This a new French pastry pop-up in The Pastry Project! Chef Niko is traditionally trained from Seattle Culinary and Le Cordon Bleu. Currently they are offering a 4 piece kouign amann box: classic, passionfruit, matcha, and coffee hazelnut.After some googling I learned that kouign amann are flaky, rich and decadent pastries. The ones here are absolutely exquisite, with a crunchy caramelized crust, and filled with flavor with SO MANY buttery laminated layers. WORTH the price per box! Preorders are available online but sell out quickly! They also have a small amount of boxes available for sale on site. So far they've had 2 pop-up events and sold out both days! So far it is pickup-only at the pop up locations.I got my box and they taste as good as they look!They have upcoming pop ups in Gig Harbor and more dates at The Pastry Project.I heard the next flavor is raspberry rose for spring. Mmmmmm

We just tried the box of four kouign amanns. This is perfection. We had classic, yuzu-guava, passion fruit, and matcha, and I can't pick a favorite because they're all just wonderful and different. Thank you!

Hands down the best kouign amann I've ever had!!I can be quite picky when it comes to pastries after tasting the best of the best from my travels to Paris and Lyon in France. But my palate was in for a very pleasant surprise when I tried these kouign amann made by Chef Niko. Everything - from the crisp exterior, the buttery flaky layers, down to each flavor - was perfection!!! I've had the original flavor, passion fruit, matcha, yuzu guava, sesame azuki, coffee hazelnut and love them all!! Their pop up set up is very cute with super friendly service! Can't wait for more to share with my friends and family!

One of my all time favorite pastries is the Kouign Amann. I sample it whenever I see one. I saw the pop ups for Moderne Bakery on IG and was instantly curious!Since I was having firewall issues at work, the hubby was able to sign up for the 4/7/24 pop up at Pastry Project. We arrived promptly at 1 pm for pick up. As suggested, we stopped for a Vietnamese iced coffee in preparation of our Kouign Amann sampling at home. The box included one classic, one passion fruit and two raspberry rose. The Kouign Amann's had good lamination, flavor and a nice, sweet crunch on the exterior. I'm generally accustomed to the classic Kouign Amann and was happy to try it with the fruit flavors.I would order these again and share with the special people in my life.
