So happy to have a delicious, authentic Szechuan spot in KTown. Loved the boiled fish, beans and fried pork. Jelly dessert also lovely. Will definitely come back to try the rest of their menu!Worth noting that their default spice level is a little mid. Maybe they dumbed it down because I'm a white boy, but if you like spicy, worth asking for extra .

We got to experience soft opening of this authentic Chinese Food in Koreatown offers a delightful dining experience in a cozy setting. Christmas eve all the regular Sichuan restuarants book with over 1 hour waits, but tjis was the place to eat!A family-owned restaurant utilizes cherished family recipes, resulting in a small yet impressive menu where every dish shines. The seafood soup stands out with its rich flavors, devoid of typical seafood taste. Casual and intimate, it features only ten tables, enhancing the personal touch. Valet parking is available for $4, ensuring your vehicle is well cared for. Enjoy warm jasmine tea and unique Sichuan dishes that promise to tantalize your taste buds. A must-visit for authentic flavors! Currently for soft opening owners are also waiters, but otherwise fun Los Angeles dinning experience. We look forward to eat there again, or get take out.

The fish is flavorful. The beef is yummy. The cauliflower is so crunchy and tasty. The string bean has a good spice level to it. The mango sago is so pretty.

Amazing flavors and great vibe!I don't usually eat Xishuan cuisine, but this place was incredible! The pickled fish was excellent--perfectly balanced, The Mapo Tofu was also really good, with just the right amount of spice , the Hunan-style beef was amazing too. Very flavorful. The ambiance is warm and inviting, On top of that, the service was super friendly and welcoming.

We had Fish w/ Pickled Veg and Boiled Beef, both are both very authentic. The Fish w/ Pickled Veg specifically reminded me of Tai Er (a very famous specialty fish restaurant), really impressive. The Boiled Beef was a pretty good blend of spicy, numbing, and sauce taste. Perfect experience.

Amazing Sichuan Cuisine! The perfect balance of spice and flavor! Every dish was bold, aromatic, and delicious--especially the mapo tofu and fish. The mala (numbing and spicy) sensation was unforgettable. A must-try for spice lovers!

for its authentic flavors but also for its warm atmosphere and excellent service. The highlight of the meal was undoubtedly the fish dishes. The fish was incredibly fresh, perfectly cooked, and seasoned with a balance of traditional Chinese spices and aromatics. Whether it was steamed with ginger and scallions, braised in a rich, savory sauce, or served in a spicy Sichuan-style broth, each preparation showcased the chef's skill and respect for high-quality ingredients.

# Once More Chinese Cuisine: A Hidden Gem of Traditional FlavorsWalking into Once More Chinese Cuisine, you're immediately struck by the understated elegance of its décor - red paper lanterns casting a warm glow over dark wood furnishings and delicate brush paintings adorning the walls. This family-owned establishment has clearly prioritized substance over flash, letting their masterful cooking take center stage.## Ambiance & ServiceThe restaurant strikes a perfect balance between formal and casual dining. The space is intimate without feeling cramped, seating about 40 guests across a mix of booths and traditional round tables with lazy Susans. The staff, led by the owner's daughter Jenny, demonstrates both professionalism and genuine warmth, readily offering recommendations and explanations of unfamiliar dishes.## Culinary ExcellenceThe menu at Once More is extensive but not overwhelming, focusing on traditional dishes from various Chinese regions with particular emphasis on Sichuan and Cantonese specialties. What sets this restaurant apart is their unwavering commitment to authentic preparation methods and high-quality ingredients. The Mapo Tofu arrives bubbling hot, perfectly balanced between numbing Sichuan peppercorns and spicy broad bean paste, with silken tofu that practically melts in your mouth. Their Hong Kong-style BBQ meats are exceptional - the char siu (barbecued pork) exhibits the perfect ratio of lean to fatty meat, lacquered with a honey glaze that caramelizes beautifully without becoming cloying.A standout dish is their Whole Steamed Fish with Ginger and Scallion. The fish (usually fresh sea bass) is impeccably fresh and cooked to perfection, its flesh tender and sweet, enhanced by the aromatic sauce that pools beneath it. The XO Fried Rice demonstrates that even simple dishes receive the same attention to detail - each grain remains distinct while carrying the complex flavors of the house-made XO sauce.## Vegetarian OptionsVegetarians aren't an afterthought here. The Buddhist Delight combines an impressive array of mushrooms and vegetables in a light but flavorful sauce, while the Dry-Fried Green Beans retain their crispness while picking up wonderful wok hei (breath of the wok).## Value & PortionsPrices are moderate to slightly high for Chinese cuisine, with most main dishes ranging from $16-28, but the portion sizes are generous and the quality justifies the cost. The lunch specials, available Tuesday through Friday, offer particularly good value at $12-15 including soup and rice.## Notable Details- Reservations recommended for weekend dinner service- Free parking available in adjacent lot- BYOB with no corkage fee- Private room available for parties of 10-15- Kitchen closes 30 minutes before restaurant closing time## Room for ImprovementWhile the food is consistently excellent, wait times during peak hours can stretch to 45 minutes or more. The dessert menu is limited, though the mango pudding and egg tarts are both excellent when available.## Final Verdict**Rating: 4.5/5**Once More Chinese Cuisine stands out in a crowded field by delivering authentic, high-quality Chinese dishes with careful attention to detail and exceptional service. While not the cheapest option in town, it offers genuine value through its superior ingredients and preparation. This is the rare restaurant that manages to satisfy both those seeking authentic Chinese flavors and diners new to the cuisine. It's clear why regulars keep coming back "once more."
