I met Jeff, the owner of Zymbiotics, at a friend's birthday party. He told me about his company, and I was intrigued, so I decided to go to the Winter Farmers Market to sample his products.Zymbiotics produces naturally fermented foods that are beneficial to the digestive system. All products use natural ingredients with no artificial colors or artificial flavors.Currently, the three products being produced are Ginger Zarrots (carrots), Zauerkraut (sauerkraut), and Zimchi (Kimchi), which is the most popular product. I sampled all three.The Ginger Zarrots are cut julienne style and are crunchy enough to add texture for a salad but not too crunchy. I love the flavor that the ginger brings without over powering.The Zauerkraut is red in color and has a crunchy texture, as opposed to the mushy texture that sauerkraut generally has. It's made with 50% green cabbage and 50% red cabbage, but the red cabbage won the battle of color. Zymbiotics does not add artificial colors to its products.The Zimchi was also good. Again, not as potent in flavor as Kimchi, but the flavors of kimchi are certainly there. The owner's girlfriend is a nutitionist, and they both love to cook. He was looking for a career change and she explained how fermented foods are a very popular trend in the food industry, so they worked together to experiment with recipes and came up with the current products. Aside frm the Winter Farmers Park at the Mitchell Park Domes in Milwaukee, I'm told their products can also be found at the Woodman's in Waukesha, Metcalfe's in Wauwatosa, Outpost and Health Hut.Their website http://www.zymbioticsllc.com provides more information about the health benefits of fermented foods, where to purchase their products, and recipes to try using their products, although I'm told salads, soups, sandwiches, and fish or rice dishes are some of the popular uses.I like the products I tried, especially the Ginger Zarrots and the Zimchi, and I plan to use the jar of Zimchi I have at home for sandwiches and do a little experimenting with recipes of my own.I'll post photos as soon as Yelp posts this new business listing I created for them. I definitely recommend that you give Zymbiotics fermented foods a try!
