It's like a chipotle or subway, where you go down the table picking your ingredients as they put together one of the 3 (or 4) vietnamese dishes: spring rolls (like a burrito with rice tortilla and vietnamese flavor inside, noodle bowl (everything in a spring roll but in a bowl without the rice wrap, salad (basically a noodle bowl with greens instead of noodles), or a vietnamese sandwich. So pick the format! a spring roll, noodle bowl, or salad. Then you pick your protein - I realized from looking at my menu picture now that the beef and shrimp will cost an extra $4 per bowl each. Each protein is cooked full of flavor. Then remember that you choose 4 veggies, and then toppings - they are 2 different things. I kept asking for "the everything" as it says on the menu and the server kept trying to tell me I had to pick 4 veggies... lol. They have a huge plastic (or glass?) separator between you and the server so it's hard to hear them unless they speak up. Sauces:The Nouc Cham is like a vinaigrette that usually goes with the vermicelli salad dishes at normal vietnamese places, and the peanut sauce is what you usually get with spring rolls. Avo Queen is a bit different, but creamy and delicious and Guava Vin was too sweet for my taste, but an awesome salad dressing for those who like it a bit more sweet. The black tea with guava flavor and tapioca pearls were quite delicious. I usually don't like the flavored teas - I really prefer the milk tea with pearls instead. But what they serve at Rollup is the fruity teas. However, you can walk over to the Mochinut on the other side and they have the milk teas. The Mochinut in Bayshore is also same owner.

I really like the concept of this place. We don't have a ton of Vietnamese offerings in the Milwaukee area, so it's great to get some added! Spring rolls are one of my favorite dishes, so I was thrilled to try this place. Overall, the food was great. You really only have three options to choose from: small rolls, big rolls, or a bowl. But you get to customize it with your choice of meat and toppings. They also had a ton of sauces to choose from. What really made it was the super friendly and nice staff. They also have Mochinut connected to this place if you want a sweet treat after. My one comment would be that it was slightly overpriced, but other than that, it was a great experience.

Love it! Got the big mama roll with lemongrass pork and was very satisfied after. Definitely want to come back and try their other proteins and drinks! Inside a neat and clean. It's also connected to Mochinut for dessert after! Service was nice and quick.

I loved Rollup! It is great twist on fast casual restaurants. I had the big mama spring roll which was fantastic! I recommend grabbing the hibiscuses drink to wash down your meal. The service was friendly and they helped me choose sauces that paired well with my spring roll.

I was really impressed with our experience at Rollup, especially with it being a new business! We ordered online for pickup and the online system was really easy and our order was ready in 20 minutes. I got the Big Momma Roll with chicken, which was delicious and the perfect size. It was nice to get takeout but still feel like it was healthy! We will 100% be back, though I just have a couple suggestions based on our experience! Online, there was an option for extra sauce, but we couldn't figure out how to bypass it, so we all paid 60 cents for an extra sauce. Which is fine, but they only fill up the sauce containers halfway, so really it was two half sauces, and I think one full sauce container would've easily done the trick. We also did carryout, which was quick and smooth. You do have to wait in line at the counter to pick up your food, but my fiance suggested a pick up shelf might be helpful to keep the line moving more quickly. Overall, still 5 stars and the food was delicious! Great addition to KK!

What a great addition to the area! I love seeing all of these new Asian restaurants popping up. We came on opening day and needless to say, this place will be a place I will be frequenting when I'm too lazy to do my own spring rolls at home. The setup of this place is similar to a chipotle or any of those fast casual build-your-owns. Their menu consists of springs rolls (3 or one burrito-sized), noodle bowl, or salad. You pick a protein, veggies (cucumbers, herbs, etc), toppings (fried shallots, peppers, etc), and then dipping sauce. They offer so many different options for each category that you'll surely find a combination that suits your palate. I did 3-spring rolls with choice of nem (made with chicken) and steak. I loaded up on veggies and picked nuoc cham (fish sauce), Vietnamese chimichurri, and avocado queen for my sauces. The Vietnamese chimichurri sauce with my steak spring roll was top notch and I'd definitely recommend that combo for anyone wanting to try something more elevated than your typical fish sauce.I really enjoyed this place. For a food that is simple to some, it really hit the spot for someone who wants a bit more than a shrimp and pork belly spring roll. Definitely check this place out for a healthy and quick meal!

