If you've been to a Station casino (ex: Palace Station, Durango, Santa Fe) you know each one has an Oyster Bar that's usually quite crowded with a wait. We stopped by on a Monday after 7pm and this Oyster Bar in Santa Fe was fairly empty. There was a sign to seat ourselves so we sat at the bar with a view of the open kitchen. A server came to take our order. For a quick starter we ordered the warm sourdough bread basket and butter. We also got a cioppino ($30) and bouillabaisse ($35), both spice level 5 out of 10. I would probably get a 6 or 7 next time since a 5 was still on the milder side. I preferred the cioppino since it was a creamier, chunkier consistency whereas the bouillabaisse is a soup. Both had plenty of seafood - giant scallops and shrimp, plus crab legs, clams, mussels, fish. Both came with a bowl of steamed white rice. While dining at the bar we also saw some oysters being shucked and I was pretty impressed by how fresh and big the oysters looked, comparable to the ones I've seen in New Orleans. For context it was mid February during our visit. We probably had a more atypical dining experience as it was so slow, but nonetheless was very happy to not have to wait, and we enjoyed the seafood on our casual, splurge date night.

Came here with three people on a Monday evening and really enjoyed the dish. This Oyster Bar is the same chain as the main one that people seem to know about and line up for hours for. It's a drive away from the strip, so there isn't a huge wait. I really liked the crab dish I got. It was flavorful, it was filling, and it carried a little heat. You can choose your spice level, so I chose a 4 out of 10 (there is a high-level description on the menu of the spice levels). Because this was the location not on the strip, it was somewhat loud, but not crazy. It's located in a hotel, so the casino sounds were heard from outside. It was cool to be able to see the chefs making the dishes. Parking is available via a parking lot outside of the hotel.

Tried it again different location. These places are always packed and really wanted to like the food more then I did. Just okay. Not sure about the hype. I had the pan roast. Salad was huge and good. Service was okay. The seafood was tiny pieces in the pan roast. A little bit too salty for me as well.

Had a pretty decent comp today, decided that some bivalves were in order. Went between lunch and dinner so there was plenty of seating. We chose the bar rather a table. Ana was the server, professional and prompt. Started off with a dozen komamoto's , the other premium oyster were the bluepoints. I would normally choose the blue points if I was on the east coast as they are a NY oyster, hence farther away from Vegas and the "kumo's" in theory would be fresher since they are a west coast oyster. Some day I'm going to ask to see the shellfish tag of record and see the harvest dates etc. (I wonder if they'd show me the tag?) The oysters were fairly uniform in size, but there were a few small ones. A couple negatives....we ordered a dozen, but the shucker only shucked 11, that was rectified after pointing it out to the server. . And then I saw something I've never seen at an oyster bar.... The shucker opened the oyster, then held it under running water for a second.. thereby rinsing off the liquor that goes with the raw oyster taste.... Kind of weird. I've seen shuckers rinse off or brush off a closed oyster, but never an open one. Now as for technique... Pretty common practice to place the oyster on a towel to stabilize it and make it easy to shuck, but in my mind, and thinking about general sanitation, the towel should be changed out fairly frequently. The towel that was used was pretty nasty and gray. So since some folks slurp the oyster in the shell rather than using a oyster fork, I wonder if that's a good practice.On to the rest of the meal....We got the $1.99 bread basket, a three quarter baguette with butter.We also ordered a bowl of NE clam chowder. Not bad, lots of clams, but a pretty thick soup base, I'd prefer a thinner base, but it was ok. We also also ordered a plate of linguine and clams... (White sauce), a pretty decent portion of Al dente pasta with a generous serving of chopped clams. The broth was just ok, prefer a bit more garlic, but it was ok. All in all, not bad pretty consistent with other meals I've had there. I know I'm spoiled from many years of Italian food on the east coast, but this was OK, quick, convenient and always worth a trip.A couple of pictures, but didn't take picture of the clam chowder or bread.

Shhh! Don't tell anyone about this place. Keep this place a secret. Please keep going to Palace station and wait the three hours. This place pan roast is exactly the same but it's not gonna be as good if you didn't make an adventure of waiting three hours. There's absolutely no wait here. And please keep eating the bread rolls at Palace Stations. Do not order two orders of their warm, stretchy sourdough bread. Don't come please. Don't enjoy their perfect New England clam chowder even tho it tastes better than other clam chowders. Don't come. Do not come and make me wait. Go elsewhere.

Really enjoyed the Santa Fe pan roast. Easy to get into seating for mid week dining. Good service. They understood when we asked to share the roast. Loved the rich creamy seafood boil. For my wife she really enjoyed it. For me, with my stomach issues it was a bit rich. But I still enjoyed it very much.

Came here on a Monday night. There is bar and table seating and at that time we were able to seat ourselves. Our drink and food orders were promptly taken. We had the house etouffee and the Alaskan chowder. The chowder was nice and creamy with lots of seafood. Good flavor and not too salty. The etouffee we ordered was a spice level 2 which is just enough to really taste the flavor and enjoy a little bit of spice. There were good chunks of shrimp in it and it had some rice on it. It also had a creamy texture and the flavor was really good. It wasn't salty but it was also sweet at the same time. It has a nice smell of seafood and vegetables. Finally we ordered the monkey bread pudding. This was a nice sweet treat to end the night. Definitely recommend sharing this one as we thought the sweetness was too rich for one person (unless you really have a sweet tooth). It is served warm with whipped cream and condensed (?) milk. There were soft parts and some crispy parts.

They make my favorite pan roasts! Always consistently so good! I have been eating here on most special occasions. They also added a spicy sandwich which was perfect because not everyone I bring like seafood. The chicken sandwich was huge and looked so good. It was confirmed they would come back again to have this dish. Came with seasoned looking fries. This person is particular what they eat so I'm sure it was as good as it looked.
