I'm not a big fan of sushi but a friend wanted to meet up here for lunch. Really glad he made the suggestion because this was a fantastic experience and value. The space is bright and open with tons of tables and bar seats. The staff were welcoming, friendly, and attentive; happy to answer any questions and accommodate requests. For $27 AYCE lunch, this really is hard to beat.The quality/price ratio is through the roof. Even ignoring the great service the food tasted fresh and love ordering ad-hoc so that everything is fresh and waste reduced. Favorites were the Pepper Salmon, Hibachi salmon, and Kani Salad but all the dishes tried were great. You can ask to omit the noodles/rice for the hibachi and teriyaki if you don't want them. The miso soup and salads were great, light palette cleansers and recommend them. The Agadashi Tofu was light and crispy but slightly under-seasoned, IMO. Would still get it again. Finished with the Red Bean Ice Cream, which was good, but don't think it's worth the stomach space.Already planning a return trip and would love to check out the dinner menu. Even though it's $45 there are a ton more high-value items.

This place is so good!We went for lunch, but ended up with the dinner menu from holiday pricing. The first thing I'll say is it's not like your standard all you can eat sushi places. They have many unique items that you don't see at other places.- Takoyaki, amazing, probably the best I've had in MN- Oysters, fried and regular, we enjoyed- Salmon Calcapci and Beef Tayaki, probably misspelled these, but they were fantastic and different. Presentation of the food is beautiful. The sashimi came out with a little bit of fried ice for show. It was quite stunning. I almost forgot the desserts! Most places have the standard matcha, red bean, vanilla ice creams. This place has that plus Matcha Snow, mochi ice cream, creme brulee AND a rotating dessert. This time it was a grey earl mouse. We tried them all. The creme brulee was my favorite, but I'm a little biased towards it. Service was super fast and very friendly. We ordered and had dishes coming out in minutes. Waters were never empty either. The spacing is brighter than other places, but it's also a little cramped on the aisles. The seating was fine, I just felt bad for the wait staff, bringing food out while dancing around the patrons. It's likely due to how busy it was. Overall, definitely one of, if not the best AYCE places I've been.

Good sushi, great service, nice décor - 4 stars!CUSTOMER SERVICE: The first thing I noticed at Ichiban was the excellent customer service. I sat at the sushi bar and everyone was wonderful, from the hostess to my server to the sushi dudes. Nice!DECOR: I really like the décor at Ichiban. It's bright, modern, and clean looking. Of course, there are Japanese themed accents throughout. My favorites were the hanging UFO style dining room lighting. They really remind me that 50s Atomic style design but with a modern twist. This place is fancier than most sushi joints. For example, I noticed you don't get bamboo chip sticks here, you get stylish stainless steel chop sticks with ergonomic black plastic tops. Cool!FOOD: Everything at Ichiban is all-you-can-eat. My food was good. I stuck with my usual tuna based sushi rolls. I ordered 3 of them. They were beautiful, colorful, and bursting with fresh flavors. Come here hungry because everything is all you can eat. It ended up being kinda pricey for me because I paid full price but I only ordered 3 hand rolls. But I'm guessing that most people will eat way more than I ate, and therefore, they'll get more value for the money than I did.LOW CARBOHYDRATE: It's easy to eat low-carb, keto, carnivore style at Ichiban. I stuck with my usual tuna based sushi rolls with a moderate amount of starchy rice and plant material. I avoid big mountains of rice, puddles of noodles, and anything that might be hiding added sugar or factory seed oils. So I returned the second time so I could snap photos of the delicious food I ordered! Service was great as usual and though I wasn't able to order and eat as much as I did the last time when I was with friends, I made sure to eat more than or at least breakeven with the all-you-can-eat price of $44.95++ (compared with ordering a-la-carte elsewhere) so I am proud of that achievement :) Some great value dishes and "order of attack strategy" to consider if you'd like to make your bang for buck worth every penny and quickly breakeven when you compare with ordering at restaurants with a-la-carte menu prices include: sashimi and nigiri, appetizers such as chawanmushi, takoyaki, soft shell crab, agedashi tofu, followed by salad and soups then entrée dishes that are served with carbs . Great option for AYCE sushi and Japanese food. Service was great and the place is clean.We ordered :-Seaweed salad: good size for one person and could share up to 2 person in my opinion -Shrimp shiumai: my least favorite in our order. They were really small with. -Unagi (eel) and avocado handroll: if you like unagi/eel, I would definitely recommend this one. The avocado makes it creamy and rich, great pairing with unagi/eel-white dragon roll: my favorite among all roll we ordered -hot night roll: this one is massive and my second favorite. It has shrimp tempura on it and fulfilling -Edina roll: this one is also my second favorite -spicy girl: this one was massive as well and the topping filled me fast (the tempura crunch kind)

