Of all the times that I have eaten from a food truck I have only ever had one good meal and that was in Boulder, CO. I typically shy away from them as I have found the return on investment to be suboptimal. However, it was Friday, I just had my bike tuned-up at Freeride, and it was approaching lunch. With that, I decided to check these guys out. Thursday, Friday, and Saturday they post-up in the lot outside Freeride. With positive reviews from the guys at the bike shop I opted in for the pollo asado quesadilla. Priced at $6 I thought it was a good deal considering the amount of food and the few sides of salsa that I got. Once I opened the Styrofoam clamshell I was met with quite the sight: a large tortilla packed with all kinds of goodness. The chicken was orange so you know its been in the wonderful bitter orange marinade which I personally believe is the best flavor profile for poultry. I find that queso Oaxaca is the most authentic and provides the best flavor for quesadillas but whatever orange/white mixed cheese they used was solid. There was also grilled onions and a pico de gallo with jalapenos packed into the tortilla as well. This thing was good, like seriously good. They could have served it to me on the pavement and I would have eaten it. I am definitely going to be returning to this truck for some of the other menu items.

So not only is this some of the best AUTHENTIC Mexican food you will ever have, the owners are some of the BEST humans I have ever known. All fresh ingredients and absolutely delicious! A must try! Much love to Ivan and Pennie Montes.
