You can't think Jacob's without Bailey's or Bailey's without Jacob's. And having them right next door to each other adds to that. To say Bailey's is "a poser" to the "real thing" that is Jacob's is unfair. Both stand on their own and are far superior to about anything you can get in New Orleans. The difference between Jacob's and Bailey's andouille is TIME. Jacob's smokes theirs for several more hours than Bailey's. To me, this makes Jacob's a bit over-powering. When I make gumbo with it, it's all I taste, and that is not the goal. So to counter that, I'd have to use less. But if I use less, I get less MEAT. So I prefer Bailey's andouille: less smoke flavor and more meat flavor. They also sell ham hocks, head cheese, crabmeat, tasso, green onion pork sausage, cracklings, file powder, and a ton of other cajun staples.Do what I did: Load up on both and do a taste test. I bet like me, you'll find you like some things from both. Plus, they have the Sausage Man sign to make you smile.

If Bailey's wasn't basically next door to Jacob's Andouille then it would probably be 5 stars. In my opinion, nothing that they have is as good as Jacob's, but it's different enough that I can respect that some people prefer it. The andouille is not as dry as Jacob's and has more easily detectable spices in it and much less smoke taste. Don't get me wrong, if you've never had Jacob's and you had some Bailey's you would probably think it was amazing. It always seems a little dirty in there, which I don't really count against them since I sort of expect that out of a mom and pop place in LaPlace.

My boyfriends family always has such good hog head cheese and they told me it was from here. I finally influenced my mom to go and get some, surprisingly it was really cheap which we were not expecting.(Ranged from 2.00-6.00 depending on what size you got). We got the hot hog head cheese and there's a lot in it and it lasted us a very long time. The service is so kind and so sweet, and they really helped out a lot. I've heard the gumbo box comes with a recipe attached to it, and it is delicious. I will be back to try it!!!

We live in Gonzales, La. can't find good sausage here as I travel to Bailey's to get sausage, tasso, andouille, hog head cheese. Have been doing this for at lease 30 years, can't get any better..... Keep up the good work EJ.

Bah.Everyone knows Jacob's has the real thing. Bailey's is just a poser. Not only is their sausage not as good, but they also fail at pork tasso. Do yourself a favor and take a short walk over to Jacob's

Great service, friendly helpful people. Shrink wrapped the boudin, Tasso and Andouille so all would make it home on ice. Great flavors, perfect for Red Beans, gumbo.
