Always the best. Come here for the most delicious cuts of wagyu you can cook up at home and enjoy with a nice glass of wine. The only place we go to buy steaks! Lots of unique cuts and cool things going on all the time. On top of that the owners and amazing, friendly, full of advice on how to make your tasty cut of steak even more tastier. I was in Seattle for a few days and looked for locally raised wagyu and found LJ Meats on Yelp. I called them up and was able to reserve a full blooded US raised Wagyu tri-tip. I went there to pick it up and ended up with a 5.5lb flat iron roast also. It's a pain to trim down the flat iron, but so worth it. As much as I love Japanese beef, I find A5 to be overwhelming. I prefer crossbred wagyu because the marbling is there, but not as excessive as eating a stick of butter. This full blooded US raised wagyu is definitely "eatable". I'd say the grade of what I got was--definitely more than A2, probably A3 or more. Definitely enjoyable as a whole steak. I definitely will come back to this butcher shop when the next time I'm in town.
