seating. You can order via your phone through a table-specific QR code or with your waiter through a physical menu. Bathrooms are available and there is plenty of parking at the plaza the restaurant is in.

The restaurant is located in Bella Bottega plaza and has a lot of parking, which is a bonus. The restaurant is big, clean and bright, good for a casual and quick meal. It is suitable for big groups. The decoration is nice and minimal. It is not too loud even with lots of tables filled which is great for having a conversation with your friends. My friend and I arrived at 6:30pm on a weekday and were seated immediately. There's a QR code on each table that you can view the menu and order from. The menu is huge with lots of options for ramen, sushi, rolls, appetizers and desserts. They also have a huge drink selections. We took a while to order because the menu was very big. The staff did not check up on us, which was great for me because I prefer to take my time and decide, but others might find this inconvenient to get attention from a staff member if you have any question. I ordered the Noburu Red ramen. The food came very fast, within 10-15 minutes of ordering. They are generous with the topping, the broth tastes yummy and not too salty. The meat slices were big, thin, I noticed they are not seared like some other ramen restaurants. The broth has the right amount of spiciness and is enjoyable. There are a lot of noodles. Overall it's a good bowl of ramen with good value for the price.After we finish, the staff was nice and was quick to check us out. I'll come back in the future to checkout more items on the menu.

Another random finding from our food adventure. The ramen was really comforting and the broth was flavorful! The roll was just ok for us - did not meet the standards. Customer service was good and the location was nice as well!!

A favorite curry katsudon spot wasn't open yet, so I checked the Yelp app and found Noburu Ramen and Sushi was available on 10/12/23. I luckily showed up right around 430pm and was seated immediately. Pretty much it started to fill up by the time within the next 30-45 minutes I was onsite. I experienced pretty much a hands off dining experience. After I was handed water, I was able to order off the QR code menu. Shortly after, my entire order was brought over to my table. It was a bit of a splurge ordering the following: hamachi roll ($9), CA roll ($9), and some nigiri - salmon belly ($8.50), kampachi ($8), and hotate ($10). With tax and tip, my dinner bill was well over $50!Everything was fresh and on point. I was able to relax and enjoy my meal before heading home after a workday.

I was thoroughly impressed by the meticulous attention to detail in the restaurant's design. Despite the bustling atmosphere, there was a peaceful quality as diners seemed more engrossed in savoring their meals than engaging in loud conversations--an aspect I greatly appreciated.Upon arrival, we were promptly seated, and the service throughout was nothing short of impeccable. The staff was not only friendly but also exceptionally attentive.Now, onto the cuisine:- The seared salmon nigiri was a flawless 10/10.- The spicy creamy chicken ramen, bursting with flavor, easily earned its 10/10.- Spicy California rolls were delightful, scoring a 9/10.- The stuffed jalapeños, delicious and perfectly spicy, also received a 9/10.- The edamame was fresh and tasty, deserving its 10/10.- The ginger root tea, soothing and aromatic, completed the meal with another perfect score.Overall, it's rare to find a place where the experience matches the outstanding quality of the food. I highly recommend visiting this gem!