All you can eat sushi located in Edina! I got the dinner option which was around $45 per person but if you would like to try out lunch it's half the price! I feel like I can be picky on sushi so this wasn't my favorite place but I would like to give it a try again...Weekdays are prime time to visit since there's less people and the wait time is not as long. You can also make reservations in advance to secure a spot! Honestly the sushi rolls may not be my taste, but the sashimi and nigiri offer a good selection. The fried oyster and soft shell crab were good! They also have a good selection on dessert so be sure to try those out. The menu had a wide variety, I just get full off sushi quickly so I did not get to try as much out.Overall, the service was quick and the staff was friendly. I'll consider returning for lunch as the price is much better.

Finally got a chance to check out this place on a weekday for their lunch menu. Lunch is $25 per person. For a weekday lunch time, the place was packed with people. We were surprised. We were glad we were seated right away because we came around 1pm and they close at 2:30.There are a lot of menu items compared to places I've been to. You definitely have a lot of options. Most menu items are the typical you would find at other places as well like fried appetizers, rolls, nigiri, teriyaki and rice bowls. Unlike other places they have a hibachi menu that comes with protein, veggies and fried rice. You can order the protein only since rice and veggies can be filling as can seen in one of the photos. Honest to say, the steak was good and tender (Better than steak teriyaki) but don't recommend to get the veggies and fried rice. The ramen: not recommended either. The broth was not rich. Surprising they have this a salmon thin slice with sauce under appetizers and ahi tuna. It's kind of like sashimi-ish so you can get those fixed Overall. It has a nice atmosphere and a lot of options for everything. Some dishes were def good but some were just mediocre. To me, someFried appetizers are better at other ayce places but that's a personal taste. Worth a try for lunch to check it out. I believe dinner is $45 with more dishes but seems steep. The lunch price is a little more than other ayce lunch places ~20 compared to $25.

Great all you can eat sushi place! There is ample amount of parking in the parking lot. Can make reservations a head of time. Service is great, servers are friendly and are helpful. Food comes out quick. Love the variety of things that you can order from rolls, soups, salads, noodles, cold/hot appetizers, desserts. Also like the overall ambiance of the place.

Came here on a Saturday night--luckily it was just the two of us so we were given the choice of bar seating which worked out very nicely. Of the many times I've already been here, I had no idea they offered complimentary hot sake if you sit at the bar! It was absolutely delicious. This place has the best AYCE option so far. I'm a sashimi girly so coming here for dinner is perfect for me. Also, our server Justin was awesome!!

On Tuesdays they have fresh raw oyster and it's one order per person. Each order has 3 raw oysters, I would highly recommend you ordering if you're going there on Tuesday! Server didn't say how long that will last though. Service was good the food came out pretty quickly and they checked up often. I like the variety of menu but the stir fry seafood udon I tried had a ton of sauce making it super sweet. The sashimi is thicker sliced but poor quality, not as good as other AYCE places I've tried in MN. I liked how they have a variety of desserts to order. The tables were the worse, I felt very crammed and too close to the party next to us. They literally had a very long table, but split in the middle to separate the parties. We were literally separated by a chair or two so it was kind of awkward. Unfortunately I would not be back.
