Was this an experience YES! Worth every penny YES! Would I come back again YES!Ok so let me be clear... I've had many omakases throughout my life but this is more for true nigiri lovers who want to eat a decadent, mouth watering, fresh flown from Japan, extradinary piece of fish like you have never had in your life. Other places offer intricate bento boxes and hot plates but not here; they primarily focus on the fish itself. 19 courses total which includes 2 desserts. I opted out of rice and I only made it to 16. I was beyond stuffed.Let me talk about the OUTSTANDING service. They literally have a few servers behind you at all time to ensure that you are being taken care of and they didn't miss a beat!Our bill including drinks was probably $550 pp but who cares- you'd probably lose it at the tables anyway lol. But we did also tip our sushi chef separately as courtesy. Lastly, loved the old school hip hop jam to set the mood- every last detail was truly perfection, even the bathroom lol. An absolute must do.Whatever I write won't do it justice.The food, the prep, the way service/servers are choreographed, the attention to detail, the staff/mgt's personality, the venue itself, make this particular Omakase 2nd to none and a must do.Simply wonderful.It also gives you access to the hotel's private lounge (Poodle Room is the name I think), which is a very nice bonus after enjoying the Ito experience. (Edit, this lounge is on the top floor, members only, large, well appointed oval type full service bar. Taller chairs surround the bar, while there are plush couches and chairs along the wall of windows...all in an oval shape....it's a great spot. No pics allowed which is why you don't find pics of it online. No pics is nice...keeps that crowd and behavior elsewhere).I took many photos in Ito but am not posting them because a photo doesn't capture or convey how great the experience really is.Thank you to the restaurant and its employees for providing us this great experience.

An amazing experience at a top notch Omakase.The view from the top floor of the Fontainebleau was incredible. Service and staff were very attentive and polite. They accommodated my non-alcohol drink preferences (drinks are amazing btw).Sushi chef himself was personable and easy to chat with. Made the dinner a fun experience. All cuts of fish was fresh and prepared well. Enjoyed the dessert a lot as well.

I was so excited to try this place. Paying $400 per person you are expecting something perfect meal. ITO is located at top of the Fontainbleau through secret door in Poodle room. It is very exclusive and everyone were very nice and welcoming.We had 6pm reservation and arrived at 5:30 to drink at the bar. We entered sushi bar and the window view was fascinating as it is highest floor in Vegas hotel. Chef were very friendly and nice. But the reason why I gave 3 stars is that my spouse spit fish bone 2 times in nigiri. I mean.. with omakase experience, you should not have fish bone twice especially for high end omakase. Overall, courses were ok, but the fact that we had fish bones two times and thinking $400 per person is not something we expected. The chef covered us provided another 2 pieces of nigiri, but we left there with dissappointment.

I thought the food was perfection. The service was impeccable! Our view from the restaurant that seated 10 (I believe we had a party of 7) was truly sweetness. You get to city the bright lights of Vegas. It was it pricy as everyone has mentioned but, you only live once. Make some memories with those you love and treat yourself.

The first Omakase spot on the Strip. It's at the top floor of Fontainbleau with spectacular view. Luckily got to dine here when during my trip, they just opened (Feb 2024)It's a speakeasy that we were led to a hidden entry, and through their whiskey lounge, and then finally arrived at the restaurant. We ordered the Matcha and Miyazaki cocktail at the whiskey lounge and enjoyed the drinks there before being led to our seat.The meal is similar menu with their original location in New York, fish were fresh and sushi was just delicious. Truly enjoy every bite there! Chefs and servers were also very friendly and chatty, the night becomes everyone dining there were sort of hanging out as a group, with a beautiful rooftop view. It was truly an experience!

We went here last night for such an incredible Father's Day treat. The view is ridiculous! The chefs were awesome and interactive and we loved the music 90s hip hop and R&b vibe.Best bite was the seared A5 topped with a mountain of shaved truffle Definitely pricey though. Over 1k easily for 2 people, but worth it for special occasions.We'll be back!

Best sushi I have ever had. I don't have the most experience with authentic sushi, which made me slightly nervous, but I loved every moment of this. They checked several times for allergies or preferences. They asked me twice if I'm sure I want uni... hell yeah, I do. Servers/somms were attentive and friendly. Watching the executive chef set up the first few courses was very cool. The sushi chef on my side of the table was a very cool guy with a lot of experience and super knowledgeable! He explained the taste of each bite and its seasonality. I liked some bites better than others, but each one was delicious. Uni, caviar, needlefish, scallop, shrimp, wagyu. Some chilled, some torched. There was a chef assigned to rice who brought out fresh rice every 3 bites. Egg custard (tamago?) and a fruity dessert rounded out the meal and I left very happy! I tried to pace myself, but could barely finish my meal and wasn't hungry until the next afternoonFor my pre-dinner drink, I had the Wasabi, which I highly recommend. I did the standard sake pairing with my meal. I also don't have much experience with sake, but each one was amazing and paired well with the dishes. The view was for sure amazing, but my eyes were mostly on the chefs making my meal and my dinner companions. It made for a beautiful backdrop to the cozy inside. I thoroughly enjoyed my meal at Ito!
