This is a review for the butcher side of the business. After an unsatisfactory past experience we weren't going to use them again. However, a local farmer had a beef cow die and we decided to buy half. Due to other butchers being full he had to use Knaus. I gave them explicit directions as we don't like fatty or gristle ridden meat. I told them when in doubt to grind the meat, no gristle/chunks of fat. They left tons of gristle on the steaks (not just marbling) and the stew meat needs exhaustive trimming to be edible. I cut 5 oz. off of the 16 oz. stew meat cuts. We're talking you'd be unable to chew your bite! It appears that they just want the weight to be up there so you pay more. It's no wonder they were able to take the animal where the others couldn't. I will NEVER step foot in their establishment again.

Bought a large ham for Christmas dinner. Very accomodating. Allowed me to pay for it over the phone so someone else could pick it up. Gave good advice on cooking it. Very friendly despite the Christmas rush.

The Knaus Sausage House is a staple in Kimball, and for those passing through. Like most butcher shops, you'll find fresh steaks and other meats here, as well as their own specialty bratwurst, jerky, snack sticks, and a whole lot more. You'll love the smoked aroma of the place as you walk in the door. Outside, in shopping carts, you can often find low-priced bones and other treats for your dog.My disappointment here is that almost all of their own meat products contain sodium nitrites. If you're trying to avoid these, it's hard to find items that don't contain them unless you're buying fresh meat.

This place is fantastic!Awesome beef sticks, brats and brisket. Our dog loved his bone too! The team working inside is as friendly as can be. Growing up in a small town myself I love the ambience and community feel of the place. Great selection and great products. Period!

We raised our own pigs this year. We were very careful how we FED and cared for our animals. The first ingredient was love, followed by great feed from Luxemberg Feed Mill, pails of apples and plumbs, grazing in fresh grass, veggie left-overs, bananas... all good food. We were concerned about getting OUR meat back. Knaus did a GREAT- FANTASTIC job processing our pork. We are certain by the quality of the meat we got our animal. The customer service was amazing! The quality of the product was fantastic. The price was very, very, very good. We were able to get amazing, reasonable, healthy dog treats so that was a great bonus. We are so pleased with Knaus and their staff!!!

This was one of those places you walk into and the hospitality is so awesome. We were driving through Kimball, thought we'd stop. No they don't have a selection that rivals the larger butcher shops, but when we were interested in ribeyes and they were out, the butcher enthusiastically cut two beautiful steaks for us! Their horseradish pickles are WONDERFUL and our dog loved his little bone from the shopping cart of bones. When we cooked the ribeyes, they were absolutely fantastic! What a gem!
