I had the luxury of tasting three of their cheeses through an event, and I am a fangirl right now. With a bit of thought, there are so many pairings one can pull off with their expertly crafted cheeses, creating excellent presentations in the process. I cannot wait to try more from this excellent Wisconsin brand of cheese.

A cheesemaker in Wisconsin with an Italian name making interesting American/Italian influenced cheeses? Yes, that is Sartori. Tried the Run Runner with has a trace of rum on the palette but the texture and slight pungency of a pecorino Romano. I've already gone through half a wedge over the last two days and dont feel bad about it one bit. Great flavor and mouth feel. Ill definitely seek them out in future formatge runs from here on out.

Tried some of their cheese and one batch was good, the next no good at all. Cannot make consistent quality product. Not good product quality control.