This place is Awesome!! So nice to have a healthier option in town for lunch/dinner. This is basically a "Chipotle" for Spring Rolls! I tried the shrimp, pork, and chicken, I would recommend ALL. The chicken had a hint of sweetness but not overpowering and the pork had a wonderful char grilled taste. I tried the Avo Queen and Peanut sauces and both were to die for. My partner tried the chimichurri sauce with his beef rolls and it was also a perfect match. Very clean and modern atmosphere, tables to sit at and enjoy your food. We will definitely be returning customers as this is a great healthier option for fast casual!

Whoa! Spring rolls my way! I needed all the help and the young man assembling my roll had the utmost patience/ I appreciated him and his suggestions. My sister and I each had the big momma rolls made our way. Mine: nem viet sausage, noodles, peanuts. my sister got garlic shrimp, greens and noodles the hidden gems: ARE THE DIPPING SAUCES (the avo is a spicy little number, the viet chimichurri i could put this ish on EVERYTHING the guava vin, is a shy sweet sister of sweet chili sauce - I treated sister to a raspberry hibiscus tea and I got lychee hibiscus tea. We ate in and enjoyed watching the mochinut customers get their sugar fix on!

- Great food, Great service, Great ambiance- No reservation made or can be made- Tasty and Viet approved! I would come back for the food and the kind workersChúc mừng năm mớiiii. I know it's new, but I've been wanting to go for a few weeks now, and it did not disappoint! This fun build-your-own spring roll restaurant had tasty food and a nice clean interior. The large counter and glass made for a great view while our spring rolls were being made, and the overall look of everything - counter, drinks in the back, lighting - made it a fun place to be (I really liked the tables).I got the Big Momma Roll w/ Lemongrass Pork and Nước Chấm sauce. It was delicious and stuffed! I was able to add in lots of ingredients and toppings and it was all placed well and rolled up nicely so I could get a good look of everything I added. The pork was tasty, maybe could've been a little warmer, and the nước chấm was very flavorful - maybe the best I've had in Milwaukee. They have the perfect ratio for filling, and even though I added lots of ingredients, they didn't skimp on the meat! My rice paper kind of tore halfway through eating, but I did stuff mine... thankfully they had forks for me to eat any pieces that fell out.Pookie got the Spring Roll X3 w/ Nem Viet Sausage and Nước Chấm sauce. While she did not try and stuff hers as much as mine, I really enjoyed hers and all the flavors I was feeling. The nem was very good and I would love to get it next time... but I am thinking the same for all their other delicious sounding proteins! This was done with mine as well, but it was great to see the individual rolls being wrapped in parchment(?) so that they wouldn't stick to each other or the box, making it easy to pick up and eat!We were craving boba the whole day, so we both got refreshers as well. I got the Hibiscus Tea w/ Lychee flavoring and it definitely satisfied my drink cravings! Initially it may have been like 1% too sweet, but as the ice melted, it got to a perfect balance. Em yêu got a half and half between Lemonade and Black Tea w/ Tapioca. It was nice to taste the tartness of the lemonade that mellowed out with the ice melting, and the tapioca pearls were cooked nicely. Even more nice that they allowed her to choose 2 bases even though it isn't listed :~). I think it is very important to note that they use small pellet ice that I've never seen used with boba, but now I have a new standard and will be thinking of them every time I am disappointed to be served non-pellet ice at other boba spots.I really liked the different roll and entree options that they have available. They have a wide range of protein, toppings, and sauces, so I'm sure you can make it as traditional or as fusion as you'd like; something for everyone! Aside from everything being very good and tasty, the staff was very friendly and the service was great and very clean, wiping down the counter each time to keep it looking spiffy. I am definitely looking forward to coming back! My small comment is that it was kind of hard to hear the worker through the glass, maybe the music or other equipment making noise, but still a little difficult. Along with that, some proteins have a premium price that wasn't listed, and I was also charged a (very very small) extra veggie fee, but I was unaware of any limit while ordering. I know they advertise as healthy, but I think it is more important to come because it is sooo tasty and good, so you get the best of both... and if you don't care too much for the health, they also have a Mochinut connected to them :~))

Great new place. Service and ambiance is nice and the food is great. They have tofu for one of the proteins so it is a place to go with the vegetarian in your life:)
