Another absolutely delicious pop up. My mother in law is visiting and couldn't wait to enjoy Bibi's tacos again. Of course we had the fantastic birria tacos, omg that consommé I can't say enough about. Full of flavor, I could dip anything into it. The taco shell has the perfect crunch to them and are filled with delicious cheese and perfectly cooked braised beef. The pupusa's are yummy and I love to drizzle them with that side of hot sauce. Add a watermelon agua fresca to the mix and you have the perfect meal.

I really enjoy grabbing a bite when Bibi's Kitchen does their pop-ups. Bridget Quijano is a local chef who cooks up traditional Salvadoran cuisine. She is available to hire for catering and for meal prepping. But you can also find her all over the Valley partnering with local businesses to serve up some of her delicious meals. She has years of experience working in kitchens and is passionate about sharing Salvadoran food to the Valley. Bibi's serves classics like Pupusas and Pollo Guiesado. I live next to The Sleepy Whale in Chandler where Bibi's Kitchen does a lot of their pop-ups. I love the pupusas here. A pupusa is a grilled handmade flatbread (made from masa dough) that is stuffed with ingredients like pork, beans, and cheese and topped with curtido (cabbage). The tacos here have a nice crispy shell and are awesome too. One thing I notice every time I stop by is that Bridget makes time to chat with her customers. She is very warm and friendly. I have no doubt Bibi's Latin Kitchen will one day have its own permanent location. So I found my NEW FAVORITE FOOD Salvadoran Quesadilla I could not imagine that they get any better than this. @bibis_latin_kitchen posted a pop-up and she was pumping out PUPUSA & Quesadillas like it was no one's business. So back to these quesadillas. They are made with rice flour, eggs, sugar, and a lot of cheese. Fluffy cheesy crispy spongy cake w/ a hint of sesame. These things are definitely worth checking out as soon as you can. Her Shrimp, Poblano, & Garlic also Bean, Cheese, & Loroco Pupusas we're so well seasoned and balanced. There was a thin very flavorful salsa and a seasoned vegetable Crudita that completed these and sent them over the top!!!! Again. Bibi is a down to earth Salvadoran chef. She has excellent customer service & goes above & beyond for her customers. I recommend the birria ramen & pupusas she definitely puts her own twist making it amazingly savory. For my lovers the salsita is on point! I had their food when they came to The Shop brewing co and set up a tent. They have so many options for omnivores, vegetarians, and even vegans. I got two pupusas which were everything I could have wished for and came with an amazing salsa and cortido, which is like a Central American sauerkraut but better. My date had the biria tacos which he said were tasty, filling, and rich.

This chick knows what up!!! Met her when she did a pop up at Bleacher's a long while back. Knife skills are exquisite. She's a total sweetheart and her salsa is on a whole 'nother level. You gotta eat what she's cooking! Legit Salvidaorian nom noms.
