Today copper kitchen was parked outside of Humana. We decided to give it a try for lunch and we were not disappointed. My friend and I decided to split two tacos, nachos, and the street corn. Thank goodness we did, because after the tacos we were STUFFED! We ordered the steak taco, a chicken taco, the nachos with queso and the Mexican street corn. I suggest adding a meat to the nachos and adding the corn the the tacos and nachos for additional flavor!! All of the items were prepared well and quickly! My favorite was probably the chicken taco (only because I eat like a toddler). I highly suggest you track this truck down!

Got some food from here at the Flea off Market and I was so impressed! I ordered the burrito bowl with the butter bathed mushrooms, Mexicana style and it was SO good. Everything was fresh and mixed together super well. Definitely going to seek out this food truck again!

One of the better food trucks in Louisville. Big fan of the burritos and the sides. A real mish mash of flavors, all wrapped in a tortilla. It's heaven.I got the Cajun burrito and it was fantastic. A real big, hearty meal that was also delicious.As well, the sides were outstanding. The grits were tangy, and the street corn was creamy with a zest. My only complaint about the corn is that I wish they could mix the seasoning in throughout the dish rather than on top of the dish.Here are my negative takes...A little expensive, as food trucks tend to be. I don't know why this is, but it is. And it's annoying.This truck doesn't give you any container to carry your food in. I got a bowl of corn with no lid and a burrito wrapped in foil. I had to carry both in my hands, no bag and no container. The burrito was very warm and I had to carry it up to my office, and the corn is just out in the open. A little weird. At least give a big or a styrofoam container.But I'll be back. Very delicious good. I'll bring my own bag next time.

A new food truck was found at the Flea this weekend! So we had to check it out!The menu immediately sparked our interest. Breakfast burritos and breakfast-y sides. Color me excited!I had already had brunch with a friend, but when my Fella ordered himself a burrito and some challa french toast sticks, he said he would need some help eating all the food he ordered. You don't have to ask me twice!The Challa French Toast Sticks are worth the $5, I think. They are light and warm and fresh and fluffy and just delicious! And the maple frosting that comes with them...*swoons*. I can't wait until I can visit them again. Until then, I will think fondly of those french toast sticks! If you see the truck around, you should check out the menu and give them a shot!

The food truck pulled up in our neighborhood this evening, so what a great way to support the local restaurant industry without having to leave the comfort of our neighborhood. I love Mexican food as well, so I was really looking forward to trying the copper kitchen. I don't like to leave bad reviews, so I'm gonna try to leave one with suggestions instead. I had the steak nachos. Understand, the nachos are not crispy tortilla chips. Rather, they are layers of corn tortillas in the bottom of the box. Not what I expected. I could have gotten past that, but the food was tasteless. The steak was shredded which should be described as shredded beef instead of steak. Again, not what I was expecting. Surprises are sometimes a good thing but not today. The beef was not bad, it tasted like roast beef. It did not have a Mexican flavor at all. Pico de Gallo generally adds That sip of flavor but this time I was tasting onions, tomatoes, jalapeños, but not pulled together as a pico. The serving was ginormous, I will say that. Just not that tasty. My husband had two tacos. He said the chicken tasted like chicken but without the glorious Mexican flavors one expects on a taco. The jalapeño ranch dressing tasted like neither ranch nor jalapeño. The street corn was pretty ok except again, Not the spice and the zip that I expected.My suggestion is that you use a little more flavor and spice in your cooking, especially authentic Mexican seasonings and spices, and your food truck will do fine.

Quick service, there were so many of us and they went through us really quickly! Didn't try the grits but heard they were delicious, I had the vegarito and do not recommend. Also the owner has great taste and I love the idea of making everything copper! We loved this food truck for a quick lunch break

I had seen Copper Kitchen around the city, so when we ran into them at The Flea Off Market I was so excited to try them out! I love breakfast! Like Ron Swanson, I believe it is the best meal anyone can eat. Plus, burritos are awesome! So, breakfast burritos basically can't be beat. I opted for the Cajun burrito, while B got The One with the Steak. I thought the burritos were good, but I'm afraid my expectations were too high. Maybe I would have enjoyed them more if I hadn't psyched myself up so much before trying them out? B's burrito was filled with scrambled eggs, steak, grilled onions, Colby Jack cheese, and black garlic aioli. My burrito was filled with scrambled eggs, Andouille sausage, grits, Pepperjack cheese, and Chipotle aioli, plus I opted to add a scoop of Mexican street corn. The issue was, that even with all of these ingredients, the burritos were really bland. Though my burrito was filled with spicy sausage, spicy cheese, and a chili aioli, it barely had any flavor. I think if I would have added some hot sauce it could have greatly improved the dish, but being at The Flea Off Market we were struggling with blaring sun, heat, limited seating, etc. So, we just opted to eat our burritos as they were and go on about our day. The only other issue besides lack of flavor was that both burritos were filled with liquid. Mine could have been due to the addition of the corn, but less than half-way through my burrito started falling apart and juice was running out all over my hands. It was a good think I had plenty of napkins!I would definitely give Copper Kitchen another shot. Like I said earlier in my review, I love breakfast! And I love breakfast burritos! The menu all sounds amazing, so next time I'll opt for a different burrito and see if I enjoy it more. And who knows, maybe I just caught them on an off day and I could try the Cajun again and love it. The next time I get a chance to try them out I'll update my review if my new experience warrants it.

Simply fantastic food truck tacos! The tacos were stuffed with chicken, grilled veggies and yummy pick. There was a nice smokiness to the chicken and the veggies were fresh. The corn tortillas were warm and held up well too! Will definitely be back!

Oh man, as far as food trucks go, this is a must. They serve up all sorts of burritos, and believe me when I tell you that their Maple Sausage one is the best burrito I've ever tasted. Not even close. It had a big portion of maple sausage, eggs and onion sticks on it. They've also got one with andouille sausage, and I believe there was one with steak. They offer challah french toast sticks or grits as sides. If this place was located close to me, I would be spending a ton of money there. If you see this food truck around the city, don't hesitate to try it.
